Crab Rangoon

Ingredients
  • 1 can (6½ oz.) crab meat, drained and flaked
  • 1 pkg. (8 oz.) cream cheese, softened
  • 2 green onions, chopped
  • 1 tsp. Worcestershire sauce
  • ¼ tsp. garlic powder
  • ½ tsp. soy sauce
  • 1 pkg. won ton skins
  • Vegetable oil for deep-fat frying
Instructions
  1. In a mixing bowl, combine all ingredients except won ton skins and oil.
  2. Place 1 teaspoon filling in the center of each won ton skin.
  3. Moisten edges with water. Fold each skin in half to form a triangle; press edges to seal. Pull bottom corners of triangle down and overlap slightly.
  4. Moisten corner with water and press to seal.
  5. Heat oil to 375 degrees.
  6. Deep-fry several won tons at a time, turning once, until both sides are golden brown.

 

Hamburger Soup

Ingredients
  • 1 to 2 lb. hamburger
  • ½ tsp. salt
  • ¼ tsp. each: pepper, oregano and basil
  • 1 pkg. onion soup mix
  • 6 c. water
  • 2 beef bouillon cubes
  • 1 (8 oz.) can tomato sauce
  • ½ c. chopped celery
  • 1 c. chopped carrots
  • 1 c. cubed potatoes
Instructions
  1. Mix all ingredients except hamburger, bring to a boil and reduce heat to a simmer.
  2. Fry hamburger, drain excess grease and add to soup.

 

Baked Lasagna

Ingredients
  • 8 oz. pkg. lasagna noodles, cooked & drained
  • 1½ lbs. hamburger, browned
  • 1 (15 oz.) can tomato sauce
  • 1 lb. cottage cheese
  • 8 oz. Mozzarella cheese, grated
  • 1 jar spaghetti sauce
Instructions
  1. Place half of cooked noodles in 13" casserole dish.
  2. Put in layers, half of cottage cheese, Mozzarella and hamburger, tomato sauce and spaghetti sauce; mix.
  3. Repeat with other half.
  4. Top with Parmesan cheese.
  5. Bake at 350 degrees for 35 minutes.

Ingredients
  • 1 lb. ground turkey
  • 1 can tomatoes or tomato sauce
  • 3 c. cooked macaroni
  • 12 oz. shredded cheese
  • Salt & pepper to taste
  • 1 tbsp. chili powder
Instructions
  1. Cook macaroni according to the package directions, drain and set aside.
  2. Brown the meat and stir in the tomatoes and season to taste, stir in macaroni and simmer a few minutes, put in a 2 quart casserole dish adding about three fourths of the cheese and mix.
  3. Bake in 350 degree oven for approximately 45 minutes then take out of oven and add the last of the cheese on top and return to oven for about 5 minutes.

Ingredients
  • 1 lb. crabmeat
  • 1 egg
  • 1 c. mayonnaise
  • 2 tsp. Worcestershire
  • 6 dashes Tabasco
  • ½ tsp. salt
  • ¼ tsp. thyme
  • ½ tsp. dry mustard
  • 3 tbsp. chopped parsley
Instructions
  1. Mix all together and spread thin.
  2. Brush top with ⅓ stick of melted butter and sprinkle with paprika.
  3. Bake 375 degree oven for 20 minutes.

Ingredients
  • 1½ lb. firm scaled fish fillets
  • ¼ c. flour3 tbsp. butter
  • 3 tbsp. cooking oil
  • 1 tbsp. blackened fish seasoning
Instructions
  1. Lightly dust the fillets with flour.
  2. Heat the butter and oil in a large, heavy frying pan over medium-high heat.
  3. Add the flour-covered fillets and cook 3 minutes on one side, turn, and sprinkle seasonings evenly over the browned side.
  4. Cook another 3 minutes and turn, sprinkling this side with seasonings.
  5. Turn the heat to high and sear each side for about 2 minutes.

Ingredients
  • ½ c. salad oil
  • 1 med. garlic clove
  • 5 lbs. beef stew meat cut in 1 inch squares
  • 4 med. onions, sliced
  • 3 (6 oz.) cans tomato paste
  • 2½ c. water
  • 1 tbsp. paprika
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 bay leaf
  • 2 (8 oz.) pkg. bow tie macaroni
  • 2 tbsp. butter
  • 1 tbsp. minced parsley
  • 1 tbsp. grated lemon peel
  • ½ tsp. caraway seed
Instructions
  1. In 8 quart Dutch oven over medium high heat, in hot salad oil, cook garlic clove 1 minute, discard.
  2. Add stew meat and onions; cook, stirring occasionally until meat is lightly browned.
  3. Stir in tomato paste, water, paprika, salt, pepper and bay leaf; heat to boiling.
  4. Reduce heat to low; cover, simmer 2 hours or until meat is fork tender, stirring often.
  5. About 30 minutes before meat is done, prepare macaroni according to label directions.
  6. Drain and toss gently with butter and parsley.

