Ingredients
  • 1 lb cooked sausage
  • ½ c bread crumbs
  • ¼ c Parmesan cheese
  • ½ t chives
  • ½ t garlic salt
  • ½ c grated mozzarella cheese
  • 20 lg mushrooms washed & stems removed
Instructions
  1. Blend first 5 ingredients in a large bowl.
  2. Melt mixture in a microwave, approx 3 minutes.
  3. Stuff mushrooms & place in a 13X9 pan & top with mozzarella cheese.
  4. Cover & bake for 20 minutes @ 375.

 

Stuffed French Bread

Ingredients
  • 1 French Bread
  • 1 Ib ground beef
  • ½ c chopped onion
  • 1 c salsa
  • 1 sm can sliced olives
  • 1½ c grated cheddar cheese
  • 1 c mozzarella cheese
Instructions
  1. Fry ground beef and onion until well done.
  2. Add salsa and simmer for 5 minutes.
  3. Cut French bread lengthwise and hollow out the bottom portion of the bread all the way to the crust.
  4. Tear the bread so they our cubed.
  5. Hollow out the top portion of the loaf ½ of the way to the crust.
  6. Reserve all the broken pieces of bread in a large bowl.
  7. Take the ground beef mixture and pour over the bread cubes.
  8. Mix well.
  9. Drain the olives and add to the mixture.
  10. Take both cheeses and line the bottom of the bread with ½ of the cheese.
  11. Take the ground beef mixture and stuff the bread.
  12. Take the remaining cheese and place on the top of the bread.
  13. Place the top portion of the bread on top.
  14. Wrap the entire loaf in foil and place on a cookie sheet.
  15. Bake at 375 for 1 hour.

 

Stewed Pork Chops And Macaroni

Ingredients
  • 4 pork chops
  • ¼ c diced onion
  • ¼ c diced green pepper
  • 3 c stewed tomatoes
  • 2 c raw macaroni(elbow or your favorite)
  • oil
  • salt and pepper to taste
Instructions
  1. In a large skillet, coat the bottom of the pan with oil and brown pork chops.
  2. Add onion and green pepper and saute a couple of minutes.
  3. Then add stewed tomatoes.
  4. Bring to a boil and then add your macaroni.
  5. Cover and simmer until pasta is tender.
  6. Salt and pepper to taste.

 

Spinach Quiche

Ingredients
  • 10 oz spinach (frozen chopped, thawed)
  • 1 bunch green onions, finely chopped
  • 4 beaten eggs
  • 16 oz cottage cheese
  • 2 cups shredded cheddar cheese
  • 14 cup croutons crushed
Instructions
  1. Preheat oven to 325.
  2. Lightly grease a 9 inch pie or quiche pan.
  3. Place spinach in a small saucepan.
  4. Cook over medium heat, stirring occasionally until soft.
  5. Drain off any remaining liquid.
  6. Stir in green onions, eggs, cottage cheese and cheddar cheese. Pour mixture into prepared pan.
  7. Bake uncovered for 45 minutes.
  8. Remove from oven and sprinkle with crushed croutons.
  9. Return to oven and bake for an additional 15 minutes, until eggs are set.

Ingredients
  • 8 oz uncooked elbow macaroni
  • 1 c sharp cheddar cheese
  • 1 c jalapeno jack cheese
  • ½ c Swiss cheese
  • ¼ c Parmesan cheese
  • 2 c milk
  • ¼ c butter
  • 2½ T flour
  • ½ c bread crumbs
  • 2 T butter, cut into chunks
  • ½ t paprika
  • pesto
Instructions
  1. Preheat oven to 350.
  2. Cook macaroni according to the package directions. Drain. I
  3. n a saucepan, melt butter over medium heat.
  4. Stir in enough flour to make a roux.
  5. Add milk to roux slowly, stirring constantly.
  6. Stir in cheeses and cook over low heat until cheese is melted and the sauce is a little thick.
  7. Put macaroni in a large casserole dish and pour the sauce over macaroni, stir well.
  8. Top with breadcrumbs, chunks of butter, and paprika.
  9. Bake for 30 minutes.
  10. Serve with a couple of teaspoons of spinach pesto over each serving.

  • 3-4 cups large mushrooms
  • 1 lb sausage
  • 1 pkg cream cheese
Instructions
  1. Brown sausage.
  2. Drain meat and add cream cheese. Hollow out your mushrooms & place in a 13X9 casserole dish.
  3. Stuff mushroom with a heaping spoonful of meat and cheese mixture.
  4. Cover and bake at 350 for 45 mins.

