Ingredients
  • 6 qt. popped corn
  • 1 C. sugar
  • 1C. white corn syrup
  • 1 pkg. gelatin any flavor
Instructions
  1. Combine syrup and sugar and gelatin while stirring.
  2. Bring mixture to a boil and pour over popped corn.
  3. Shape into balls.

Ingredients
  • ¾ C. shortening
  • 1 C. brown sugar
  • ½ C. granulated sugar
  • 1 egg
  • ¼ C. water
  • 1 C. raisins
  • 1 tsp. vanilla
  • 1 C. sifted flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 3 cups oats
Instructions
  1. Place shortening, sugar, eggs, and vanilla in small mixing bowl, beat thoroughly.
  2. Sift together flour, salt, and soda, add to shortening.
  3. Mix in oats last.
  4. Drop by tsp. on greased baking sheet and bake at 350 degrees for 12-15 minutes.
  5. Yield is about 15 dozen.

 

Macaroon Cookies

Ingredients
  • 4 lg. egg whites
  • 1½ tsp. vanilla
  • ⅔ c. sugar
  • ¼ c. all purpose flour
  • 3½ c. lightly packed sweetened coconut
Instructions
  1. Beat egg whites with a mixer until frothy and add vanilla, sugar and flour until smooth.
  2. Stir in coconut until evenly moistened.
  3. Using a small ice cream scoop (about ¼ C.) place balls of dough on a lightly greased cookie sheet and bake at 325 degrees for 25 minutes.

Ingredients
  • 2 c. sliced and peeled tart apples
  • 2 c. frozen blueberries
  • 1 c. sugar
  • 2 tbsp. flour
  • 2 tbsp. butter
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • 2-3 tbsp. lemon juice
  • 9 inch pre-made pie shell
  • TOPPING:
  • 2 tbsp. flour
  • 2 tbsp. butter
  • 1 tbsp. sugar
Instructions
  1. Combine all ingredients and place in the pie shell.
  2. Mix topping ingredients together and sprinkle over the top.
  3. Bake at 350 degrees for 45 minutes.

 

Carmel Bundt Cake

Ingredients
  • 20 frozen dinner rolls
  • 1 small pkg. butterscotch pudding
  • ½ c. chopped pecans
  • ½ c. raisins
  • 6 tbsp. butter
  • ½ c. brown sugar
  • ¾ tsp. cinnamon
Instructions
  1. Lightly grease Bundt pan. Sprinkle nuts and raisins on bottom. Put in rolls and sprinkle with dry pudding mix. In a sauce pan, melt butter, brown sugar and cinnamon and pour over rolls and let rise for several hours. Bake at 350 degrees for 25 minutes.
  2. Immediately turn out the cake onto a clean serving dish.

Ingredients
  • 3 eggs
  • 1½ c. flour
  • 2 tbsp. vegetable oil
  • ⅛ tsp. salt
  • 1½ c. skim milk
Instructions
  1. In mixing bowl, combine all ingredients and beat by hand until smooth and lump free.
  2. If possible, refrigerate for at least 1 hour.
  3. Put 2-3 tablespoons of batter in the bottom of a non stick skillet and flip when bottom is browned.

 

Funnel Cake

Ingredients
  • 3-4 cups all purpose flour
  • 3 eggs
  • 2 cups milk
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • powdered sugar
  • vegetable oil (for deep frying - heat to 375°F)
Instructions
  1. Beat the eggs first and then add the sugar and milk. Sift 2 cups of flour, the salt, and the baking powder and add to the milk, sugar, and egg mixture. Add more flour until batter is smooth and not too thick.
  2. Pour the batter into a funnel or piping bag and use to pour the batter into the oil making a circle about 6 inches round. Be careful not to splash, the oil will be hot.
  3. Turn the cake when the bottom becomes golden brown.
  4. When both sides are done, remove and top with powdered sugar or cinnamon sugar.

