Buttercream Frosting

Ingredients
  • 1 C. Confectioners sugar (powdered sugar)
  • 1 egg white
  • 1 stick butter
  • ½ C. Shortening
  • Food Coloring is desired
  • For chocolate butter-cream you can also add cocoa powder.
Instructions
  1. Whip all items together until completely blended.
  2. Chill before serving.

 

Vanilla Cupcakes

Ingredients
  • ½ cup softened butter
  • 1 cup sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1½ cups all-purpose flour
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • ⅔ cup cold milk
Instructions
  1. Preheat oven to 350°F.
  2. Cream butter and sugar. Add eggs, milk and vanilla and mix until well blended. In a separate bowl, stir together all dry ingredients and add to the wet ingredients. Mix until completely combined.
  3. Pour mixture into muffin cups until ⅔ full and bake at 350 for 20-25 minutes.

 

Granola

Ingredients
  • 4 C. old-fashioned oats
  • 1½ C. almonds , sliced or whole
  • ½ C packed brown sugar
  • ½ tsp. salt
  • ½ tsp. ground cinnamon
  • ¼ C. vegetable oil
  • ¼ C. honey
  • 1 tsp. vanilla
  • 1½ C. raisins
Instructions
  1. In a bowl mix the oats, almonds, brown sugar, salt and cinnamon. In a saucepan warm the vegetable oil, vanilla and honey.
  2. Pour the liquid over the oats and stir gently with a wooden spoon until mixed. Spread granola on the bottom of a large casserole dish.
  3. Bake for 40 minutes at 300 degrees stirring every 10-15 minutes. cool completely before adding raisins.
Notes
Try adding dried cranberries instead of raisins.

Ingredients
  • 1½ C. All purpose flour
  • 1 C. sugar
  • ½ tsp. salt
  • 1 tsp. baking soda
  • 4 tbs. unsweetened cocoa powder
  • 1 C. cold water
  • ⅓ C. vegetable oil
  • 1 tbs. cider vinegar
  • 1 tsp. vanilla extract
Instructions
  1. Mix dry ingredients in one bowl and wet in another bowl and combine.
  2. Mix until completely mixed. Pour mixture in a 9x9 cake pan and bake at 350 for 45 minutes or until a toothpick inserted in the center comes out clean.
  3. Cook on a wire rack completely before frosting.

Cinnamon Bread

Ingredients
  • ¼ C. butter
  • 1/C. sugar
  • 2 eggs
  • 2 C. flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 C. sour milk
  • 2 tsp. vanilla extract
Instructions
  1. Preheat the oven to 350
  2. To sour the milk, add 1 tbsp. of vinegar to the milk and allow to stand for several minutes.
  3. Cream the butter and sugar together and add the eggs and vanilla next. Mix in the dry ingredients and add the sour milk last. Mix all ingredients well.
  4. In a separate bowl, mix 3 tbsp. of brown sugar and 1½ tbsp of cinnamon together.
  5. Pour ⅓ of the mixture into a loaf pan and sprinkle the cinnamon mixture on top, complete this process until all of the batter and cinnamon mixture has been used. Run a knife through the batter several times to mix the cinnamon and sugar into the batter and create swirls.
  6. Bake at 350 for one hour.
  7. You can also add raisins to the batter if desired.

 

Caramel Apple Pie

Ingredients
  • 4 C. Apples, Thinly sliced
  • 25 Individually wrapped caramel candies
  • 2 tbsp. water
  • 1- 9 inch pie crust
  • Crumb topping ingredients:
  • ¾ C. Flour
  • ½ C. Sugar
  • 1 tsp. cinnamon
  • 1 stick of butter, room temperature
Instructions
  1. Place sliced apples in the prepared pie crust. In a sauce pan, met the caramels and water until smooth. Pour the caramel over the apples.
  2. Combine all of the topping ingredients to form crumbs. Sprinkle the crumbs over the top of the pie.
  3. Bake at 350 for 1 hour. Allow to cool completely before serving. Goes great with a vanilla ice cream.
