Ingredients
- 8 oz uncooked elbow macaroni
- 1 c sharp cheddar cheese
- 1 c jalapeno jack cheese
- ½ c Swiss cheese
- ¼ c Parmesan cheese
- 2 c milk
- ¼ c butter
- 2½ T flour
- ½ c bread crumbs
- 2 T butter, cut into chunks
- ½ t paprika
- pesto
Instructions
- Preheat oven to 350.
- Cook macaroni according to the package directions. Drain. I
- n a saucepan, melt butter over medium heat.
- Stir in enough flour to make a roux.
- Add milk to roux slowly, stirring constantly.
- Stir in cheeses and cook over low heat until cheese is melted and the sauce is a little thick.
- Put macaroni in a large casserole dish and pour the sauce over macaroni, stir well.
- Top with breadcrumbs, chunks of butter, and paprika.
- Bake for 30 minutes.
- Serve with a couple of teaspoons of spinach pesto over each serving.
