Ingredients
  • 1 c. water
  • ½ c. butter
  • pinch of Salt
  • 1 c. flour
  • 4 eggs
  • 2 small packages of vanilla pudding
  • 3 c. of milk
  • 8 oz. whipped cream.
Instructions
  1. Bring water, butter and salt to a boil. Beat in one cup flour and remove from heat. Should have the consistency of mashed potatoes. Beat in eggs.
  2. Drop by teaspoon on greased cookie sheet approximately 1 inch apart.
  3. Bake at 400 degrees for 15 minutes. Turn down oven to 350 degrees and bake an additional 15 minutes.
  4. Filling: In a separate bowl, mix pudding and milk. Fold in 8 ounces of whipped cream. Fill shells and frost with chocolate icing.

Ingredients
  • 2 Tb. butter
  • ⅓ c. vinegar
  • 3 Tb. flour
  • 1 c. sour cream
  • 2 Tb. sugar
  • 2 eggs
  • 1 tsp. salt
  • 1 c. whipped cream
Instructions
  1. Melt the butter in the upper part of a double boiler, add the flour, sugar, salt, vinegar, and sour cream.
  2. Cook together over medium heat until the mixture thickens. Beat the egg yolks and add them to the mixture.
  3. Place in the lower part of the double boiler and cook until the egg yolks thicken.
  4. Beat the egg whites and fold them with the whipped cream into the salad dressing.
  5. Cool and serve.

 

Chocolate Strawberry Heart

Ingredients
  • Cake:
  • 1 cup granulated sugar
  • ¾ cup flour
  • ½ cup unsweetened cocoa
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 large egg
  • ½ sup strong cold coffee
  • ½ cup buttermilk
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • Filling:
  • 2 pints fresh strawberries
  • 1 cup whip cream
  • 1 tbsp water
  • 6 oz white chocolate chips
Instructions
  1. Preheat oven to 350 .
  2. Butter the heart flan pan.
  3. Sift the dry ingredients into a mixing bowl.
  4. Combine the liquid ingredients and add the dry ingredients.
  5. Beat at medium speed for two minutes.
  6. pour into prepared pan.
  7. Bake for 35-45 minutes or until a tester inserted into the center of the cake comes out clean.
  8. Let cool in the pan for 8-10 minutes, and then invert onto a rack to cool completely.
  9. Filling: Reserve ⅔ of the best berries.
  10. Cut the remaining berries into ¼ cubes, and sprinkle sugar to taste.
  11. Soak until juice forms.
  12. Heat the chocolate pieces and water together, whisking constantly until melted and smooth.
  13. Set aside to cool.
  14. Whip the cream until firm peaks from.
  15. Fold into the cooled white chocolate.
  16. Spread the soaked berries and all the accumulated juice on the cake.
  17. Cover with the chocolate whipped cream.
  18. Decorate with the remaining berries.
  19. Chill

 

Fresh Fruit Flan

Ingredients
  • Cake:
  • 5 tbsp milk
  • 4 large eggs
  • 1 tbsp vanilla
  • 2¼ cups cake flour, sifted
  • 1 tsp baking powder
  • 1¼ cup granulated sugar
  • zest of 2 lemons
  • 9 tbsp unsalted butter, softened.
  • Syrup:
  • ⅓ cup granulated sugar
  • ⅓ cup fruit juice
  • (in a small pan over medium heat, stir the sugar and juice until sugar is dissolved)
Instructions
  1. Preheat oven to 350
  2. whisk together milk, eggs, and vanilla.
  3. Set aside.
  4. Combine the dry ingredients(including sugar) and the lemon zest, and mix on low speed for 30 seconds.
  5. Add the butter and ½ of the milk mixture, and blend until dry ingredients are moistened.
  6. Beat on medium speed fro 1 minute.
  7. Add the remaining milk mixture, and beat for 30 seconds.
  8. Spoon batter into prepared pan.
  9. Bake until a tester inserted into the center comes out clean, about 35-40 minutes.
  10. As soon as the flan comes out of the oven, poke the cake all over with a toothpick.
  11. Brush with ½ of the prepared syrup.
  12. Cool in the pan for about 10 minutes, then invert to an oiled cooking rack.
  13. Brush the sides and top with remaining syrup.
  14. To serve, fill flan with desired filling (whipped cream and fresh fruit slices; lemon curd and fresh raspberries, glazed fresh fruit)

Ingredients
  • 1 unbaked pie crust
  • 1 lb sweet potatoes, cooked and peeled
  • ¼ cup butter
  • 2 eggs
  • 14 oz. sweetened condensed milk
  • 1 tsp. vanilla
  • 1 tsp. grated orange rind
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • ¼ tsp. salt
Instructions
  1. Preheat oven to 350 degrees F.
  2. In bowl, beat sweet potatoes and butter together until smooth and lump free.
  3. Add milk, orange rind, vanilla, cinnamon, nutmeg, salt and eggs and mix together well.
  4. Pour into pie shell and bake 30 minutes or until golden brown cool.
  5. And top with whipped cream.

 

Pistachio Cheesecake

Ingredients
  • 18 Oreo cookies crushed
  • ¼ cup cold butter
  • 6 8 oz pkg cream cheese softened
  • 1 can sweetened condensed milk
  • 2 sm pkg instant pistachio pudding mix
  • 5 eggs
Instructions
  1. In a small bowl cut Oreos into butter until crumbly.
  2. Press onto the the bottom and 1-1/4 up the sides of the greased 10 inch springform pan.
  3. Bake at 400 for 10 minutes.
  4. In a large mixing bowl, beat cream cheese, milk and pudding mixes until smooth.
  5. Add eggs and beat on low speed just until combined.
  6. Pour over crust.
  7. Place pan on a baking sheet.
  8. Reduce heat to 350. Bake 55-60 minutes or until center is almost set.
  9. Cool on a wire rack for 10 minutes.
  10. Carefully run a knife around edge of pan to loosen.
  11. Cool 1 hour longer.
  12. Refrigerate overnight.
  13. Garnish with whipped cream and pistachios.