 

Milk Chocolate Truffles

Ingredients
  • 9 oz. chocolate chips
  • 2 tbsp. unsalted butter
  • ⅓ c. heavy cream
  • 1 c. unsweetened cocoa
Instructions
  1. Melt chocolate chips and butter and mix together.
  2. Add cream and stir until smooth.
  3. Cover and refrigerate for about 5 hours.
  4. When mixture has set, scoop a teaspoon of mixture and roll into a ball and then roll in cocoa.

 

Honey Custard

Ingredients
  • ½ tsp. salt
  • ½ tsp. almond extract
  • 4 eggs
  • 2½ c. milk
  • ½ c. honey
Instructions
  1. Beat eggs slightly with fork; add honey, milk, salt and almond extract.
  2. Place 4-6 custard cups in a glass casserole dish and pour mixture into cups.
  3. Pour boiling water into casserole dish until it comes half way up the custard cups.
  4. Bake at 350 for 45 to 50 minutes or until center is firm.
  5. Remove from water and place in the refrigerator to cool.
  6. Once Chilled, un-mold and serve or serve in the cups.

 

English Toffee Pudding

Ingredients
  • 2 c. confectioners sugar
  • 2 tbsp. cocoa powder
  • 2 eggs, separated
  • 1¾ c. vanilla wafers, crushed
  • ¼ tsp. salt
  • ½ c. butter
  • 1 tsp. vanilla
  • 1 c. chopped nuts (Any type you prefer)
  • Whipped topping
Instructions
  1. Cream butter and mix in sugar, salt, cocoa,egg yolks, nuts and vanilla.
  2. Beat whites until stiff and fold into mixture. in an 8 x 8 pan, put ½ of the cookie crumbs in bottom and pour mixture over top.
  3. Sprinkle the second half of the crumbs on the top.
  4. Refrigerate for at least 24 hours before serving.
  5. Serve with whipped topping.

 

Baked Alaska

Ingredients
  • 1 layer of sponge cake (homemade or store bought)
  • 1 qt. ice cream
  • 4 egg whites
  • ½ c. sugar
  • 1 tsp. vanilla
Instructions
  1. Beat egg whites until stiff and then beat in sugar slowly.
  2. To the mixture, add vanilla and continue to beat until whites are stiff.
  3. On a cookie sheet, place the sponge cake and place ice cream on the top, leave about 1 inch of cake showing all around.
  4. Next, cover the ice cream with egg mixture (meringue).
  5. Place as close to the broiler as possible and broil until meringue begins to brown.
  6. Remove from the oven and do not let overcook or ice cream will melt.

  • 4 eggs yolks, beaten
  • 4 egg whites, beaten
  • 1 c. sugar
  • 2 tbsp. lemon juice
  • ¼ tsp. salt
  • 1 c. flour
Instructions
  1. Combine beaten egg yolks, sugar, lemon juice and salt.
  2. Beat together well and fold in the beaten egg whites fold in the flour to the mixture and mix until all is combined.
  3. Pour into ungreased pie pans and bake at 350 for approximately 35 minutes.

  • ¾ c. cold strong coffee
  • 4 c. flour

  • ½ tsp. ginger
  • ½ tsp. allspice
  • ½ tsp. nutmeg
Instructions
  1. Preheat oven to 350°F.
  2. Cream together sugar and eggs and then add oil and honey.
  3. Add remaining ingredients and mix well.
  4. Bake in a greased 9x13 pan at 350°F degrees for 1 hour.

 

Bananas Foster

Ingredients
  • 1 tbsp. butter
  • ¾ c. brown sugar, packed tight
  • ⅛ tsp. cinnamon
  • 4 oz. banana liqueur
  • 6 bananas, sliced lengthwise
  • 2 oz. rum
  • Vanilla ice cream
Instructions
  1. Melt the butter.
  2. Add sugar, cinnamon, and banana liqueur and mix all well.
  3. Cook for a few minutes to thicken.
  4. Add bananas and saute until soft and slightly browned.
  5. Add rum and heat well.
  6. Serve over ice cream.
