Peanut Butter Bon Bons

Ingredients
  • 2 c graham cracker crumbs
  • 4 c powdered sugar
  • 1 c flaked coconut
  • 1 c butter, softened
  • 1 t vanilla
  • 1 c creamy peanut butter
Instructions
  1. Mix graham cracker, powdered sugar and coconut together.
  2. Add butter, vanilla, and peanut butter until combined.
  3. Roll or press mixture into 1-inch balls.

 

Parmesan Chicken

Ingredients
  • ½ c butter melted
  • 2 t Dijon mustard
  • 1 t Worcestershire sauce
  • ½ t salt
  • 1 c dry bread crumbs
  • ½ c grated Parmesan cheese
  • 6 to 8 boneless skinless chicken breast halves
Instructions
  1. In a pie plate or shallow bowl, combine butter, mustard, Worcestershire sauce and salt.
  2. In a plastic bag, combine crumbs and cheese.
  3. Dip chicken in butter mixture, then shake in crumb mixture, a few pieces at a time.
  4. Place in an ungreased 9×13 baking pan.
  5. Drizzle with any remaining butter mixture.
  6. Bake at 350 for 40-45 minutes or until a meat thermometer reads 170.

 

Parmesan Baked Potato

Ingredients
  • 6 small potatoes, scrubbed and cut in half
  • ¼ c butter
  • grated Parmesan cheese
  • garlic powder
  • other seasonings(to personal preference)
Instructions
  1. Preheat oven to 400 degrees.
  2. Melt butter and pour into a 9×13 inch pan and spread evenly across the bottom.
  3. Generously sprinkle Parmesan cheese and lightly sprinkle other seasonings all over the butter.
  4. Place potato halves face down on the butter and seasonings.
  5. Place in preheated oven and bake for 40 to 45 minutes.
  6. Cool for 5 minutes before removing from pan.
  7. Serve on a plate with a side of sour cream for dipping.

 

Oreo Cookies

Ingredients
  • 1 devil food cake mix
  • 1 cube butter
  • 1 large egg
  • 8 oz cream cheese
  • 1 T canned milk
  • ½ C powdered sugar
Instructions
  1. Mix devil food cake, butter and egg well, and roll into small walnut size balls. Bake at 350 for 12-14 minutes.
  2. Mix cream cheese, milk, and powdered sugar together.
  3. After cookies cool, frost with the filling mixture.

 

Oreo Balls

Ingredients
  • 16 oz Oreo cookies crushed
  • 8 oz cream cheese softened
  • 24 oz white chocolate bark
  • 24 oz chocolate bark
Instructions
  1. Using a blender or hand held mixer, mix Oreos and cream cheese together.
  2. Roll into walnut size balls. Chill for an hour.
  3. Melt approximately ¾ package of white almond bark.
  4. Stick a toothpick in an Oreo ball and dip it in the melted white almond bark. Allow to harden on wax paper. Takes about 15 minute.
  5. While waiting, melt about ¼ package of chocolate almond bark.
  6. When Oreo balls are no longer sticky to the touch, decorate with drizzles of chocolate and white almond bark.
  7. I just use a sandwich bag with a tiny hole cut in one corner to drizzle the almond bark.

 

Orange Citrus Knots

Ingredients
  • 12 frozen dinner rolls, thawed but still cold
  • 1 medium orange rind, grated
  • ½ c sugar
  • ¼ c butter, melted
  • Citrus Glaze:
  • 1 c powdered sugar
  • 1 T butter, melted
  • 3 T orange juice
  • ½ t vanilla extract
Instructions
  1. Mix grated orange rind with sugar.
  2. Roll each roll into a 9-inch rope. Tie in a loose knot.
  3. Roll each knot in melted butter and then in rind/sugar mixture.
  4. Place on a large sprayed baking sheet.
  5. Cover with sprayed plastic wrap and let double in size.
  6. Remove wrap. Bake at 350 for 15-20 minutes.
  7. Remove from pan and place on cooling rack.
  8. Brush with citrus glaze while still warm.

  • ¾ c sugar
  • ¾ c brown sugar
  • 2 eggs
  • 1 c shortening
  • 1 t vanilla
  • 1 t each soda, salt, baking powder
  • 1 c oats
  • 2 c flour
  • 1 c chocolate chips
  • nuts(optional)
Instructions
  1. Drop by spoonful onto a baking sheet.
  2. Bake @ 350 for 10-12 min.

