Ingredients
  • 2 C. sugar
  • ½ C. milk
  • 1 tsp. vanilla
  • ¾ C. peanut butter
Instructions
  1. Bring sugar and milk to a boil. Stir constantly to prevent burning the milk.
  2. Boil for 3 minutes.
  3. Remove from heat and stir in remaining ingredients.
  4. Pour into a 9X9 pan.
  5. Cool completely before cutting.

  • 2 tsp. baking powder
  • 2 tsp. salt

  1. Preheat the oven to 350 degrees.
  2. Combine all ingredients.
  3. Spoon into a greased muffin pan.
  4. Bake for 15 minutes or until golden brown.
  5. Makes 10-12 rolls.

Ingredients
  • 2 eggs, beaten
  • 3 C. potatoes, grated
  • 4 Tbsp. onion, grated
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 2 tbsp. cracker crumbs or matzo meal
  • ½ c. oil
Instructions
  1. Saute onion with about 2 tsp. oil until browned.
  2. Add potatoes, onion, salt, pepper, and meal or cracker crumbs.
  3. Heat the oil in frying pan and drop potato mixture by the tablespoon.
  4. Flatten with a spoon.
  5. Fry until browned on both sides.
  6. Serve with applesauce or sour cream.

 

Roasted Leg of Lamb

Ingredients
  • 1 leg of lamb (2 lb.)
  • 2 cloves garlic
  • 1 tbsp. butter
  • 3 stems fresh rosemary
  • Salt & pepper to taste
  • pearl onions
Instructions
  1. Take the lamb out of the refrigerator an hour before preparing to get to room temperature.
  2. Put the lamb in a roasting pan.
  3. Broil for 5 minutes or until the meat looks seared and brown.
  4. Flip the meat over and broil on the other side for an additional 5 minutes.
  5. Rub the leg of lamb with the finely chopped garlic.
  6. Spread on the butter, salt and pepper.
  7. Add a few small onions and rosemary stems into the roasting pan.
  8. Lower the rack in the oven and set the oven temperature to 325.
  9. Loosely cover the lamb with aluminum foil.
  10. Bake for one hour or until internal temperature reaches 135 degrees (Rare). Lamb will continue to cook after you remove it from the oven.
  11. Remove from oven and allow to rest for approximately 15-20 minutes before carving.

  • 14 oz. sweetened condensed milk
  • fresh lemon juice

  • 1 premade graham cracker pie crust.

  2. Mix until fully mixed and smooth.
  3. Spoon mixture into prepared pie crust.
  4. Chill for at least 2 hours to allow cheesecake to set.

Ingredients
  • ¼ C. boiling water
  • 1 tsp. instant coffee powder
  • 1⅓ C. packed brown sugar
  • 1 C. butter, softened
  • 1 egg
  • 1½ tsp. vanilla
  • 3 C. old fashioned oats
  • 1¼ C. all purpose flour
  • ¾ tsp. salt
  • ½ tsp. baking soda
  • 8 oz. pkg. milk chocolate toffee bits
  • 1½ C. semisweet chocolate chips
  • 5 coarsely crumbled sugar cones
Instructions
  1. Preheat oven to 350 degrees
  2. Dissolve coffee in boiling water, cool to room temperature.
  3. In a large bowl, beat sugar and butter until creamy with an electric mixer.
  4. Add egg and beat well.
  5. Beat in coffee and vanilla.
  6. Combine oats, flour, salt and baking soda and mix well.
  7. Gradually add oat mixture to the creamed mixture.
  8. Beat well after each addition.
  9. Stir in toffee bits, chocolate chips and sugar cones.
  10. Drop dough by heaping measuring Tablespoons 2 inches apart onto cookie sheets.
  11. Bake 12-14 minutes, just until golden brown.
  12. Cool for 1 minute on the cookie sheet and transfer to wire racks.
  13. Cool completely, Store loosely covered.

 

Lemon Meringue Pie

Ingredients
  • 9 inch baked pie crust
  • 1½ C. sugar
  • ½ C. plus 1 tbsp. cornstarch
  • 1½ C. water
  • 3 egg yolks slightly beaten
  • 3 Tbsp. butter
  • 2 tsp. grated lemon peel
  • ½ C. lemon juice
Instructions
  1. Preheat oven to 400 degrees.
  2. Mix sugar and cornstarch in medium saucepan.
  3. Gradually stir in water.
  4. Cook over medium heat, stirring constantly until mixture thickens and boils.
  5. Boil and stir for 1 minute.
  6. Remove from heat.
  7. Stir in butter, lemon peel and lemon juice.
  8. Temper in the egg yolks slowly.
  9. Pour into baked pie shell.
  10. Heap meringue onto hot pie filling.
  11. Spread over filing and seal meringue to edge of pie crust to prevent shrinking or weeping.
  12. Put peaks in the meringue using back of a spoon and lifting upwards.
  13. Bake for about 10 minutes or until a delicate brown.
  14. Cool away from drafts.

  1. Beat egg whites and cream of tartar until foamy.

  3. Continue beating until stiff and glossy.

Ingredients
  • ⅓ C. plus 1 Tbsp. shortening
  • 1 C. all purpose flour.
  • ½ tsp. salt
  • 2-3 Tbsp. cold water
Instructions
  1. Preheat the oven to 475
  2. Mix shortening into flour and salt until particles are about the same size as small peas.
  3. Sprinkle in water, 1 Tbsp. at a time, tossing with a fork until all flour is moistened and pastry almost cleans the side of the bowl.
  4. Gather pastry into a ball.
  5. Flatten and shape into round on a lightly floured board.
  6. Trim overhang edge of pastry 1 inch from rim of plate, fold over even with plate and flute.
  7. Prick the bottom and side with a fork.
  8. Bake for 8-10 minutes or until light brown.
  9. Cool.

  • 2½ C. flour
  • 1½ tsp. baking powder

  1. Preheat oven to 400.
  2. Sift dry ingredients together in a large bowl.
  3. Whisk eggs, buttermilk and better that has been melted and browned slightly.
  4. Make a well in the dry ingredients and pour in liquid ingredients.
  5. Mix quickly.
  6. Fold in blueberries.
  7. Spoon mixture into greased muffin cups and bake until golden brown - about 20-30 minutes.

  2. Mix all ingredients together.
  3. Knead dough for 3-4 minutes.
  4. Roll out to ½ inch thick
  5. Cut into desired shapes. You can use a cookie cutter.

  • 1⅓ C. flour
  • ½ C. butter, softened
  • ½ C. sugar
  • ¼ C. brown sugar
  • 1 tsp. vanilla

Instructions
  1. Preheat the oven to 325
  2. Cream together the butter and sugars until light and fluffy.
  3. Slowly mix in the remaining ingredients and beat until completely mixed.
  4. Scrape mixture into a piping bag.
  5. Pipe the mixture onto a wax paper covered cookie sheet. Each cookie should be about the size of a quarter with a little space between each cookie.
  6. Bake 10-15 minutes or until cookies are golden brown.
