Ingredients
  • 2 cans (4 oz.) each green chilies (chopped)
  • 3 c. (12 oz.) Monterrey Jack cheese, shredded
  • 1½ c. (6 oz.) sharp cheddar cheese, shredded
  • 2 eggs
  • 2 tbsp. milk
  • 1 tbsp. flour
Instructions
  1. Preheat oven to 375 degrees.
  2. Lightly grease a 9x9 casserole dish and alternate layers of cheese and chilies starting with cheese on bottom and ending with cheese on top.
  3. Beat eggs, milk and flour together.
  4. Pour egg mix over cheeses and bake for one hour.
  5. Allow to cool for 10 to 15 minutes before cutting into squares.

Ingredients
  • 2 lbs. ground turkey
  • 3 eggs, slightly beaten
  • 1 medium red onion, chopped
  • 2 stalks celery, chopped
  • 1 medium bell pepper, chopped
  • 1 c. old fashioned oats
  • 1 can tomatoes, diced
  • 1 lg. jar marinara sauce
  • 1 tbsp. salt
  • ½ tsp. pepper
Instructions
  1. Mix together all ingredients except for ½ jar of marinara sauce. Divide mixture and place in 2 loaf pans.
  2. Cook at 350°F for 45 minutes then spread remaining marinara sauce on top and cook an additional 15 to 20 minutes.

Ingredients
  • 3 pounds skinless chicken breast
  • ¼ c. vinegar
  • 1 tbsp. soy sauce
  • 1 clove garlic, crushed
  • 8 whole peppercorns, crushed
Instructions
  1. Wash chicken. Cut chicken into serving pieces. Add vinegar to chicken in 4 quart saucepan. Add soy sauce and rest of ingredients. Cover and simmer chicken till cooked, approximately 30 to 45 minutes.
  2. Saute garlic clove in butter. When browned, add chicken without liquid. Fry till browned. Add liquid and simmer for 5 to 10 minutes.

 

Chicken Curry

Ingredients
  • 1 lb chicken, cut into chunks
  • 1 cup water chestnuts
  • 1 cup baby corn
  • 1 cup bean sprouts
  • 1 cup diced potato
  • 2½ cups coconut milk
  • 2 teaspoons red curry paste
  • 3 cups Jasmine rice
Instructions
  1. Cut chicken into chunks (about 2 inches). Add coconut milk, baby corn, water chestnuts, bean sprouts, and potatoes to a large cooking pot.
  2. Stir in curry paste and chicken. In a separate pot, boil rice. Cook curry for 10-15 mintues, stirring occasionally.
  3. Let sit 3-5 minutes, then serve over rice.

Ingredients
  • 1 lb. Italian sausage (cooked)
  • 1 lb. ziti noodles (cooked)
  • 1 (8 oz.) pkg. cream cheese
  • 1 (16 oz.) sour cream
  • 1 (16 oz.) cottage cheese, sm. curd
  • 1 c. shredded Mozzarella
  • 1 lg. jar spaghetti sauce
  • Parmesan cheese, grated
Instructions
  1. In a bowl mix cream cheese, sour cream and cottage cheese. Set aside.
  2. In another bowl combine noodles, sauce and sausage.
  3. In a large baking dish put ½ of the mixture of noodles, sauce and sausage. Then make a layer of all of the cream mixture. Then put the rest of the noodle mixture. Top with shredded Mozzarella and sprinkle with Parmesan. Bake at 350 degrees for 35-45 minutes.

Ingredients
  • ½ c. oil
  • ¼ c. lemon juice
  • 2 tbsp. white wine vinegar
  • 1 tsp. grated lemon peel
  • 2 cloves garlic
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ½ c. fresh chopped basil or 1 tbsp. dried
  • 2 whole boneless chickens
Instructions
  1. In small bowl, combine oil, lemon juice, vinegar, grated lemon peel, garlic, salt, pepper and basil. (Makes about 1 cup marinade.)
  2. Put chicken in shallow baking dish and cover with marinade. Marinate chicken, turning once, for 30 to 45 minutes.
  3. Refrigerate until ready to cook.
  4. Grill or broil chicken until lightly browned on the outside and just cooked through, (about 3 or 4 minutes per side).

