Ingredients
  • 2 hard cooked egg yolks, sieved
  • 2 cloves garlic, crushed
  • 1½ tbsp. prepared mustard
  • 1½ c. mayonnaise
  • 1 tbsp. Worcestershire Sauce
  • 1 tbsp. paprika
  • 1½ tbsp. horseradish
  • Dash of Tabasco
  • 2 tbsp. vinegar
  • ¼ c. parsley, finely chopped
  • salt and pepper, to taste
Instructions
  1. Blend ingredients and chill until ready to serve.

 

Chinese Chicken Salad

Ingredients
  • 4 c. chicken, cooked & diced
  • 1 c. celery, finely diced
  • 1 green pepper, diced
  • 1 pt. Italian salad dressing
  • 1 (5 oz.) can Chinese noodles
  • ¼ c. onion, chopped
  • 1 (5 oz.) can Mandarin oranges
  • 1 (15 oz.) can pineapple tidbits
  • ½ small jar mustard (not spicy)
Instructions
  1. Drain fruit and combine with chicken, celery, onion, green pepper.
  2. Add salad dressing and mustard.
  3. Blend well and let stand for at least 3 hours.
  4. Add Chinese noodles just before serving.

Ingredients
  • 2 pkg. frozen, chopped spinach
  • ½ onion, chopped
  • 2 tbsp. butter
  • 4 oz. cream cheese
  • ⅓ c. bread crumbs, seasoned
  • ½ tsp. salt
Instructions
  1. Defrost and squeeze dry spinach.
  2. Cook onion and salt in butter until caramelizes. Mix onion, spinach, and cream cheese together.
  3. Butter a casserole dish and coat the sides and bottom with the bread crumbs.
  4. Fill with mixture and bake at 350 degrees for 25 minutes.

 

Rice Pancakes

Ingredients
  • 1¼ c. rice
  • 2½ c. water
  • 4 c. milk
  • 3 eggs, beaten
  • ½ tsp. salt
  • 1¼ c. flour
  • 1 to 2 tsp. butter, melted
Instructions
  1. Boil rice in a covered pot until slightly overdone and add milk.
  2. Remove from heat and allow to cool.
  3. When rice has cooled, mix in eggs, flour, salt and butter.
  4. Mix together with rice mixture.

 

Milk Chocolate Truffles

Ingredients
  • 9 oz. chocolate chips
  • 2 tbsp. unsalted butter
  • ⅓ c. heavy cream
  • 1 c. unsweetened cocoa
Instructions
  1. Melt chocolate chips and butter and mix together.
  2. Add cream and stir until smooth.
  3. Cover and refrigerate for about 5 hours.
  4. When mixture has set, scoop a teaspoon of mixture and roll into a ball and then roll in cocoa.

Ingredients
  • 2 cups flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 2 teaspoons butter
  • ¾ cup milk
Instructions
  1. Combine ingredients.
  2. Place the dough by spoonfuls on the top of a boiling stew.
  3. Cover let cook for 12-13 minutes without removing the cover.

 

Pita Bread

Ingredients
  • 2 C. plus 1 tablespoon all-purpose flour
  • 1 C. pastry flour
  • 1 C. warm water
  • 1 tsp. active dry yeast
  • 1 tbsp. applesauce
  • ½ tsp. salt
  • 1½ tsp. sugar
  • olive oil
Instructions
  1. Dissolve the yeast and sugar in the warm water.
  2. Combine all of the dry ingredients and add in the yeast mixture and the applesauce and knead.
  3. Roll out into a rope and cut into 8 pieces. Shape each piece into a ball and roll out until it's approximately 7 inches in diameter.
  4. Heat olive oil in a skillet over high heat. Just before oil begins smoking, place one pita in the pan and cook for a few minutes on each side. When small brown spots begin to form, they are done. Don't worry, the pita should like a tortilla when you're done. Put in a plastic bag once it has cooled.

 

Taco Soup

  • 1 lb. lean ground beef
  • 1 onion, chopped
  • 1 pkg. taco seasoning
  • 1 pkg. dry ranch seasoning
  • 3 large cans diced tomatoes, undrained
  • 1 can black beans, drained
  • 1 can pinto beans
  • 1 can whole kernel corn, drained
Instructions
  1. In a skillet, brown meat and onion and drain off fat.
  2. Combine remaining ingredients and simmer until hot.
  3. Add grated cheese and sour cream if desired.

