Indian Bread

Ingredients
  • 2 C. flour
  • 2 tsp. baking soda
  • ¾ tsp. salt
  • 1 C. warm water
  • 1½ C. shortening for frying
Instructions
  1. Mix all ingredients together.
  2. Roll out 6 inches in diameter.
  3. Fry in the grease until golden brown on both sides.

Ingredients
  • 2 tbsp. yeast
  • 6 C. flour
  • 1 tbsp. sugar
  • 2 tsp. salt
  • ¼ tsp. baking soda
  • 2 C. milk
  • ½ C. water
  • Cornmeal
Instructions
  1. Combine yeast, 3 C. flour, sugar, salt and baking soda.
  2. Heat milk and water until warm.
  3. Add milk and water to dry ingredients and mix well.
  4. Add remaining flour to make a stiff batter.
  5. Spoon into two greased loaf pans that have been sprinkled with cornmeal.
  6. Cover and allow to rise for 45 minutes.
  7. Bake at 400 for 25 minutes or until done.

 

Zucchini Bread

Ingredients
  • 1 C. sugar
  • 1 C. brown sugar
  • 3 eggs
  • 1 C. oil
  • 2 C. grated zucchini
  • 3 tsp. vanilla
  • 3 C. flour
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda
  • ¼ tsp. baking powder
  • ½ C. nuts (optional)
Instructions
  1. Combine all of the wet ingredients and slowly add dry ingredients.
  2. Mix well and pour into greased and floured bread pan.
  3. Bake at 375 for 60-75 minutes.

 

Pumpkin Spice Bread

Ingredients
  • 3 C. sugar
  • 1 C. vegetable oil
  • 4 eggs, beaten
  • 16 oz. can solid pack pumpkin
  • 3½ C. flour
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • ½ tsp. ground cloves
  • ½ tsp. ground allspice
  • ½ C. water
Instructions
  1. In a large bowl, combine the sugar, oil and eggs. Add the pumpkin and mix well.
  2. In a separate bowl, mix all of the dry ingredients together and mix well.
  3. Combine the dry and wet ingredients together and add in the water. Mix well!
  4. Pour mixture into two greased loaf pans and bake at 350 for 60-70 minutes or until done.
  5. Cool completely before turning out.

 

Buffalo Chicken Fingers

Ingredients
  • 5 chicken tenders
  • 4 oz. Hot Sauce
  • 6 eggs
  • 1 qt. milk
  • 1 lb. bread crumbs
  • 1 tsp. paprika
  • ½ tsp. garlic powder
  • 2 tbsp. fresh parsley, minced
Instructions
  1. Wash 5 chicken tenders under cold water. Beat eggs and add milk. Continue beating until egg is thoroughly mixed with milk to make egg wash.
  2. Combine paprika with bread crumbs, parsley and garlic powder.
  3. Coat the chicken tenders in the egg wash and cover with bread crumbs until well coated.
  4. Pour the hot sauce into mixing bowl. Heat a deep fryer to approximately 360F and set the oven to 350F.
  5. After the tenders are fully cooked, dip into the hot sauce until fully coated. Place on baking pan and bake for 3 minutes.

 

Chili Cheese Dip

  • 8 oz. cream cheese
  • 1 can chili with no beans
  • 1 sm. yellow onion (1/2 c.)
  • 3 green chili peppers, chopped into rings
  • 1 c. shredded Cheddar cheese
  • Chips
Instructions
  1. Mash cream cheese into bottom of pie dish spreading evenly.
  2. Top with chili, then a layer of onions and chili peppers.
  3. Sprinkle with shredded cheese. Cover and refrigerate.
  4. When ready to serve, microwave on High for 5 minutes. Serve with tortilla chips.

