Ingredients
  • 1½ pounds sausage
  • 6 slices bread, cubed
  • 1½ cups shredded cheddar cheese
  • 6 eggs
  • 1 teaspoon salt
  • 2 cups milk
  • 1 teaspoon dry mustard
  • 4 ounces mushroom pieces, drained
  • ¼ cup green bell pepper, diced
  • ¼ cup green onion, diced
Instructions
  1. Brown sausage and drain grease.
  2. Layer bread in bottom of 9 x 13-inch well-greased baking pan.
  3. Sprinkle sausage over bread.
  4. Add cheese.
  5. In a separate bowl, combine eggs and remaining ingredients.
  6. Pour slowly over cheese.
  7. Bake at 325 F. for 45 minutes.
  8. Recipe can be made the might before and refrigerated before cooking if desired.

Ingredients
  • 1 C. raw rice
  • 2 qt. Cold water
  • 2 tsp. salt
  • 1 ½ C. diced ham
  • C. butter
  • 1 tbs. onion
  • 1 ½ tsp. salt and pepper
  • 2 tbsp. soy sauce
  • 2 eggs beaten (add eggs last)
Instructions
  1. Bring water to a rapid boil and reduce heat.
  2. Boil without stirring for about 12 minutes.
  3. Drain and cover add remaining ingredients (eggs last) and serve.

Ingredients
  • 2 lb. ground beef
  • 6 Large onions, sliced
  • 2 Large green peppers, chopped
  • 2 cans (16 oz.) tomatoes
  • 1 C. uncooked regular rice
  • 4 tsp. salt
  • tsp pepper
Instructions
  1. In a large pan, cook and stir meat, onion and green pepper until meat is brown and vegetables are tender.
  2. Drain off fat.
  3. Stir in potatoes, rice, salt and pepper and heat through.
  4. Pour into two ungreased 2-qt. casserole dishes.
  5. Cover and bake for 1 hour at 350.

Ingredients
  • 1¼ c. rice
  • 2½ c. water
  • 4 c. milk
  • 3 eggs, beaten
  • ½ tsp. salt
  • 1¼ c. flour
  • 1 to 2 tsp. butter, melted
Instructions
  1. Boil rice in a covered pot until slightly overdone and add milk.
  2. Remove from heat and allow to cool.
  3. When rice has cooled, mix in eggs, flour, salt and butter.
  4. Mix together with rice mixture.

Ingredients
  • 2 cups flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 2 teaspoons butter
  • ¾ cup milk
Instructions
  1. Combine ingredients.
  2. Place the dough by spoonfuls on the top of a boiling stew.
  3. Cover let cook for 12-13 minutes without removing the cover.

  • 1⅛ c. milk
  • 1 c. rolled oats
  • 2 tbsp. oil
  • 2 eggs, beaten
  • 1 c. whole wheat flour
  • 1 tbsp. brown sugar
  • 1 tsp. baking powder
  • ¼ tsp. salt
Instructions
  1. Combine the milk and rolled oats in bowl and let them stand at least 5 minutes to soak in the milk.
  2. Stir in the remaining ingredients and mix well.
  3. Lightly oil the griddle before cooking pancakes to prevent sticking.

Ingredients
  • 4 tbsp. butter
  • ¾ c. flour
  • ½ tsp. baking powder
  • 4 eggs
  • 1 c. milk
Instructions
  1. Melt the butter in a 2 quart oven proof bowl at 425 degrees.
  2. In a small bowl, combine the milk, flour, baking powder, and eggs.
  3. Beat continuously until batter is smooth and lump free.
  4. Pour batter into hot butter.
  5. Bake at 425 degrees for 18 minutes.
  6. DO NOT open oven door while baking. Top with butter and powder sugar.

  • 1 box lemon cake mix
  • 1 c. boiling water
  • ½ c. oil
  • 1 sm. box vanilla pudding
  • 4 eggs
  • ⅓ c. poppy seeds
Instructions
  1. Mix all ingredients together and fill muffin cups about half full with batter.
  2. Bake at 425 degrees for 15 minutes.