 

Tortilla Soup

Ingredients
  • 1 lg. onion, diced
  • 6 tbsp. butter
  • 12 oz. mild green chilies, diced
  • 2-3 Chopped green onions
  • 4 C. chopped tomatoes
  • 12 oz. cream cheese
  • 2 cans chicken broth
  • 3 c. half and half
  • 7 tsp. lemon juice
  • Salt and pepper to taste
  • Shredded Monterrey Jack or Cheddar cheese for topping.
Instructions
  1. Cook onion in butter until caramelized and add chilies, green onion and tomatoes for approximately 10 minutes.
  2. Stir in remaining ingredients.
  3. Keep soup on heat until hot.
  4. Top with tortilla chips and shredded cheese before serving.

Ingredients
  • 1 large eggplant
  • 1 clove garlic, minced
  • ¼ tsp. salt
  • ¼ C. Parsley, finely chopped
  • 2 tbsp. tahini (sesame seed paste)
  • 2 tbsp. lemon juice
Instructions
  1. Preheat oven to 450 degrees F.
  2. Prick eggplant with a fork and place on a cookie sheet.
  3. Bake the eggplant for around 20 minutes until it is soft.
  4. Let the eggplant cool and cut it in half lengthwise.
  5. Drain off the liquid and scoop the pulp into a bowl.
  6. In a blender or food processor, process the eggplant until smooth and pour it into a mixing bowl.
  7. Mix in remaining ingredients.
  8. Garnish with additional parsley and Salt and pepper to taste.

Ingredients
  • 2 c. all-purpose flour
  • 2½ tsp. baking powder
  • ½ tsp. salt
  • ¼ tsp. ground allspice
  • ¼ tsp. ground nutmeg
  • 1 c. sweet potatoes, cooked and mashed
  • ½ c. brown sugar
  • ¼ c. unsalted butter, melted
  • 3 tbsp. skim milk
  • 2 eggs
  • 1 tsp. orange rind
  • vegetable cooking spray
Instructions
  1. In first bowl, combine the dry ingredients.
  2. In a second bowl, combine remaining ingredients.
  3. Slowly mix wet ingredients into dry ingredients and pour into a large bread loaf pan coated with vegetable spray.
  4. Bake at 350°F for 45
  5. Nuts may be added if desired.

  • 2 C. elbow macaroni noodles, uncooked
  • 12 ounces of tuna in spring water
  • 2 cans cream of chicken soup
  • 1 can sweet green peas
  • ½ C. of milk
  • mozzarella cheese, shredded
Instructions
  1. In a medium pot, bring water to a boil and cook noodles until they are tender.
  2. Preheat oven to 350.
  3. In a glass casserole dish, mix in remaining ingredients and spread an even layer of shredded cheese across the top.
  4. Bake for 25 minutes

 

Spaghetti Sauce

  • 1 Large can tomato sauce
  • 1 tbsp. dried basil
  • ½ tsp. dried oregano
  • 1 tsp. garlic powder
  • 1 tsp. Dried onion flakes
  • 1 tbsp. yellow mustard
  • Salt and pepper to taste
Instructions
  1. Mix all ingredients.
  2. Bring to a boil and reduce heat. let simmer uncovered for 30 minutes.
  3. Mix with browned hamburger meat if desired.

  • 1 can cream of celery soup
  • 1 egg, beaten
  • ½ c. chopped onion
  • ¼ c. chopped green pepper
  • 1 tbsp. lemon juice
  • 1 tsp. salt

  1. In a greased casserole dish, mix all ingredients and bake for 1 hour at 350 degrees.

  • 2 pound pot roast
  • 1 package of dry onion Soup Mix
  • 1 can stewed tomatoes
  • 1 can mushroom slices
  • 1 can Cream of Mushroom Soup
  • 1 Clove Garlic, minced
  • Salt and Pepper to taste
  • Enough water to cover roast
Instructions
  1. In a large crock pot, add all ingredients and mix together before adding the roast.
  2. Next, add the roast and enough water to cover the roast.
  3. Cook on low for 9 to 12 hours.