 

Nutella Brownies

Ingredients
  • ½ c flour
  • ¼ t salt
  • 2 egg
  • 1 c Nutella
  • ½ c brown sugar
  • 1 t vanilla extract
  • ½ c unsalted butter (melted)
Instructions
  1. Preheat the oven to 325.
  2. Line the bottom of a 8 inch square cake pan with parchment paper, letting the paper extend over two opposite sides. Butter the two other sides.
  3. Combine the flour and salt in a medium bowl and set aside.
  4. In another bowl, beat the eggs, hazelnut spread, brown sugar and vanilla extract with an electric mixer until smooth, about 2 minutes. With the mixer on low speed, add the flour mixture, alternating with the melted butter.
  5. Scrape the batter into the cake pan. Bake until a toothpick inserted in the center comes out with a few crumbs attached (not completely clean), 35 to 40 minutes.
  6. Cool in the pan for about 2 hours. Unmold and cut into squares.
  7. Serve warm or at room temperature.

 

Mini Cream Cheese Tarts

Ingredients
  • 12 oz vanilla wafers(24)
  • 2 8 oz cream cheese
  • ¾ cup white sugar
  • 2 eggs
  • 1 T lemon juice or 1 t vanilla
  • 21 oz cherry pie filling
Instructions
  1. Preheat oven to 350.
  2. Line muffin tin with paper liners and spray with Pam.
  3. Place 1 wafer in each liner.
  4. Cream together with an electric mixer the cream cheese, sugar, eggs and lemon or vanilla. Fill each muffin liner ½ full with this mixture.
  5. Bake at 350 for 15 minutes. Cool and then top with a teaspoonful of cherry (or any other flavor) pie filling.
  6. These can be frozen, without the topping, for later use.

 

Mexi Corn Casserole

Ingredients
  • 1 lb ground beef
  • 1 chopped onion
  • 1 can enchilada sauce
  • 1 sm can tomato sauce
  • 1 pkg frozen corn with peppers
  • 1 pkg flour or corn taco shells (12 ct)
  • 1 lb grated cheese
Instructions
  1. In a large skillet, fry hamburger and onion.
  2. Add both sauces and corn.
  3. Cook until done.
  4. Take a 13 × 9 casserole pan and line the bottom of the pan with the taco shells.
  5. Add a layer of your meat mixture and then a layer of cheese.
  6. Repeat until all ingredients are gone, ending with cheese.
  7. Bake at 350 for 30 minutes.
  8. I like to serve this with onion, jalapenos, and sour cream on top.

 

Mexi Chili Casserole

Ingredients
  • 1 small can of your favorite chili
  • 1 15 oz can red enchilada sauce
  • 1 8 oz can tomato sauce
  • 1 can corn(optional)
  • 2 c grated med cheese (reserve ½ c)
  • 1 small pkg of corn chips, crumbled
  • (reserve ½ c)
  • ½ pint sour cream
Instructions
  1. Combine chili, corn, both sauces, 1½ c cheese, and crumbled corn chips. Place in a 13 × 9 casserole dish and cover. Bake at 350 for ½ hour.
  2. Remove from oven and pour sour cream on top.
  3. Add cheese and top with the remaining corn chips.
  4. Return to oven, uncovered, and bake 15-20 more minutes.
  5. I like to serve chopped onion, sliced olives and jalapenos on top for those who like it hot.
  6. This is a great recipe to use your left over chili in.

 

Meatloaf

Ingredients
  • 2 lbs lean ground beef
  • 2 eggs
  • 1 minced onion
  • 1 package beefy mushroom or onion soup mix
  • ¼ c ketchup
  • 2-3 c cornflakes
Instructions
  1. Mix well, and place in a bread pan.
  2. Cover and bake at 375 for one hour.

 

Sweet Tea

Ingredients
  • 2 quarts water
  • 3 Lipton tea bags
  • 1 c sugar
Instructions
  1. In a large pot, bring water to a boil.
  2. Remove from heat and place the tea bags in the water for 1 hour.
  3. Remove tea bags and add sugar.
  4. Chill. Serve over ice.