Ingredients
  • 2-3 c. of bread
  • milk
  • 2 eggs
  • ¾ c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
Instructions
  1. Break up bread into crumbs and put in a large bowl.
  2. Add eggs, sugar, cinnamon and vanilla.
  3. Begin to mix in milk until you have a very thick cake-like batter.
  4. Spoon mixture into a well buttered 8 by 8 square pan and bake for about 30 minutes at 350°F degrees.
  5. When cool, cut into squares and serve.

 

Peanut Butter Balls

  • 1 ¼ C. powdered sugar
  • ½ c. peanut butter
  • 1 tbsp. cocoa
  • 1 tbsp. milk
  • 1 tbsp. vanilla
Instructions
  1. In a large bowl, combine 1 cup of the powdered sugar and cocoa.
  2. Stir in the peanut butter, milk, and vanilla.
  3. Form the mixture into balls.
  4. Roll each ball in ¼ cup powdered sugar.
  5. Place candy on plate and serve

Ingredients
  • 2 cans small biscuits
  • 1 c. orange juice
  • 1 c. sugar
  • ½ c. butter
Instructions
  1. Place two biscuits side by side in muffin pan.
  2. Bake according to directions on package.
  3. While the biscuits are baking, bring orange juice, sugar, and butter to a boil on the stove. Boil for about 10 minutes or until it starts to thicken slightly.
  4. As soon as the biscuits come out of the oven, pour about ⅛ cup of orange juice mixture over the biscuits and serve.

 

Greek Pasta Salad

Ingredients
  • 1 lb. pasta
  • ½ c. chopped red onion
  • 1 c. black olives, chopped
  • 1 c. (4 oz.) crumbled Feta cheese
  • ¼ c. finely chopped green pepper
  • 2 sm. tomatoes, chopped
  • ¾ c. vegetable oil
  • 6 tbsp. red wine vinegar
  • Salt & freshly ground pepper to taste
  • 2 tsp. Dijon mustard
Instructions
  1. Prepare pasta according to package directions; drain.
  2. Add onions, olives, cheese, green pepper and tomatoes to pasta. In bowl, whisk together remaining ingredients.
  3. Pour over pasta and toss.

  • ½ c. cashews
  • 1 can shoe string potatoes
  • 6 oz. chocolate chips
  • 6 oz. peanut butterscotch chips
  • 2 tbsp. peanut butter
Instructions
  1. Melt chips and peanut butter in microwave.
  2. Add potatoes and cashews.
  3. Drop by tbsp. onto greased cookie sheet.
  4. Store in refrigerator and serve cold.

 

Chicken Madeira

Ingredients
  • 4 pounded boneless chicken breasts, coated in mixture of flour, salt, pepper and a dash of paprika, oil and butter
  • ½ c. Madeira wine
  • ¾ c. chicken broth
  • 1 tsp. cornstarch
Instructions
  1. Fry chicken in oil and butter until done.
  2. Remove and keep warm.
  3. Drain grease from skillet; add Madeira and boil until reduced to about 2 tablespoons.
  4. Add broth to reduced wine and boil mixture, stirring occasionally.
  5. Stir in 1 teaspoon cornstarch and 1 teaspoon water and simmer sauce whisking for 1 minute.
  6. Spoon sauce over chicken and serve.

  • ½ c. brown sugar
  • ¼ c. white sugar
  • ½ tsp. vanilla
  • 1 egg
  • 1 c. flour
  • ½ tsp. baking soda
  • 1 sm. pkg. chocolate chips
  • ½ tsp. salt
  • ½ c. nuts
Instructions
  1. Mix all ingredients and bake at 325 degrees for 6 minutes.

 

Candied Orange Peel

Ingredients
  • 1-2 Oranges
  • Water
  • ½ C. sugar
  • Confectioners sugar
Instructions
  1. Cut orange skin in quarters, cover with cold water, bring to boiling point and cook until soft.
  2. Drain, remove white portion and cut the rest into thin strips.
  3. Boil ½ cup sugar until syrup threads when dropped from tip of spoon.
  4. Cook strips in syrup 5 minutes, drain and coat with powdered or granulated sugar.
