Ingredients
  • 2 cups trail mix
  • ⅓ cup milk chocolate chips
  • 3 ripe bananas
  • 1 egg
  • 2 tbsp. honey
Instructions
  1. In a Large bowl combine all o the dry ingredients.
  2. In a separate bowl mash the bananas and add the egg and honey.
  3. Combine both mixtures together and mix until everything is evenly coated.
  4. Press into a greased 12 X 9-inch cake pan.
  5. Bake for 15-20 minutes or until it begins to brown.
  6. Cool completely before cutting into bars.

Egg Salad Sandwich

Ingredients
  • 5 boiled eggs
  • 1 tbsp. mustard
  • 1 tsp. mayonnaise
  • 4 dill pickles
  • salt & pepper to taste
Instructions
  1. Finley dice the pickles and eggs.
  2. Combine all ingredients in a bowl.
  3. Serve between two pieces of bread.

Ingredients
  • 2 cubes butter
  • 2 C. mini marshmallows
  • ½ C. sugar
  • ¼ C. brown sugar
  • 1 tsp. vanilla
  • ½ C. nuts
  • 1½ C. coconut flakes
  • 3½ C. Special K cereal
Instructions
  1. In a large pot, combine the butter, marshmallows, sugar and brown sugar.
  2. Heat to a boil while stirring constantly.
  3. Allow to boil for three minutes and remove from heat.
  4. Mix in remaining ingredients.
  5. Pour into a buttered casserole dish.

 

Deviled Eggs

Ingredients
  • 12 large eggs
  • 2 tbsp. apple cider vinegar
  • ¼ C. mayonnaise
  • ¼ C. sour cream
  • 2 tsp. Dijon mustard
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 3 tbsp. parsley, chopped fine
Instructions
  1. In a large bowl or Dutch oven, bring the eggs, 1 tbsp. vinegar and enough cold water to cover the eggs to a boil.
  2. Allow the eggs to boil for 10 minutes and remove from the heat.
  3. Run cold water over the eggs until they have cooled.
  4. Peel each of the eggs and slice in half lengthwise.
  5. Carefully transfer the yolk from each egg half into a bowl or food processor.
  6. Add the remaining ingredients to the egg yolks and mix well.
  7. Fill each egg half with a heaping teaspoon of the filling.
  8. Chill the deviled eggs before serving.
  9. Garnish with parsley sprigs if desired.

 

Tuna Melt Sandwich

Ingredients
  • 2 cans tuna fish, drained
  • ⅓ C. celery, chopped
  • 1 egg, hard boiled and chopped
  • 2 tbsp. mayonnaise
  • ½ tsp. mustard
  • ⅛ tsp. oregano flakes
  • 1 C. cheddar cheese, shredded
  • 1 can biscuits
Instructions
  1. Preheat the oven to 400 degrees
  2. In a bowl, combine the tuna, celery, egg, mayonnaise and mustard.
  3. Roll out each of the biscuits to a 4 inch diameter and place on a greased cookie sheet.
  4. Top each biscuit with the tuna mixture.
  5. Top off each biscuit with cheese.
  6. Bake for 10-13 minutes.
  7. Can also add chopped dill pickles if desired.

Ingredients
  • 2 c. all purpose flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. cinnamon
  • 1.2 tsp. ginger
  • ⅓ c. butter
  • 1 c. sugar
  • 1 egg
  • ⅓ c. orange juice
  • ¾ c. raisins
  • 1 c. minced apples
  • 1 tbsp. grated orange rind
Instructions
  1. Preheat oven to 350°F.
  2. Whisk together flour, baking powder, baking soda and salt.
  3. In a mixing bowl, mix together shortening, sugar and egg and beat thoroughly.
  4. Mix together all of the dry ingredients, orange juice and remaining ingredients mixing thoroughly.
  5. Grease two loaf pans and fill both about ¾ full with batter.
  6. Bake at 350°F for about 45 minutes or until done.

Ingredients
  • 12 eggs
  • 4 tbsp. Mayonnaise
  • 2 tsp. mustard
  • ½ tsp. season all
  • 2 tbs. parsley
  • 1½ tsp. sugar
  • ½ tsp. paprika
Instructions
  1. Boil eggs on high simmer for 10 minutes. Allow to cool in cold water. Slice eggs in half and place boiled yolk into a bowl.
  2. Mash yolks very finely using a fork. Add all ingredients and fill hollow eggs with mixture. Sprinkle with parsley and paprika for decoration.

