Ingredients
  • 2 pounds pork (I use boneless pork rib meat)
  • 3 cans Coke (NOT diet)
  • ¼ c brown sugar
  • dash garlic salt
  • ¼ c water
  • 1 can diced green chilies
  • ¾ (10oz) can red enchilada sauce (I use Old El Paso brand, medium spiciness but any will work)
  • 1 c brown sugar
Instructions
  1. Put the pork in a heavy duty Ziploc bag to marinade.
  2. Add about a can and a half of coke and about ¼ c of brown sugar.
  3. Marinade for a few hours or overnight.
  4. Drain marinade and put pork, ½ can of coke, water, and garlic salt in crock pot on high for about 3-4 hours (or until it shreds easily, but don’t let it get TOO dry) or on low for 8 hours.
  5. Remove pork from crock pot and drain any liquid left in the pot. Shred pork.
  6. In a food processor or blender, blend ½ can Coke, chilies, enchilada sauce and remaining brown sugar (about a cup, you can add a little more or less to taste.). If it looks too thick, add more Coke little by little.
  7. Put shredded pork and sauce in crock pot and cook on low for 2 hours.

Ingredients
  • 4 pork chops
  • ¼ c diced onion
  • ¼ c diced green pepper
  • 3 c stewed tomatoes
  • 2 c raw macaroni(elbow or your favorite)
  • oil
  • salt and pepper to taste
Instructions
  1. In a large skillet, coat the bottom of the pan with oil and brown pork chops.
  2. Add onion and green pepper and saute a couple of minutes.
  3. Then add stewed tomatoes.
  4. Bring to a boil and then add your macaroni.
  5. Cover and simmer until pasta is tender.
  6. Salt and pepper to taste.

  • 4 pork chops
  • 1 T oil
  • salt and pepper to taste
  • 1 green and red pepper cut into strips
  • ¼ onion, sliced
  • 1 8 oz can pineapple chunks
  • ⅓ c Heinz 57 Sauce
  • cornstarch
Instructions
  1. In a medium size skillet, salt and pepper pork chops and brown pork chops in the oil.
  2. Add green onion and onion and saute for a few minutes.
  3. Add pineapple juice and all, and the Heinz 57 Sauce.
  4. Cover and simmer until done.
  5. Remove chops from fry pan and thicken the sauce with cornstarch/water mixture.
  6. Serve over chops and rice.

  • 6 pork chops
  • 1 8 oz can tomato sauce
  • ½ c ketchup
  • 1 t Worcestershire sauce
  • ½ t onion salt
  • ½ t liquid smoke
  • 2 T oil
  • dash of pepper
Instructions
  1. Brown chops in a fry pan with 2 T oil.
  2. Drain fat and season with onion salt and pepper.
  3. In a bowl, mix all remaining ingredients together.
  4. Place chops in a slow cooker and pour sauce over the chops.
  5. Cover and simmer until tender.
  6. Approx 6 hours.

Ingredients
  • 2 pork tenderloin fillets
  • 2 tsp. ground pepper
  • ¼ C. soy sauce
  • 1 tsp. Dijon mustard
  • 1 clove garlic, minced
  • 2 tsp. ginger, chopped
Instructions
  1. Mix the soy sauce, mustard, garlic and ginger.
  2. Coat the fillets with the mixture and refrigerate in the marinade overnight.
  3. Pat dry each fillet and cover with coarse ground pepper.
  4. Cook in hot grill for about 15 minutes per side or until done.

Ingredients
  • ⅓ C. flour
  • 1 tsp. salt
  • ½ tsp. pepper
  • 2 lbs pork, cubed
  • ¼ C. vegetable oil
  • 6 cans chopped green chilies
  • ½ C. salsa
  • 12 flour tortillas
  • Cheddar cheese, shredded
Instructions
  1. In a large bag, combine the flour, salt and pepper.
  2. Add the cubed pork and shake the bag to coat all of the pieces.
  3. In a large skillet, cook all of the pork in oil until no longer pink.
  4. Add the chilies and salsa to the skillet and bring to a boil.
  5. Reduce heat and allow to simmer for 30 minutes or until meat is tender.
  6. Spoon meat and chilies mixture onto tortillas and top with cheese.
  7. Roll up tortillas and serve.

