Ingredients
  • 1 c. butter
  • 1 c. crushed butter mints
  • 2 c. flour
Instructions
  1. Cream butter with mixer at medium speed until light and fluffy.
  2. Add crushed mints, mixing well.
  3. Add flour and blend well at low speed. Chill one hour.
  4. Roll in balls and flatten with glass.
  5. Bake at 325 degrees for 15 to 18 minutes.

 

Caramel Candy

Ingredients
  • ½ stick butter
  • 1 c. canned evaporated milk
  • 2 c. sugar
  • 16 large marshmallows
  • ¼ c. sugar, caramelized
  • 1 tsp. vanilla
  • 1½ c. chopped pecan
Instructions
  1. Melt butter around the sides and bottom of a heavy saucepan. Add milk and sugar. Stir with wooden spoon toward the center of the pan. Add marshmallows.
  2. Place ¼ cup sugar in small pan to caramelize.
  3. Transfer melted sugar into the larger pan, stirring constantly. Lower the heat, and cook until a candy thermometer reaches 238°F, stirring often; set aside to cool to 110°F.
  4. Stir in vanilla and pecans, continuing to stir until the candy will hold its shape. Drop by teaspoonfuls onto buttered wax paper.

 

Peanut Butter Balls

Ingredients
  • 1 ¼ C. powdered sugar
  • ½ c. peanut butter
  • 1 tbsp. cocoa
  • 1 tbsp. milk
  • 1 tbsp. vanilla
Instructions
  1. In a large bowl, combine 1 cup of the powdered sugar and cocoa.
  2. Stir in the peanut butter, milk, and vanilla.
  3. Form the mixture into balls.
  4. Roll each ball in ¼ cup powdered sugar.
  5. Place candy on plate and serve

Ingredients
  • ½ c. cashews
  • 1 can shoe string potatoes
  • 6 oz. chocolate chips
  • 6 oz. peanut butterscotch chips
  • 2 tbsp. peanut butter
Instructions
  1. Melt chips and peanut butter in microwave.
  2. Add potatoes and cashews.
  3. Drop by tbsp. onto greased cookie sheet.
  4. Store in refrigerator and serve cold.

 

Candied Orange Peel

Ingredients
  • 1-2 Oranges
  • Water
  • ½ C. sugar
  • Confectioners sugar
Instructions
  1. Cut orange skin in quarters, cover with cold water, bring to boiling point and cook until soft.
  2. Drain, remove white portion and cut the rest into thin strips.
  3. Boil ½ cup sugar until syrup threads when dropped from tip of spoon.
  4. Cook strips in syrup 5 minutes, drain and coat with powdered or granulated sugar.

 

Marshmallow Squares

Ingredients
  • 1 pkg. miniature marshmallows
  • 1 stick butter
  • 1 pkg. (6 oz.) chocolate chips
  • 1 c. powdered sugar
  • ½ tsp. vanilla
  • ½ c. chopped nuts
  • 1 pkg. shredded coconut
  • 1 egg
Instructions
  1. Melt butter and chocolate chips and remove from heat to cool.
  2. When cool, add the beaten egg, vanilla, powdered sugar, nuts and marshmallows.
  3. Mix all ingredients well.
  4. Grease a square cake pan and sprinkle half of the coconut on bottom of pan.
  5. Spread chocolate mixture on coconut and smooth with spatula.
  6. Add rest of coconut on top.
  7. Refrigerate and when firm cut in squares and serve.
Notes
Do not store leftovers in the fridge or they turn to mush!

Ingredients
  • 2 C. sugar
  • 2 egg whites
  • C. white corn syrup
  • C. water
Instructions
  1. Mix sugar, syrup, and water in a medium sized sauce pan.
  2. Cook on high heat, stirring frequently until candy thermometer reaches 250 degrees F.
  3. While syrup mixture cooks, beat egg whites until stiff peaks form.
  4. When syrup reaches 250F, pour slowly over egg whites beating constantly.
  5. Continue to beat the mixture until it holds its shape.
  6. Using a spoon, drop spoonfuls of the mixture onto waxed paper and allow to cool completely. You will need to work fast as this will begin to set up rather quickly.

 

Rock Candy

Ingredients
  • 4 C. sugar
  • 1 C. white corn syrup
  • 1 C. cold water
  • Oil Based Flavoring of your choice
Instructions
  1. Mix well and bring to a boil everything except the flavoring.
  2. Reduce heat to keep it boiling.
  3. Set candy thermometer in mixture and bring it to 300 degrees.
  4. Add two teaspoons flavoring and 2 drops of color.
  5. Mix well and pour onto cookie sheet that has been lined with foil and powdered lightly with powdered sugar.

 

Sponge Candy

Ingredients
  • 1 c. sugar
  • 1 c. Karo syrup, light
  • 4 tsp. sifted baking soda
  • 1 bag candy chocolate (the kind used in candy molds)
Instructions
  1. Heat sugar and syrup on medium heat to 300 degrees, using candy thermometer.
  2. Remove from heat.
  3. Briskly stir in sifted soda. Mixture will bubble up rapidly - continue to mix thoroughly.
  4. Pour into foil-lined 9 x 13 inch pan.
  5. Cool completely.
  6. Cut or break into pieces.
  7. Melt chocolate.
  8. Dip candy pieces into chocolate and cool on wax paper.

This candy is also known as Sea Foam Candy.

English Toffee

Ingredients
  • 2 ½ C. sugar
  • 1 C. water
  • 4 sticks of butter
  • C. light corn syrup
  • 2-3 C. of nuts (Any type you prefer)
Instructions
  1. Put half of the nuts on an unbuttered cookie sheet.
  2. Cook the first four ingredients over medium heat until golden brown in a large pan.
  3. Pour mixture over nuts on cookie sheet and sprinkle with remaining nuts.
  4. Let cool and break into pieces.

Ingredients
  • 9 oz. chocolate chips
  • 2 tbsp. unsalted butter
  • ⅓ c. heavy cream
  • 1 c. unsweetened cocoa
Instructions
  1. Melt chocolate chips and butter and mix together.
  2. Add cream and stir until smooth.
  3. Cover and refrigerate for about 5 hours.
  4. When mixture has set, scoop a teaspoon of mixture and roll into a ball and then roll in cocoa.

 

Potato Candy

Ingredients
  • ½ c. mashed potatoes
  • powered sugar
  • peanut butter
Instructions
  1. Place mashed potatoes in a bowl and add powdered sugar until mixture is thick enough to roll out on a flat surface.
  2. Roll out dough and cover with a thin layer of peanut butter.
  3. Roll like a jelly roll and cut into small pieces.
