Ingredients
  • 1 lb. Ground Beef
  • C. green pepper, diced
  • C. Onion, diced
  • C. Celery, diced
  • 8 oz. can tomato sauce
  • C. Water
  • 2 Tbsp. vinegar
  • tsp. thyme
  • 1 Tbs. sugar
  • Salt and pepper to taste
Instructions
  1. Cook all ingredients and simmer for 5 minutes.
  2. Pour 2 ½ cans of pork and beans into a casserole dish and top with meat.
  3. Bake at 375 for 45 minutes.

 

Swedish Meatballs

Ingredients
  • 2 lbs ground hamburger
  • 1½ teaspoon garlic powder
  • 1 teaspoon seasoning salt
  • ½ teaspoon pepper
  • ¼ cup plain bread crumbs
  • Sauce:
  • 1 bottle chili sauce
  • 1 jar grape jelly
Instructions
  1. Combine all ingredients and put in a casserole dish. Cook at 350 for 35 minutes.
  2. To make the sauce, combine 1 bottle of chili sauce and grape jelly in a saucepan and heat until jelly is melted.
  3. When meatballs are done, remove and drain. Coat meatballs with sauce before serving.

Ingredients
  • 3-4 cups all purpose flour
  • 3 eggs
  • 2 cups milk
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • powdered sugar
  • vegetable oil (for deep frying - heat to 375°F)
Instructions
  1. Beat the eggs first and then add the sugar and milk. Sift 2 cups of flour, the salt, and the baking powder and add to the milk, sugar, and egg mixture. Add more flour until batter is smooth and not too thick.
  2. Pour the batter into a funnel or piping bag and use to pour the batter into the oil making a circle about 6 inches round. Be careful not to splash, the oil will be hot.
  3. Turn the cake when the bottom becomes golden brown.
  4. When both sides are done, remove and top with powdered sugar or cinnamon sugar.

  • 1½ cups flat beer
  • 3¾ cups all purpose flour
  • 3 tbsp. sugar
  • 1 1 /2 tsp. salt
  • 1½ tbsp. butter or olive oil
  • 1½ tsp. quick-rise active dry yeast
Instructions
  1. Mix all ingredients and knead until smooth.
  2. Form into balls.
  3. Cover and let rise for at least 45 minutes to an hour and then roll out for pizza.

Ingredients
  • 2 cups flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 2 teaspoons butter
  • ¾ cup milk
Instructions
  1. Combine ingredients.
  2. Place the dough by spoonfuls on the top of a boiling stew.
  3. Cover let cook for 12-13 minutes without removing the cover.

  • 4 cooked chicken breasts, diced
  • 1 pkg. egg noodles
  • 2 carrots, chopped
  • 2-3 stalks celery, sliced
  • 2 cans cream of chicken soup
  • ¼ cup onion, chopped
  • salt and pepper, to taste
Instructions
  1. Cook noodles according to package directions.
  2. Boil the vegetables in water until they are tender.
  3. Add the vegetables, chicken and cream soup to the cooked noodles.
  4. Salt and pepper to taste.
  5. Simmer for about 20 minutes.

Ingredients
  • 1 c. sugar
  • ½ tsp. salt
  • 1 c. butter
  • 3 oz. cream cheese
  • ½ tsp. almond extract
  • ½ tsp. vanilla extract
  • 1 egg yolk
  • 2¼ c. flour
Instructions
  1. Combine and blend all ingredients except flour and then slowly mix in the flour.
  2. Chill for a couple of hours. Roll out dough to desired thickness and cut into shapes.
  3. Place on un-greased cookie sheet.
  4. Bake at 375 degrees for 7 to 10 minutes or until the edges begin to brown.

 

Oven BBQ Ribs

Ingredients
  • 2 lbs. pork ribs
  • 1 C. ketchup
  • ¼ C. vinegar
  • ¼ C. Worcestershire sauce
  • ¼ C. onion, chopped
  • 1 clove garlic, crushed
  • 2 tbsp. brown sugar
  • 1 tbsp. paprika
  • 2 tsp. dry mustard
  • ½ tsp. salt
  • ¼ tsp. pepper
Instructions
  1. Preheat oven to 350 degrees.
  2. Bake ribs in oven for 1 hour and drain off excess fat. Combine sauce ingredients while ribs are baking. Pour sauce over ribs. Bake another hour and baste 2 or 3 times during baking process.

Ingredients
  • 2 jalapeno chilies, finely chopped
  • 16 oz. can creamed corn
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 tbsp. sugar
  • 2 eggs
  • ¾ c. buttermilk
  • ⅓ c. oil
  • 1 c. grated cheese
  • 2 c. yellow cornmeal
Instructions
  1. Preheat the oven to 350°F.
  2. Grease a 9 x 13 baking pan.
  3. In a large bowl, mix jalapenos and creamed corn.
  4. Mix in the dry ingredients first and then add the wet ingredients until mixed together well.
  5. Pour the batter into the greased pan and bake for 35 minutes.

