Blueberry Apple Pie

Ingredients
  • 2 c. sliced and peeled tart apples
  • 2 c. frozen blueberries
  • 1 c. sugar
  • 2 tbsp. flour
  • 2 tbsp. butter
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • 2-3 tbsp. lemon juice
  • 9 inch pre-made pie shell
  • TOPPING:
  • 2 tbsp. flour
  • 2 tbsp. butter
  • 1 tbsp. sugar
Instructions
  1. Combine all ingredients and place in the pie shell.
  2. Mix topping ingredients together and sprinkle over the top.
  3. Bake at 350 degrees for 45 minutes.

 

Spanish Rice

Ingredients
  • ½ med. onion, chopped
  • 1 c. long grain rice
  • 1 tsp. salt, ground pepper
  • 2 tbsp. shortening
  • ½ green pepper, chopped
  • 8 oz. tomato sauce
  • 2 c. water
Instructions
  1. Melt shortening in skillet. Add onion, green pepper and rice and sauté.
  2. Add remaining ingredients and bring to a boil.
  3. Cover and let simmer until rice is cooked.

 

Candied Sweet Potatoes

Ingredients
  • 8 med. sweet potatoes
  • 2 tbsp. butter
  • ½ c. hot milk
  • ½ tsp. salt
  • ¼ tsp. paprika
  • ½ tsp. cinnamon
  • 1 c. chopped walnuts
  • ½ lb. marshmallows
Instructions
  1. Boil potatoes until tender and remove skins and mash. Beat in butter, milk, salt, spices. Beat well. Fold in walnuts and turn into buttered baking dish.
  2. Top with marshmallows and bake at 350°F until marshmallows brown.

 

Carmel Bundt Cake

Ingredients
  • 20 frozen dinner rolls
  • 1 small pkg. butterscotch pudding
  • ½ c. chopped pecans
  • ½ c. raisins
  • 6 tbsp. butter
  • ½ c. brown sugar
  • ¾ tsp. cinnamon
Instructions
  1. Lightly grease Bundt pan. Sprinkle nuts and raisins on bottom. Put in rolls and sprinkle with dry pudding mix. In a sauce pan, melt butter, brown sugar and cinnamon and pour over rolls and let rise for several hours. Bake at 350 degrees for 25 minutes.
  2. Immediately turn out the cake onto a clean serving dish.

 

Swedish Meatballs

Ingredients
  • 2 lbs ground hamburger
  • 1½ teaspoon garlic powder
  • 1 teaspoon seasoning salt
  • ½ teaspoon pepper
  • ¼ cup plain bread crumbs
  • Sauce:
  • 1 bottle chili sauce
  • 1 jar grape jelly
Instructions
  1. Combine all ingredients and put in a casserole dish. Cook at 350 for 35 minutes.
  2. To make the sauce, combine 1 bottle of chili sauce and grape jelly in a saucepan and heat until jelly is melted.
  3. When meatballs are done, remove and drain. Coat meatballs with sauce before serving.

Ingredients
  • ½ c. minced onion
  • 1 c. uncooked rice
  • 2 tbsp. butter
  • 1 (4 oz.) can sliced mushrooms, undrained
  • 1½ c. beef broth
  • ½ tsp. salt
  • ¼ tsp. pepper
  • Pinch powdered saffron
Instructions
  1. Saute onion and rice in butter until golden and add remaining ingredients. Bring to a boil and lower heat to simmer; cover with a tight-fitting lid. Cook 15 minutes or until rice is done.

 

Crab Dip

  • 6-oz of crab meat
  • 1 8-oz pkg. Cream Cheese
  • 2 t. Salad Dressing
  • 2 t. milk
  • 1 t. Hot Sauce
  • c. chopped red pepper
Instructions
  1. Combine all ingredients in a bowl and place in refrigerator for at leas one hour before serving.

 

Buffalo Wing Dip

  • 16 oz. diced chicken
  • 8 oz. cream cheese
  • ½ c. blue cheese dressing
  • ¼ c. hot sauce (Your choice of brand)
  • 1 pkg. shredded Monterrey Jack cheese
  • celery sticks
Instructions
  1. In a large sauce pan, melt cream cheese over low heat and add blue cheese, hot sauce, and chicken.
  2. Remove from heat, mix in ½ of the Monterrey Jack cheese.
  3. Pour into glass casserole dish, top with remaining cheese and bake at 350°F until cheese is melted.

 

Aioli (Garlic Mayonnaise)

Ingredients
  • 2 egg yolks
  • 2 tbsp. lemon juice
  • 2 tbsp. bread crumbs
  • 4 lg. garlic cloves
  • ½ tsp. sugar
  • 1 c. olive oil
Instructions
  1. Mix all ingredients except oil in blender and add olive oil slowly.
  2. Thin with 1-2 teaspoons HOT water if needed.
  3. Goes great on Sandwiches and vegetables.

 

Basic Crepes

Ingredients
  • 3 eggs
  • 1½ c. flour
  • 2 tbsp. vegetable oil
  • ⅛ tsp. salt
  • 1½ c. skim milk
Instructions
  1. In mixing bowl, combine all ingredients and beat by hand until smooth and lump free.
  2. If possible, refrigerate for at least 1 hour.
  3. Put 2-3 tablespoons of batter in the bottom of a non stick skillet and flip when bottom is browned.

 

Funnel Cake

Ingredients
  • 3-4 cups all purpose flour
  • 3 eggs
  • 2 cups milk
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • powdered sugar
  • vegetable oil (for deep frying - heat to 375°F)
Instructions
  1. Beat the eggs first and then add the sugar and milk. Sift 2 cups of flour, the salt, and the baking powder and add to the milk, sugar, and egg mixture. Add more flour until batter is smooth and not too thick.
  2. Pour the batter into a funnel or piping bag and use to pour the batter into the oil making a circle about 6 inches round. Be careful not to splash, the oil will be hot.
  3. Turn the cake when the bottom becomes golden brown.
  4. When both sides are done, remove and top with powdered sugar or cinnamon sugar.

Ingredients
  • 1½ cups flat beer
  • 3¾ cups all purpose flour
  • 3 tbsp. sugar
  • 1 1 /2 tsp. salt
  • 1½ tbsp. butter or olive oil
  • 1½ tsp. quick-rise active dry yeast
Instructions
  1. Mix all ingredients and knead until smooth.
  2. Form into balls.
  3. Cover and let rise for at least 45 minutes to an hour and then roll out for pizza.