 

Salmon Scalloped Potatoes

Ingredients
  • 1 can salmon, drained reserving liquid, and flake salmon
  • 4-6 medium potatoes, peeled
  • 1 medium onion finely chopped
  • 1 c grated cheddar cheese
  • 1 8 oz jar pasteurized cheese
  • 1 c sour cream
  • 1 t salt
  • ¼ teaspoon fresh ground black pepper
  • 2 T butter
  • ⅓ cup breadcrumbs
Instructions
  1. Preheat oven to 350.
  2. Cook potatoes in boiling water approx 15 minutes or until tender
  3. Drain water off the potatoes and cool
  4. Thinly slice potatoes and place in a bowl and add your chopped onion.
  5. In a medium size bowl, mix salmon liquid, both cheeses, sour cream, salt and pepper. This will create your sauce.
  6. Grease a shallow 2-quart casserole dish.
  7. Layer ½ the potatoes and onion mixture in the bottom of the dish.
  8. Then layer ½ of the flaked salmon over the potato mixture.
  9. Take ½ the sauce and spread over the top.
  10. Repeat the layering process finishing off all the ingredients.
  11. Final step, in a small bowl, melt butter and mix with bread crumbs.
  12. Drizzle evenly over the top.
  13. Bake uncovered at 350°F for 30 to 35 minutes, or until hot.
  14. Sprinkle with chopped parsley and serve.

 

Quick Beef Stroganoff

Ingredients
  • 1 Ib lean ground beef
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1 sm can cream of mushroom soup
  • 1 c sour cream
  • 1 sm can sliced mushrooms
  • 2 T catchup
  • 2 t Worcestershire sauce
  • 1 sm pkg egg noodles
Instructions
  1. In a medium fry pan, brown beef, onion, and garlic.
  2. When cooked, add all remaining ingredients, except noodles, simmer. In a large pot, fill with water and prepare your noodles.
  3. Serve meat mixture over noodles.

 

Polynesian Pork Chops

Ingredients
  • 4 pork chops
  • 1 T oil
  • salt and pepper to taste
  • 1 green and red pepper cut into strips
  • ¼ onion, sliced
  • 1 8 oz can pineapple chunks
  • ⅓ c Heinz 57 Sauce
  • cornstarch
Instructions
  1. In a medium size skillet, salt and pepper pork chops and brown pork chops in the oil.
  2. Add green onion and onion and saute for a few minutes.
  3. Add pineapple juice and all, and the Heinz 57 Sauce.
  4. Cover and simmer until done.
  5. Remove chops from fry pan and thicken the sauce with cornstarch/water mixture.
  6. Serve over chops and rice.

 

Poached Salmon

Ingredients
  • 4 salmon fillets
  • 1 lemon quartered
  • 1 red onion cut in 1 inch chunks
  • 2 bay leaves
  • 1 c white wine
  • 2 c water
  • fresh dill
Instructions
  1. In a fry pan or roasting pan, on the stove top, add water, wine, bay leaves, onion and lemon.
  2. Bring to a boil, reduce to low boil.
  3. Add salmon and poach 8 to 12 minutes, depending on thickness.
  4. Serve with fresh dill or dill sauce.

 

Philly Cheesesteak Cresent Rolls

Philly Cheesesteak Cresent Rolls

Ingredients
  • 2 T butter
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • ¾ lb sliced roast beef (from the deli)
  • ⅓ c beef broth
  • 8 oz cream cheese
  • 2 (8 oz) tubes refrigerated crescent rolls
  • 4 slices Swiss cheese
Instructions
  1. Preheat oven to 375-degrees.
  2. In a large skillet, saute onion and pepper in butter over medium heat until they become soft and onions become transparent.
  3. Coarsely chop roast beef and add to onion/pepper mix.
  4. Stir for about 2-3 minutes or until roast beef becomes hot. Add beef broth and cream cheese, stirring until cream cheese is melted and coats the roast beef. Remove from heat.
  5. Separate crescents dough into triangles and press flat.
  6. Slice Swiss cheese into 4 strips and lay each strip over each crescent triangle.
  7. Scoop about 2 T of roast beef mix over each triangle and roll up, pinching the sides of the crescent so cheese doesn’t ooze out.
  8. Place crescent rolls on an ungreased cookie sheet and bake at 375-degrees for 10-13 minutes or until golden brown.

 

Parmesan Chicken

Ingredients
  • ½ c butter melted
  • 2 t Dijon mustard
  • 1 t Worcestershire sauce
  • ½ t salt
  • 1 c dry bread crumbs
  • ½ c grated Parmesan cheese
  • 6 to 8 boneless skinless chicken breast halves
Instructions
  1. In a pie plate or shallow bowl, combine butter, mustard, Worcestershire sauce and salt.
  2. In a plastic bag, combine crumbs and cheese.
  3. Dip chicken in butter mixture, then shake in crumb mixture, a few pieces at a time.
  4. Place in an ungreased 9×13 baking pan.
  5. Drizzle with any remaining butter mixture.
  6. Bake at 350 for 40-45 minutes or until a meat thermometer reads 170.

 

Mexi Corn Casserole

Ingredients
  • 1 lb ground beef
  • 1 chopped onion
  • 1 can enchilada sauce
  • 1 sm can tomato sauce
  • 1 pkg frozen corn with peppers
  • 1 pkg flour or corn taco shells (12 ct)
  • 1 lb grated cheese
Instructions
  1. In a large skillet, fry hamburger and onion.
  2. Add both sauces and corn.
  3. Cook until done.
  4. Take a 13 × 9 casserole pan and line the bottom of the pan with the taco shells.
  5. Add a layer of your meat mixture and then a layer of cheese.
  6. Repeat until all ingredients are gone, ending with cheese.
  7. Bake at 350 for 30 minutes.
  8. I like to serve this with onion, jalapenos, and sour cream on top.