Ingredients
  • 1 can cream of mushroom soup, condensed
  • 1½ pounds ground beef, lean
  • ½ cup dry bread crumbs
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 onion, minced
  • 1 egg, beaten
  • ⅓ cup water
Instructions
  1. Heat oven to 350 F.
  2. In medium bowl, combine ¼ of the soup with remaining ingredients except water; mix well.
  3. Shape into 6 patties; arrange in single layer in 13 x 9-inch or 12 x8-inch baking dish.
  4. Bake uncovered at 350 F. for 30 minutes.
  5. Skim off fat. In small bowl, combine remaining soup and water; spoon over patties.
  6. Return to oven and bake for 10 minutes.

 

Linguine with White Clam Sauce

Ingredients
  • 1 lb. linguine, cooked and drained
  • ½ c. olive oil
  • 1 c. onion, chopped
  • 4 garlic cloves, minced
  • 2 cans clams, minced, with liquid
  • ½ c. white wine
  • 1 tbsp. parsley flakes
  • ½ tsp. oregano
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ½ tsp. sweet basil
Instructions
  1. Heat oil in skillet and simmer with onion and garlic until golden.
  2. Add clams, wine and seasonings, and simmer 5 minutes.
  3. Pour sauce over cooked and drained linguine.

  • Chicken
  • ½ c. ketchup
  • 1 tbsp. mustard
  • 1 tbsp. Worcestershire sauce
  • ½ c. brown sugar
  • 1 tbsp. lemon juice
  • ¼ c. water
Instructions
  1. Bake chicken pieces at 350 degrees for about 45 minutes.
  2. Drain off fat.
  3. Combine above ingredients for sauce.
  4. Bring to a low boil.
  5. Cover chicken with sauce and bake for an additional 15 minutes.

Ingredients
  • 2 lbs. lean ground beef
  • ¼ c. chopped onions
  • 1 c. rolled oats
  • 2 tbsp. Worcestershire sauce
  • 1 c. milk
  • 2 tbsp. cooking oil
  • 3 tbsp. flour
  • 1 c. water
  • 1 beef bouillon cube
  • ½ c. cooking sherry
  • 1 (4 oz.) can mushroom caps
Instructions
  1. Combine beef, onions, oats, Worcestershire and milk or tomato juice; mix well.
  2. Divide into eight portions and shape each portion into an oval patty.
  3. Heat oil in large frying pan.
  4. Brown patties on both sides, turning once.
  5. Remove meat from pan.
  6. Stir flour into meat drippings; add water and bouillon cube.
  7. Cook until smooth and thickened.
  8. Stir in wine and mushrooms.
  9. Return meat to pan.
  10. Cover and lower heat.
  11. Cook until patties are done. Approximately 15 additional minutes.

Ingredients
  • 1 (2 lb.) bag hash browns
  • 8 oz. sour cream
  • 1 can cream of chicken soup
  • 1 chopped onion
  • 1½ c. grated cheese
  • 8 oz. Carnation milk
Instructions
  1. Mix all ingredients together and bake in casserole dish at 300 degrees about 40 minutes.

Ingredients
  • 1 chicken, cut up
  • 4 cloves garlic, crushed
  • 1 tsp. peppercorn, crushed
  • 2 bay leaves, whole
  • ¼ c. soy sauce
  • 4 tbsp. vinegar
Instructions
  1. Saute garlic until light brown; add chicken, peppercorn, soy sauce, bay leaves for 10 minutes.
  2. Then add soy sauce and vinegar; cover for 1½ hours on low flame.

Ingredients
  • 4 boneless skinless chicken breasts
  • ¼ stick butter
  • 1 large onion
  • 1 green pepper
  • ¼ brown sugar
  • lettuce, tomato
  • sour cream
  • guacamole
  • cheese
  • tortillas
Instructions
  1. Slice chicken into long strips, place in pan with half of the butter.
  2. Cook until lightly browned.
  3. Stir in a small amount of water and the brown sugar.
  4. Cook until caramelized.
  5. Chop the pepper and onions into strips and sauté in a separate skillet with the remaining butter.
  6. Cook until onions are caramelized.

Ingredients
  • 1 lb. onions, peeled, quartered
  • 1 lb. zucchini, cut into chunks
  • 1 lb. peeled turnip, cut into chunks
  • 1 unpeeled butternut squash, cut in chunks
  • 1 (15 oz.) can crushed tomatoes
  • 1 pt. water
  • ¼ c. oil
  • ½ tsp. saffron
  • ½ tsp. turmeric
  • 1 pkg. frozen Lima beans
  • 1 bunch chopped coriander
Instructions
  1. In large saucepan, cook first four ingredients in oil and water, until it starts to soften, stirring occasionally.
  2. Add tomatoes, turmeric, saffron and cook on medium low for 15 more minutes.
  3. Add Lima beans and when heated through, sprinkle in coriander.
