Ingredients
  • 1 C. white sugar
  • ¼ C. water
  • 12 oz. can evaporated milk
  • 5 ounce can sweetened condensed milk
  • 6 egg yolks
  • 1 tbsp vanilla extract
Instructions
  1. Preheat oven to 350
  2. In a heavy saucepan over medium heat, cook sugar and water, stirring constantly until the sugar melts and turns a light brown.
  3. Pour sugar into a flan pan or cake mold and tilting the pan to coat the bottom.
  4. Set to the side while you prepare the flan.
  5. In a large bowl or blender, whisk together the remaining ingredients.
  6. Tap the mixture on the counter top to remove any bubbles and pour over the sugar mixture.
  7. Place a towel in the bottom of a roasting pan.
  8. Place baking dish on towel, inside roasting pan, and place roasting pan on oven rack.
  9. Fill roasting pan with water to reach halfway up the sides of the baking dish.
  10. Bake for 45 to 50 minutes or until a sharp knife comes out clean
  11. Run a knife around the edges of the pan and invert the flan onto a serving platter or large plate.
  12. Refrigerate overnight before serving.

Ingredients
  • 3-4 Chicken Breasts, cooked and shredded
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 C. sour cream
  • 1 C. salsa
  • 1 C. Monterrey Jack cheese, shredded
  • 1 C. cheddar cheese, shredded
  • 1 bag white tortilla corn chips, crushed
Instructions
  1. In a large bowl, mix together soups, sour cream and salsa.
  2. In the bottom of a dutch oven, layer tortilla chips, chicken, soup mix and cheeses until all have been used.
  3. Bake in a traditional oven at 350 for one hour OR place in an open fire pit with 17 coals on top and 8 coals on bottom.

  • 1 can refried beans
  • 1 small can green chilies
  • 1 small can chopped olives
  • 1 small can green chili salsa
  • 1 lb. hamburger
  • 1 onion, diced
  • Longhorn cheese
  • Doritos
Instructions
  1. Put ½ of the onion in the beans and the other half in the meat.
  2. Brown and drain the meat and ad the chilies.
  3. Cook the beans and onion with the salsa.
  4. Layer beans and meat on bottom of a casserole dish, add chips, cheese and repeat.

Ingredients
  • ⅓ C. flour
  • 1 tsp. salt
  • ½ tsp. pepper
  • 2 lbs pork, cubed
  • ¼ C. vegetable oil
  • 6 cans chopped green chilies
  • ½ C. salsa
  • 12 flour tortillas
  • Cheddar cheese, shredded
Instructions
  1. In a large bag, combine the flour, salt and pepper.
  2. Add the cubed pork and shake the bag to coat all of the pieces.
  3. In a large skillet, cook all of the pork in oil until no longer pink.
  4. Add the chilies and salsa to the skillet and bring to a boil.
  5. Reduce heat and allow to simmer for 30 minutes or until meat is tender.
  6. Spoon meat and chilies mixture onto tortillas and top with cheese.
  7. Roll up tortillas and serve.

Ingredients
  • 2 cans red kidney beans
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 lb. ground hamburger
  • 2 C. tomatoes
  • 8 oz. tomato sauce
  • 5 tbsp. chili powder
  • 1½ tsp. salt
  • 1 bay leaf
  • Dash paprika
  • Dash cayenne pepper
Instructions
  1. Brown the onion, meat and green pepper.
  2. Add remaining ingredients.
  3. Cover and simmer for 1½ hour. Add water if needed.

Ingredients
  • 2 lrg. chicken breasts - boned
  • 1 C. onion, minced
  • 1 clove garlic
  • 2 tbsp. margarine
  • 16 oz. can tomatoes
  • 8 oz. can tomato sauce
  • 2½ C. cheese
  • 4 oz. can chopped green chilies
  • 1 tsp. sugar
  • 1 tsp. cumin
  • ½ tsp. salt
  • 1.2 tsp. oregano
  • 6 flour tortillas
  • ¾ C. sour cream
Instructions
  1. Cut chicken into strips and sprinkle with salt. Set aside.
  2. In a pan, cook onion and garlic in butter.
  3. In a blender, combine tomatoes, tomato sauce, chilies and spices.
  4. Mix the sauce with the onions and garlic and simmer for 20 minutes.
  5. Dip each tortilla into the sauce to soften.
  6. Fill tortillas with chicken and cheese.
  7. Roll up tortillas and place the seam side down in a greased 9x12 dish.
  8. Blend sour cream with remaining sauce.
  9. Pour sauce over tortillas and top with remaining cheese.
  10. Cover and bake at 350 for 40 minutes.

  • 1 lb. hamburger
  • 2 cans enchilada sauce
  • 1 small can chopped olives
  • 1 small onion, minced
  • 2 C. tomatoes
Instructions
  1. Brown meat and onion in the frying pan and add remaining ingredients.
  2. Put in crock pot and simmer on low all day.
  3. Using a corn tortilla, fill with meat mixture and roll up.
  4. Top with remaining sauce and cheddar cheese.
  5. Bake until the cheese melts.