 

BBQ Pork

Ingredients
  • 3-4 lb bone in pork shoulder
  • 1 onion, diced
  • ½ C. vinegar
  • ¼ C. brown sugar
  • ¼ C. catsup
  • 2 tbsp. margarine
  • ½ tbsp. lemon juice
  • ½ tbsp. dry mustard
  • 1 bay leaf
  • ¼ tsp garlic
  • Dash of pepper sauce
Instructions
  1. Cook the meat in a crock pot until done. Cool completely.
  2. Remove the fat from the meat and pull the meat from the bone in big chunks.
  3. Chop the meat or shred into smaller pieces.
  4. Mix the remaining ingredients in a large sauce pan and bring to a boil.
  5. Reduce the heat and simmer for 30 minutes. Do not cover!
  6. Discard the bay leaf, stir in meat and heat throughout.
  7. Serve on toasted buns.
  8. Serves 9

  • 1 C. minute rice
  • 1 can cream of celery soup
  • ¾ C. water
Instructions
  1. Sprinkle minute rice on the bottom of a casserole dish.
  2. Top with meat and season with salt and pepper to taste.
  3. Mix soup and water together and pour over the top of the meat.
  4. Cover with foil and bake at 350 for 1 hour 45 minutes.

Ingredients
  • 4 boneless pork chops (about ¾-inch thick)
  • ¾ cup Italian salad dressing
  • 1 tsp. Worcestershire sauce
Instructions
  1. Place all ingredients in a Ziploc bag. Seal bag and place in refrigerator for at least 20 minutes.
  2. Remove chops from bag, discarding marinade, and grill over a medium hot fire, turning once, until just done, about 8 to 11 minutes total cooking time.

  • 4-6 boneless pork loin chops
  • 1 can cream of mushroom soup
  • 1 soup can water
  • 1 pkg. onion soup mix
Instructions
  1. Preheat oven to 350°F.
  2. Place chops in casserole dish. In bowl, combine soups with water and pour mixture over meat.
  3. Cover with foil and bake for 30-45 minutes.

  • ¼ c. lemon juice
  • ¼ c. honey
  • 2 tbsp. soy sauce
  • 2 cloves minced garlic
  • 4-6 Center cut pork chops
Instructions
  1. Combine above ingredients and pour over chops in a plastic bag.
  2. Refrigerate 6 to 24 hours, the longer the better.
  3. Grill chops about 15 minutes, turning once, basting with marinade.

  • Potatoes
  • Carrots
  • Onions
  • Salt and pepper to taste
Instructions
  1. Make a layer of potatoes, carrots and onions in the bottom of a casserole dish and cover with half of the soup.
  2. Make a second layer of potatoes, carrots and onions and cover with remaining soup.
  3. Place browned pork chops on top and cove the dish with aluminum foil.
  4. Bake at 250 for 2 hours removing foil for the last 10 minutes.

  • 5 lb. boneless pork butt shoulder
  • 1½ tsp. smoked paprika
  • 2 tsp. black pepper
  • 1 tsp. cayenne pepper
  • 1 tsp. dried thyme
  • ½ tsp salt
  • 1 tsp. garlic powder
  • water
Instructions
  1. Combine all seasoning in a bowl and rub into the pork. Place seasoned pork shoulder in a slow cooker and add enough water to cover the meat. Cook on high for 5-8 hours or until pork is done and tender.
  2. When done, pull apart the pork and serve on fresh buns with BBQ sauce.

Ingredients
  • 2 cups cooked corn cut from cob, or
  • 1 can of corn.
  • 1 cup salt pork cubes.
  • 1 cup potatoes cut in cubes.
  • ½ onion sliced.
  • 3 cups water.
  • 2 cups scalded milk.
  • 1 tablespoon butter.
  • 1 tablespoon flour.
  • ⅔ cup cracker crumbs.
  • Salt, Pepper.
Instructions
  1. Cut salt pork in one-fourth inch cubes and try out in a frying pan; add onion, and cook until yellow.
  2. Pare and cut potatoes in one-half inch cubes, parboil five minutes.
  3. Add to onion, with corn and water; cover and cook twenty minutes or until potatoes are soft.
  4. Melt butter in a sauce-pan, add flour, stir to a smooth paste, pour some of the milk on slowly, stirring constantly.
  5. Combine mixtures; add crumbs and seasonings.
  6. Serve for dinner in cups or in small "nappies."