Ingredients
  • 1¼ C. eggnog
  • 1 tbsp. gelatin
  • 1 tbsp. water
  • 3 egg yolks, beaten
  • 1 c. whipping cream
  • 1 tsp. vanilla
  • 1 pie shell
  • Nutmeg to taste
Instructions
  1. Heat eggnog.
  2. Dissolve gelatin in water and add to eggnog.
  3. Remove from heat and add beaten egg yolks.
  4. Cool. Whip cream until fluffy and add vanilla.
  5. Fold whipped cream into eggnog mixture.
  6. Pour mixture into pie shell and sprinkle with nutmeg.
  7. Refrigerate and serve the next day.

Ingredients
  • 2 tbsp. butter
  • 3 tbsp. flour
  • ¾ c. milk
  • ½ c. semi-sweet chocolate chips
  • 4 egg yolks, beaten
  • 4 egg whites
  • ½ tsp. vanilla
  • ¼ c. sugar
Instructions
  1. Butter the sides of a 2-quart souffle dish. Sprinkle sides with a little sugar and set aside.
  2. In a small saucepan, melt butter.
  3. Stir in flour and milk.
  4. Cook and stir until thickened and bubbly.
  5. Add chocolate, stir until the chocolate is melted and remove from heat. Gradually stir chocolate mixture into beaten egg yolks, set aside. Do this slowly to prevent the eggs from beginning to cook.
  6. Beat egg whites and vanilla until stiff and gradually add in the remaining sugar.
  7. Gently fold the egg mixture into the chocolate mixture.
  8. Transfer to prepared dish.
  9. Bake in a 350 degree oven 35-40 minutes or until a knife inserted near center comes out clean.
  10. Serve at once with whipped cream.

 

Mom’s Jello Salad

  • 2 large packages of strawberry jello
  • 1 pt. heavy whipping cream
  • Frozen berries to taste
Instructions
  1. Mix jello and let set hard.
  2. Beat real cream separately.
  3. Beat jello with a beater.
  4. Add thawed berries
  5. Fold in whipped cream.

  • 1 C. flour
  • 1½ C. milk
  • 2 eggs
  • 2 tbsp. sugar
  • 1 tbsp. oil
  • 2 tsp. lemon peel
  • ⅛ tsp. salt

  1. Combine all ingredients and mix with an electric mixer until smooth.
  2. Cook in a well greased or buttered skillet flipping only once.
  3. Fill with vanilla pudding and top with a spoonful of whipped cream and berries.

Ingredients
  • 2 large eggs
  • 1½ cups sugar
  • ½ teaspoon salt
  • 2 quarts milk
  • 2 tablespoons vanilla extract
  • 2 cups heavy whipping cream
  • ground nutmeg
Instructions
  1. In heavy 4-quart saucepan, with wire whisk, beat eggs, sugar, and salt until blended.
  2. Gradually stir in 1 quart milk and cook over low heat, stirring constantly, until mixture thickens and coats the back of a spoon well, about 25 minutes (mixture should be about 170 F to 175 F. but do not boil or it will curdle).
  3. Pour custard into large bowl; stir in vanilla extract, 1 teaspoon ground nutmeg, and remaining milk.
  4. Cover and refrigerate until well chilled, about 3 hours.
  5. To serve, in small bowl, with mixer at medium speed, beat heavy or whipping cream until soft peaks form. with wire whisk, gently fold whipped cream into custard mixture.

  • 1 (3 oz.) pkg. cherry Jello
  • 1 c. hot water
  • 1 (21 oz.) can cherry pie filling
  • 1 (3 oz.) pkg. lemon Jello
  • 1 c. hot water
  • 3 oz. cream cheese
  • 2 tbsp. salad dressing
  • 1 c. un-drained crushed pineapple
  • 1 c. tiny marshmallows
  • 1 c. whipped cream
Instructions
  1. Dissolve 3 ounce package cherry Jello in 1 cup boiling water.
  2. Add pie filling.
  3. Chill in 4 to 6 cup ring mold or Bundt pan.
  4. Dissolve lemon Jello in hot water.
  5. Cool.
  6. Beat cream cheese and salad dressing.
  7. Stir in pineapple.
  8. Add marshmallows.
  9. Fold in whipped cream.
  10. Pour over 1st layer.
  11. Chill overnight.

 

Dutch Apple Cake

Ingredients
  • Dutch Apple Cake
  • 2 C. sifted flour
  • 3 tsp. Baking powder
  • 2 tbsp. sugar
  • tsp. salt
  • 1 egg well beaten
  • C. milk
  • 3 tbsp. Shortening
  • 1 tsp. cinnamon
  • 1 tbsp. milk
  • 2 C. apples, sliced
Instructions
  1. Sift flour with baking powder, sugar, and salt. Cut in ¼ C. shortening until mix is as fine as corn meal.
  2. Combine beaten egg and milk and add to flour mixture, mixing until soft dough is formed.
  3. Melt 3 tbsp. shortening and butter together add brown sugar, cinnamon, and milk, and mix well.
  4. Pour into 8x8 pan greased with shortening.
  5. Press apple slices into mix in circles. Spread dough over apples.
  6. Bake in 350 degrees oven for 50 to 60 min. serve upside down with whipped cream. Yield is 8 to 10 servings.

  1. Combine all ingredients and cook on medium heat until mixture has reached the consistency of pudding.
  2. Cool completely and fold in 1 pint of whipped cream.