  • 1 tbsp. chili powder
  • 2 tsp. onion powder
  • 1 tsp. ground cumin
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1 tsp. powdered oregano
  • 1 tsp. sugar
  • ½ tsp. salt
Instructions
  1. Mix all ingredients together in a small bowl.
  2. Makes 3 tablespoons of seasoning mix, which is equal in strength to a ¼ ounce package of commercial seasoning mix.

Ingredients
  • 3⅓ c. flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1½ tbsp. sugar
  • ¼ c. butter
  • 2 eggs
  • ½ c. milk
  • Salad oil for deep frying
Instructions
  1. Sift flour, with salt, baking powder, and sugar into a bowl. Add butter and rub into flour with your fingertips until mixture is like coarse meal. Beat eggs lightly with milk, then pour into flour mixture and stir until dough forms a solid mass. Turn dough out onto board, and knead lightly for 2 minutes or until smooth. Cut dough into balls the size of marbles and let stand 15 minutes.
  2. Roll each ball on a lightly floured board into a very thin pancake 4 inches in diameter. Cut a hole in center with a thimble. After rolling out the circles of dough, place them in a single layer on waxed paper until ready to cook.
  3. Fry in hot deep fat (375 degrees) until puffed and golden brown, about 30 seconds on each side.
  4. Mix 1 cup granulated sugar and 1 teaspoon cinnamon in a bowl. As bunuelos are still warm, shake in sugar mixture.

Ingredients
  • 2 c. flour
  • 3 tsp. baking powder
  • ½ tsp. salt
  • 1 tbsp. shortening
  • Oil for deep frying
Instructions
  1. Sift dry ingredients together in bowl.
  2. Cut in shortening until crumbly. Add ½ cup warm water gradually, stirring with fork.
  3. Dough will be crumbly.
  4. Turn onto lightly floured surface.
  5. Knead until smooth.
  6. Divide in half. Let stand for 10 minutes.
  7. Cut into 3" squares.
  8. Fry, several at a time, in deep fat at 400 degrees for 30 seconds on each side.

  • 2 C. Flour
  • 2 eggs, slightly beaten
  • 2 C. sugar
  • 2 tsp. baking soda
  • 1 C. chopped nuts
  • 1 - 20 oz. can crushed pineapple
Instructions
  1. Mix all ingredients together and bake in a 9x13 pan at 350 for 35 minutes.
  2. Top with: 1 stick margarine melted and then cooled 8 oz. cream cheese and 1½ C. powdered sugar.

Ingredients
  • 1 lb. pork-cubed
  • 5 tomatillos
  • 3 chilies serranos
  • 1 med white onion
  • 4 cloves of garlic
Instructions
  1. Cook the pork and brown it. Drain fat if you prefer.
  2. Meanwhile, wrap the green tomatoes, chiles and garlic in tin foil and place them in a pot.
  3. Cover and heat on medium high until the tomatoes are soft. Stir occasionally to heat evenly.
  4. Once veggies are soft, blend (in food processor) with the onion and cilantro.
  5. Pour the sauce over the meat and simmer for about 10 to 15 minutes on medium low.

Ingredients
  • 1 lb. minced beef, low fat
  • 1 fresh chili
  • 1 medium onion
  • 1 clove garlic
  • 1 dash Tabasco sauce
  • ½ c. tomato sauce
  • 1 sm. can chopped tomatoes
  • 1 can kidney beans
Instructions
  1. Cook meat and onions with a splash of oil in large pan with tomato sauce, garlic, chili and Tabasco. Add more of the latter if you want more zing.
  2. When meat is browned and onions cooked through, add the last ingredients and simmer for 10-20 minutes.

  • ¼ small onion, finely diced
  • ¼ small green pepper, finely diced
  • 1 sm. jar chopped pimentos
  • 5 cloves garlic, pressed
  • 1 (2 lb.) pkg. Velveeta cheese, cubed
  • 1 can tomatoes with jalapeno peppers
  • Crisco
Instructions
  1. Saute onion and green pepper in Crisco.
  2. Add pimentos, garlic and tomatoes and jalapeno peppers.
  3. Add cheese and simmer on low heat until cheese is melted.

Ingredients
  • 6 chicken breasts, cooked, cut into 1" pieces
  • 1 onion
  • 2 tbsp. butter
  • 2 16 oz. cans Old El Paso Enchilada sauce
  • 1 4 oz. can tomato sauce
  • 16 white corn tortillas
  • 2 c. cheddar cheese, combined with
  • 2 c. Monterrey Jack cheese
  • 1 chicken bouillon cube (in ¼ cup liquid)
  • 1 c. stewed tomatoes
  • 1 tsp. garlic powder
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • ½ tsp. chili powder
Instructions
  1. Slice the onion and saute in garlic and butter. Add the dissolved bouillon cube, tomatoes, Enchilada sauce, herbs and seasonings. Simmer over low heat.
  2. Fry the tortillas in 375 degree oil for a short period (about 1 minute).
  3. Remove tortillas and drain on paper towels. Dip in sauce when cooled.
  4. Fill each with chicken and cheese and roll up, placing seam side down in 9 x 13 x 2 inch pan.
  5. Pour remaining sauce on top and sprinkle with cheese.
  6. Bake at 350 degrees for 30 to 40 minutes.
