Gingerbread Cookies

Ingredients
- 1 C. butter, softened
- 1 C. light brown sugar
- ½ C. honey
- 3½ C. flour, sifted
- 2 tsp. ginger
- 1 tsp. cinnamon
- 1 tsp. baking soda
- Dash of salt
Instructions
- Combine all ingredients in a large bowl and mix with an electric mixer until all ingredients are well combined.
- Chill the dough in the refrigerator for a minimum of 1 hour.
- Preheat the oven to 350 F.
- Turn the dough out on a lightly floured cutting board.
- Roll out dough until ⅛ inch thick.
- Use a cookie cutter to cut into desired shapes.
- Place on a cookie sheet that has been lightly greased with butter.
- Bake doe 8-10 minutes.