Ingredients
  • 1 c. soft shortening
  • 2 c. brown sugar
  • 2 eggs
  • ½ c. sour milk (1/2 tsp. vinegar and ½ c. milk)
  • 2 tsp. vanilla
  • 1½ tsp. salt
  • 1½ tsp. soda
  • 1 tsp. cinnamon
  • 4 c. flour
  • 12 oz. chocolate chips
Instructions
  1. Cream shortening, sugar and eggs together and mix in remaining ingredients in order listed.
  2. Mix well and place in balls on an un-greased cookie sheet.
  3. Bake at 375 for 8-10 minutes.

 

Pumpkin Pie

Ingredients
  • ⅛ tsp. salt
  • ⅔ c. sugar
  • 2 tsp. pumpkin pie spice (or ½ tsp. cinnamon and ½ tsp nutmeg)
  • 2 eggs, beaten
  • 1⅔ c. milk
  • 1½ c. pumpkin, cooked and mashed
Instructions
  1. Sift dry ingredients together first and slowly mix in all wet ingredients. After preparing the pie crust, pour in the pumpkin mixture. Bake at 450 degrees for 10 minutes then reduce the temperature to 325 degrees and bake for an additional 35 minutes or until when a knife inserted in the center of the pie comes out clean. Cool and serve.
  2. PASTRY CRUST:
  3. ½ c. flour
  4. ¼ c. shortening
  5. ½ tsp. salt
  6. ½ tbsp. water
  7. Cut shortening and salt into flour. Add cold water and mix. Roll out crust on a floured board and place it into a 9 inch pie pan.

  • 2 c. yellow cornmeal
  • 1 c. flour
  • 1½ tsp. salt
  • 1 tbsp baking powder
  • 2 eggs, beaten
  • 1½ c. milk
  • 2 tbsp. oil
Instructions
  1. In a bowl, combine the first 4 ingredients. In a separate bowl, beat together 1 cup of milk and the eggs and add to the dry ingredients. Add additional milk until you produce a thick batter.
  2. Heat oil in a skillet. Once oil is heated, pour oil into the batter and mix well. Return the empty skillet to the stove-top and sprinkle cornmeal into the bottom. This will ensure that the bottom is browned. Pour batter on top and bake at 425 for 14-20 minutes.

 

Vegetarian Chili

  • 1 lb. dried kidney beans (soaked in water overnight to soften)
  • 1 large onion, diced
  • 4 medium tomatoes, diced
  • 2 large carrots, grated
  • 8 oz. mushrooms, sliced
  • 1 large bell pepper, diced
  • 2½ tbsp. olive oil
  • 2 tbsp. chili powder
  • 1 c. corn kernels
  • 6 oz. tomato paste
  • 8 oz. tomato sauce
  • grated cheddar cheese for topping
Instructions
  1. Cook the onion in the bottom of a large pot with the olive oil and heat until the onion begins to go clear. Add tomatoes to the pot and continue to cook, stirring occasionally, until the tomatoes start to break down. Add 4½ C. water and the kidney beans to the pot. Bring to a boil, and reduce heat to low and cover for one hour.
  2. Add chili powder, carrots and mushrooms and continue to simmer on low (covered) for one hour. Add red bell pepper, corn, tomato sauce and tomato paste. cover and simmer for an additional 30 minutes. Remove cover and continue to simmer for another 30 minutes to allow chili to thicken.

 

Shepherd’s Pie

Ingredients
  • 1½ lbs ground round beef
  • 1 onion chopped
  • 1-2 cups mixed vegetables (chopped carrots, corn, peas)
  • 3 large potatoes
  • 8 tablespoons butter
  • ½ cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt, pepper to taste
Instructions
  1. Peel and cut the potatoes into small pieces and boil them in salted water until tender. While the potatoes are boiling, saute the onions in half of the butter over medium heat until the onions are clear. Add ground beef to the mixture and saute until meat is no longer pink. Add remaining vegetables, Worcestershire sauce and beef broth and cook uncovered over medium heat for 10 minutes. In a separate bowl, mash the potatoes and mix in the remaining butter, salt and pepper.
  2. Place beef and vegetable mixture into a baking dish and top with mashed up potatoes. Use a fork to create a design in the mashed potatoes to create peaks that will brown up in the oven.
  3. Bake in the oven at 400 for 30 minutes.

 

Baked Macaroni and Cheese

Ingredients
  • 2 c. cooked elbow macaroni
  • 1 tbsp. butter
  • 1 can cream of mushroom soup
  • ⅓ c. water
  • 1 c. cheddar cheese, shredded
  • 1 tbsp. minced onion
Instructions
  1. Cook elbow macaroni until done and place in a glass casserole dish.
  2. In a separate bowl, mix the soup, onion, water and ½ of the cheese.
  3. Pour the mixture over the macaroni and mix well. top wit the remaining cheese and bake at 350 for 30 minutes or until the cheese is completely melted and cooked through.
