Ingredients
- 2 C. plus 1 tablespoon all-purpose flour
- 1 C. pastry flour
- 1 C. warm water
- 1 tsp. active dry yeast
- 1 tbsp. applesauce
- ½ tsp. salt
- 1½ tsp. sugar
- olive oil
Instructions
- Dissolve the yeast and sugar in the warm water.
- Combine all of the dry ingredients and add in the yeast mixture and the applesauce and knead.
- Roll out into a rope and cut into 8 pieces. Shape each piece into a ball and roll out until it's approximately 7 inches in diameter.
- Heat olive oil in a skillet over high heat. Just before oil begins smoking, place one pita in the pan and cook for a few minutes on each side. When small brown spots begin to form, they are done. Don't worry, the pita should like a tortilla when you're done. Put in a plastic bag once it has cooled.
