Ingredients
  • 1 brownie mix
  • 3 eggs
  • ¼ c. oil
  • 4 oz. cream cheese
  • ¼ c. sour cream
  • 1 tbsp. water
Instructions
  1. Soften cream cheese in the microwave for a few seconds.
  2. Add remaining ingredients and stir until smooth and lump free.
  3. Pour into greased 9 x 13 inch pan.
  4. Bake at 350 degrees for 45-55 minutes. Top with powdered sugar.

Ingredients
  • ½ c. mashed potatoes
  • powered sugar
  • peanut butter
Instructions
  1. Place mashed potatoes in a bowl and add powdered sugar until mixture is thick enough to roll out on a flat surface.
  2. Roll out dough and cover with a thin layer of peanut butter.
  3. Roll like a jelly roll and cut into small pieces.

 

Eggnog Bread

Ingredients
  • 3 c. flour
  • ½ c. sugar
  • 4 tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. ground nutmeg
  • 1 egg, beaten
  • 1¾ c. dairy eggnog
  • ½ c. vegetable oil
  • ½ c. chopped pecans
  • ½ c. raisins
  • ½ c. powdered sugar
  • 2 to 3 tsp. eggnog
Instructions
  1. In a large mixing bowl, stir together all of the dry ingredients.
  2. In a second bowl, mix the egg, eggnog and oil and slowly mix in the dry ingredients.
  3. Mix in the nuts and raisins last.
  4. Pour mixture into a large greased loaf pan.
  5. Bake in a 350°F oven for 60 to 65 minutes.
  6. Allow bread to cool in pan for 10 minutes after removing from the oven.
  7. Remove bread from pan and allow to cool on a wire rack.
  8. To glaze, stir together powdered sugar and enough eggnog to make glaze and pour over the bread.

  • 1 c. butter, softened
  • 6 oz. cream cheese
  • 2 c. sifted flour
Instructions
  1. Blend ingredients well.
  2. Chill. Roll small balls and place in small muffin tins.
  3. Bake at 350 degrees until golden brown.

Ingredients
  • 8 oz. cream cheese, room temperature
  • 1 can sweetened condensed milk
  • 5 tbsp. lemon juice
  • 1 tsp. vanilla
  • 12 individual tart shells
  • 1 can cherry pie filling
Instructions
  1. Beat cream cheese to soften.
  2. Blend in milk, lemon juice and vanilla.
  3. Spoon mixture into tarts.
  4. Chill 2 hours.
  5. Top with pie filling.

 

Cinnamon chip/oatmeal cookies

Ingredients
  • 1 ½ c flour
  • ⅓ c sugar
  • 1 ½-2 c oatmeal
  • ½ c packed brown sugar
  • 1 ½ tsp baking soda
  • 2 eggs
  • 1 bag Hershey cinnamon chips
  • 1 ½ tsp vanilla
  • 1 c butter softened (or margarine)
Instructions
  1. Preheat oven 350 degrees
  2. In a bowl cream the butter, brown sugar, and sugar til smooth. Add eggs and vanilla, mix well.
  3. In another bowl mix flour and baking soda, cinnamon chips and oatmeal. Add the butter mixture and mix well. Batter will be stiff.
  4. If making bars, lightly spray a 13 x 9 baking pan and spread mixture evenly and bake for about 25-30 minutes or until golden brown.
  5. If making cookies, drop a spoonful on cookie sheets and bake 10-12 minutes. Cool on pan for 1-2 minutes then remove to a cooling rack.

 

Molasses Cookies

Ingredients
  • 1 c. sugar
  • 1 c. shortening
  • 1 c. molasses
  • 1 c. hot water
  • 1 egg
  • 4½ c. flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • pinch of cloves
Instructions
  1. Stir baking soda into hot water until dissolved and add molasses.
  2. Cream shortening with sugar and beat in egg. Combine both wet mixtures together.
  3. In a separate bowl, stir together flour, salt and spices.
  4. Slowly add the flour mixture to the molasses mixture and mix until combined. Chill for 1 hour before rolling.
  5. Roll out and cut into desired shape with a cookie cutter.
  6. Transfer to greased cookie sheets and bake at 350°F oven for 10-15 minutes.
  7. Cool on wire racks.

  • 1 c. sugar
  • ½ tsp. salt
  • 1 c. butter
  • 3 oz. cream cheese
  • ½ tsp. almond extract
  • ½ tsp. vanilla extract
  • 1 egg yolk
  • 2¼ c. flour
Instructions
  1. Combine and blend all ingredients except flour and then slowly mix in the flour.
  2. Chill for a couple of hours. Roll out dough to desired thickness and cut into shapes.
  3. Place on un-greased cookie sheet.
  4. Bake at 375 degrees for 7 to 10 minutes or until the edges begin to brown.