Ingredients
  • 3 c. flour
  • 4 tsp. baking powder
  • ½ tsp. salt
  • ½ c. sugar
  • 1½ c. milk
  • 1½ sticks butter
Instructions
  1. Combine first 5 ingredients and cut in butter until mix forms into a ball.
  2. Roll out on floured surface until approximately ½ inch thick.
  3. Cut into desired shapes and bake at 400 degrees for 10 to 12 minutes.

Ingredients
  • 2 jalapeno chilies, finely chopped
  • 16 oz. can creamed corn
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 tbsp. sugar
  • 2 eggs
  • ¾ c. buttermilk
  • ⅓ c. oil
  • 1 c. grated cheese
  • 2 c. yellow cornmeal
Instructions
  1. Preheat the oven to 350°F.
  2. Grease a 9 x 13 baking pan.
  3. In a large bowl, mix jalapenos and creamed corn.
  4. Mix in the dry ingredients first and then add the wet ingredients until mixed together well.
  5. Pour the batter into the greased pan and bake for 35 minutes.

  • 2¼ c. milk
  • 2 eggs
  • 1 c. mashed bananas
  • ½ tsp. cinnamon
  • 1 tsp. vanilla
  • 1 tsp. sugar
  • ¼ c. wheat germ
Instructions
  1. Beat ingredients by hand until well blended.
  2. Pour onto hot griddle.
  3. Cook until edges are dry.
  4. Turn and cook until golden.

 

Breakfast Burritos

Ingredients
  • 8 potatoes, diced
  • ¾ c. chopped onion
  • ¾ c. chopped green pepper
  • ⅓ c. oil
  • 10 eggs
  • 1 c. grated cheddar cheese
  • 2 tbsp. butter/butter
  • ½ lb. bacon, sausage or steak strips
  • 1 package of flour tortillas
  • Cilantro
  • Salt and pepper to taste
  • Picante sauce
Instructions
  1. Fry chopped onion, peppers and diced potatoes in oil until brown and cooked all the way through.
  2. Drain off the excess oil and add the eggs and butter and scramble mixture.
  3. When almost done add cheese until melted.
  4. Add the fresh chopped cilantro and remove from heat.
  5. In a separate pan, cook bacon, sausage or strips of steak until fully cooked.
  6. Assemble burritos and serve.

 

Red Velvet Pancakes

These pancakes are delicious with a butter cream frosting and a dusting of powdered sugar.
Ingredients
  • 1½ C. Flour
  • 2 tbsp. Cocoa Powder
  • 3 tbsp. Sugar
  • 1½ tsp. Baking Powder
  • ½ tsp. Baking Soda
  • 1 tsp ground Cinnamon
  • 1 tsp. Salt
  • 1¼ C. Buttermilk
  • 2 Large Eggs
  • 1 tsp. Vanilla Extract
  • 1 tbsp. Red Food Coloring
  • ½ stick of Butter, melted
Instructions
  1. Begin by mixing all of the dry ingredients first and then add all of the wet ingredients.
  2. Mix until smooth and lump free.
  3. Lightly oil the griddle before cooking pancakes to prevent sticking.

Bran Muffins

Ingredients
  • 1 c. all-bran
  • ¾ c. milk
  • 1 egg
  • ¼ c. shortening
  • 1 c. flour
  • 2½ tsp. baking powder
  • ½ tsp. salt
  • ¼ c. sugar, heaping
Instructions
  1. Combine bran and milk and allow to sit until most of the moisture is absorbed.
  2. Cream shortening, egg and sugar and add in remaining ingredients.
  3. Stir only until mixed and do not overwork.
  4. Fill greased muffin pans ⅔ full and bake at 400 for 30 minutes.

 

Cornbread Muffins

  • 1 c. flour, sifted
  • 2 tsp. baking powder
  • 2 tbsp. sugar
  • ¾ tsp. salt
  • ⅓ c. vegetable oil
  • 1 egg, beaten
  • ¾ c. milk
  • ⅔ c. yellow corn meal
Instructions
  1. Combine all dry ingredients and mix together.
  2. Add in wet ingredients and mix until combined. Do not overwork the mixture.
  3. Spoon mixture into muffin cups until ⅔ full.
  4. Bake at 400 for 20-25 minutes.