  • 3 C/ chopped cold cooked potatoes
  • C. butter
  • 1 onion minced
  • 1 ½ C. chopped cooked cabbage
  • Salt and pepper
Instructions
  1. Crush potatoes slightly.
  2. Melt butter in a large skillet and lightly fry the onion.
  3. Mix in cabbage and potatoes and fry until both sides are a light brown.

  • 1 C. raw rice
  • 2 qt. Cold water
  • 2 tsp. salt
  • 1 ½ C. diced ham
  • C. butter
  • 1 tbs. onion
  • 1 ½ tsp. salt and pepper
  • 2 tbsp. soy sauce
  • 2 eggs beaten (add eggs last)
Instructions
  1. Bring water to a rapid boil and reduce heat.
  2. Boil without stirring for about 12 minutes.
  3. Drain and cover add remaining ingredients (eggs last) and serve.

  • 1 ½ lbs. halibut cut into pieces
  • 1 egg beaten
  • Cracker crumbs
  • Salt and pepper
Instructions
  1. Mix all ingredients together.
  2. Dip halibut in cracker mixture.
  3. Brown halibut in frying pan with shortening.
  4. Place in an oven safe dish and cover and bake in 350 degrees for about 45 min.

Ingredients
  • 2 lb. ground beef
  • 6 Large onions, sliced
  • 2 Large green peppers, chopped
  • 2 cans (16 oz.) tomatoes
  • 1 C. uncooked regular rice
  • 4 tsp. salt
  • tsp pepper
Instructions
  1. In a large pan, cook and stir meat, onion and green pepper until meat is brown and vegetables are tender.
  2. Drain off fat.
  3. Stir in potatoes, rice, salt and pepper and heat through.
  4. Pour into two ungreased 2-qt. casserole dishes.
  5. Cover and bake for 1 hour at 350.

  • Celery

  • 2 Tbsp. Worchester Sauce
  • tsp. sage

Instructions
  1. Mix all ingredients together and cook down until all meat and vegetables are well done.
  2. Spoon Mixture onto toasted hamburger buns and serve.

  • 1 pkg. frozen peas
  • 1 ½ C. Chopped Celery
  • 1 can cream of chicken soup
  • 2 Tbs. milk
  • 1 tsp. salt
  • tsp. pepper
  • C. Chopped onion
Instructions
  1. Brown hamburger and drain grease.
  2. Mix hamburger and remaining ingredients in a casserole dish and top with 3 C. potato chips.
  3. Bake at 350 for 45 minutes.

  • 2-4 Pork chops
  • 1 Large Onion
Instructions
  1. Brown, Salt and pepper pork chops.
  2. Remove chops from pan and place sliced onions in with the grease from the chops.
  3. Pour ⅓ C. water over the onions and place pork chops on top.
  4. Cover with a tight lid and cool in oven at 300 for 1 ½ hours.

  • 3 C. Lima Beans
  • 1 Onion, Diced
  • 1 Carrot
  • 2 C. Celery, Diced
  • 1 ham bone

  1. Place Lima beans in large stock pot and cover with water.
  2. Add onions and simmer for 1 hour.

  • Pork chops, Browned
  • 1 Can cream of mushroom soup
  • Potatoes
  • Carrots
  • Onions
  • Salt and pepper to taste
Instructions
  1. Make a layer of potatoes, carrots and onions in the bottom of a casserole dish and cover with half of the soup.
  2. Make a second layer of potatoes, carrots and onions and cover with remaining soup.
  3. Place browned pork chops on top and cove the dish with aluminum foil.
  4. Bake at 250 for 2 hours removing foil for the last 10 minutes.