Ingredients
  • 3 eggs
  • 1 cup water
  • 1 cup flour
  • pinch salt
  • olive oil
Instructions
  1. In a blender add eggs, water, flour, and salt and process until smooth.
  2. Lightly oil a skillet using a paper towel. Pour ¼ cup of the batter into the pan and quickly swirl the pan around, coating the bottom with the batter.
  3. Do not turn crepe over until it is dry on the top, about one minute. Flip crepe over briefly and cook 20-30 seconds longer.
  4. Lightly oil pan before cooking each crepe.

Ingredients
  • 2 c. butter, softened
  • 1 c. sugar
  • 5 c. unsifted all-purpose flour
Instructions
  1. Preheat oven to 275 degrees.
  2. Grease four 8-inch round cake pans or 1 large pizza pan.
  3. Mix all three ingredients in a large mixing bowl with electric mixer. Divide dough into 4 equal pieces. Pat evenly into bottom of pans.
  4. Bake for 1 hour or until golden but not brown.

Ingredients
  • 1 lb. mushrooms any style you like
  • ¾ c. flour
  • ¾ c. club soda
  • ½ tsp. garlic salt
  • Vegetable oil for deep frying
Instructions
  1. Wash mushrooms and dry thoroughly on towel. Stir flour, club soda and garlic salt together until smooth and lump free.
  2. Dip mushrooms in batter and fry in 400 degree oil for about 5 minutes or until golden brown. Oil should be deep enough for mushrooms to float freely.

 

Popcorn Chicken

Ingredients
  • 1 egg
  • 1 c. white flour
  • 1 tsp. Cajun seasoning
  • 2 sm. boneless chicken breasts cut in 1-1 ½ inch pieces
  • ¾ c. vegetable oil
Instructions
  1. Mix flour and Cajun seasoning in small mixing bowl.
  2. In separate bowl, beat egg.
  3. Pour oil into a small skillet and place on a medium heat.
  4. Dip pieces of chicken into egg, being sure they are fully covered.
  5. Drop the chicken, piece by piece into the flour mixture, fully coating the chicken.
  6. Carefully place battered chicken in the oil and fry for about 3-4 minutes, flip the pieces over until pieces are colored a light golden brown.

 

Bruschetta

Ingredients
  • 1 tbsp. salt
  • 1 tbsp. pepper
  • 1 tbsp. sugar
  • 2 tbsp. basil
  • ⅛ tbsp. minced garlic
  • 2 large chopped tomatoes
  • ½ c. extra virgin olive oil
Instructions
  1. Remove the juice and seeds from the tomatoes.
  2. Chop the tomatoes, set aside.
  3. Mix salt, pepper, sugar, basil, garlic, and extra virgin olive oil.
  4. Pour the mixture over the tomatoes.
  5. Toss tomatoes to make sure they are all coated, and let stand in the refrigerator for at least 1 hour before eating.

Ingredients
  • 3 c. self-rising flour, sifted
  • ½ c. butter, melted
  • ⅓ c. sugar
  • milk
  • 2 eggs
  • 1 tsp. baking powder
Instructions
  1. Preheat oven to 400°F degrees.
  2. Cut butter into the flour using your fingers until mixture resembles coarse crumbs. Stir in sugar, baking powder, and beaten eggs
  3. Add enough milk to form a sticky dough, turn out onto a lightly floured board and knead approximately 10 turns. Do not over-knead, as this will make the scones tough.
  4. Flatten to a circular shape, about 1½" in thickness and cut wedge shaped pieces. Arrange pieces 1 inch apart in a circle on a lightly greased pan. Brush tops with cream or beaten egg white and bake about 15 minutes or until golden.

 

Beer Batter Onion Rings

Ingredients
  • 2 Large onions
  • ½ c. dark beer
  • ½ c. club soda
  • 1 tbsp. vegetable oil
  • 1 egg white
  • ½ tsp. cayenne pepper
  • 1 tsp. kosher or sea salt
  • 1 c. flour
  • ¼ tsp. mustard powder
  • ½ tsp. onion powder
Instructions
  1. Pour beer and soda into food processor. Sprinkle in pepper, mustard, salt and onion powder and oil. Pulse until combined. Add flour last.
  2. Whisk egg white until frothy in a shallow bowl. Gently stir in contents of food processor, mixing until combined.
  3. Slice large onions into rings. Separate rings. Soak in a small amount of milk for 10 minutes. Drain and dip in batter.
  4. Fry small batches in hot oil (365F), turning once, gently to brown evenly. Remove using a slotted spoon. Season with salt and pepper while still hot from fryer.