 

Dutch Almond Cookies

Ingredients
  • 1 c. butter
  • 1 egg, separated
  • 2 c. flour
  • ½ tsp. cinnamon
  • 1 c. brown sugar
  • ½ tsp. vanilla
  • 1 tsp. almond extract
  • ¼ c. white sugar
  • ½ c. almonds, slivered
Instructions
  1. Mix together the butter, brown sugar, egg whites, vanilla and flour.
  2. Spread into 10x15 inch pan.
  3. Spread egg yolk on top and sprinkle with cinnamon and sugar.
  4. Sprinkle almonds on top.
  5. Bake at 350 degrees for 15 minutes.
  6. Cut into squares.

 

Blueberry Bundt Cake

Ingredients
  • 1 pkg yellow cake mix
  • 3 eggs
  • ½ C. applesauce
  • 1 8 oz pkg lemon yogurt
  • 3 C. blueberries
  • ¼ cup chopped nuts (optional)
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • whipped topping, optional
Instructions
  1. Combine all ingredients except the blueberries.
  2. Pour half of the batter into a greased Bundt pan, place a layer of blueberries and top with remaining batter.
  3. Bake at 350°F degrees for about 1 hour.
  4. Cool in pan for 15 minutes before turning out onto a rack to cool completely.

Ingredients
  • 16 oz. softened cream cheese
  • ¾ C. confectioners sugar
  • 2 tbsp. Flour
  • ¼ tsp. salt
  • 2 tbsp. lemon juice
  • 1 tsp grated lemon or orange rind
  • 1 C. heavy whipping cream
  • 4 eggs
Instructions
  1. In a large bowl, beat cream cheese until light and fluffy. Add remaining ingredients, dry first, and beat on medium speed until completely mixed.
  2. To prepare the crust:
  3. /4 C. graham cracker crumbs
  4. /4 C. sugar
  5. tbsp. melted butter
  6. Mix the crumbs and sugar together and gradually add the melted butter. Press mixture into the sides and bottom of a 9 inch pie pan.
  7. Once the crust is prepared, pour the cheesecake mixture in the pie pan and bake at 325 for 75 minutes. Allow to cool in the refrigerator before serving. Top with your favorite topping and serve.

  • 1 c. soft shortening
  • 2 c. brown sugar
  • 2 eggs
  • ½ c. sour milk (1/2 tsp. vinegar and ½ c. milk)
  • 2 tsp. vanilla
  • 1½ tsp. salt
  • 1½ tsp. soda
  • 1 tsp. cinnamon
  • 4 c. flour
  • 12 oz. chocolate chips

  1. Cream shortening, sugar and eggs together and mix in remaining ingredients in order listed.
  2. Mix well and place in balls on an un-greased cookie sheet.
  3. Bake at 375 for 8-10 minutes.

  • 2 Tb. butter
  • 2 c. water
  • 1 lb. raisins
  • 3-1/2 c. flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1 tsp. mace
  • 1 tsp. nutmeg
  • ½ tsp. cloves
  • 1 tsp. soda

Pumpkin Pie

Ingredients
  • ⅛ tsp. salt
  • ⅔ c. sugar
  • 2 tsp. pumpkin pie spice (or ½ tsp. cinnamon and ½ tsp nutmeg)
  • 2 eggs, beaten
  • 1⅔ c. milk
  • 1½ c. pumpkin, cooked and mashed
Instructions
  1. Sift dry ingredients together first and slowly mix in all wet ingredients. After preparing the pie crust, pour in the pumpkin mixture. Bake at 450 degrees for 10 minutes then reduce the temperature to 325 degrees and bake for an additional 35 minutes or until when a knife inserted in the center of the pie comes out clean. Cool and serve.

  4. ¼ c. shortening
  5. ½ tsp. salt
  6. ½ tbsp. water
  7. Cut shortening and salt into flour. Add cold water and mix. Roll out crust on a floured board and place it into a 9 inch pie pan.

Oatmeal Cookies

  • ¾ C. vegetable shortening
  • 1 C. brown sugar
  • ½ C. sugar
  • 1 egg
  • ¼ C. water
  • 1 tsp. vanilla
  • 3 C. oats, uncooked
  • 1 C. all purpose flour
  • 1 tsp. salt
  • ½ tsp. baking soda
Instructions
  1. Preheat the oven to 350 degrees. Beat together all of the wet ingredients and slowly add the dry ingredients. Mix until combined. Drop by rounded teaspoons onto a greased cookie sheet.
  2. Bake at 350 for 12-15 minutes.
