Cream Cheese Pinwheels

Ingredients
  • 1 pkg. flour tortillas
  • 2 pkg. cream cheese
  • 1 c. pitted black olives, finely chopped
  • 2 tbsp. pimentos, finely chopped
  • 1 pkg. powdered ranch dressing
  • 2 tbsp. jalapenos, finely chopped
Instructions
  1. Soften cream cheese (microwave for approx. 20 seconds) and mix in the remaining ingredients.
  2. Spread evenly over the flour tortillas and roll them tight. Chill for at least one hour. Slice into pinwheels.

Ingredients
  • 7-8 lg. potatoes, baked and cooled
  • ½ lb. bacon, fried and crumbled
  • 1 small onion, minced
  • 2 tbsp. butter
  • ½ c. Cheddar cheese, grated
Instructions
  1. Cut potatoes in half lengthwise and scoop out potatoes.
  2. Brush inside of skin with butter and add bacon and onions.
  3. Top with plenty of cheese.
  4. Bake at 450 until crispy (about 15 minutes).

 

Macaroni Salad

Ingredients
  • 1 package elbow noodles
  • 3 small tomatoes, diced
  • 1 small onion, diced
  • ¼ c. sweet relish
  • 6 hard boiled eggs
  • ¾ cup mayonnaise
  • ¼ cup mustard
  • salt and pepper to taste
Instructions
  1. Boil noodles according to package directions, drain and cool.
  2. Mix remaining ingredients into the noodles and cool before serving.

 

Tuna Salad

  • 1 can tuna fish, drained
  • 1 c. carrots, grated
  • 1 c. celery, diced
  • ¼ c. onion, diced
  • 1 c. mayonnaise
Instructions
  1. Combine all ingredients and mix together.
  2. Add hard boiled eggs if desired.
  3. Cover and chill before serving.

  • 1 lg. cabbage, chopped
  • 1 green pepper, chopped
  • 1 lg. onion, chopped
  • 1 c. vinegar, heated
  • 1 c. sugar
  • 1 tsp. celery seed
  • 1 tsp. dry mustard
  • ¾ c. salad oil
  • Salt to taste
Instructions
  1. In a small saucepan, heat vinegar on low.
  2. Once the vinegar is warm, add in the dry ingredients.
  3. Combine cabbage, green pepper and onion in a bowl and pour the hot vinegar mixture over the top.
  4. Cover and refrigerate before serving.

 

Bruschetta

Ingredients
  • 5 medium tomatoes, diced
  • 3-4 cloves minced garlic
  • juice from ½ lime
  • ¼ c. extra virgin olive oil
  • 1 c. Parmesan cheese, grated
  • 1 tbs. fresh basil
  • salt and pepper to taste
Instructions
  1. In a large bowl, toss all ingredients together and allow to stand for several hours in the refrigerator.
  2. Spoon mixture onto toasted bread, and top with Parmesan cheese.
  3. Broil until cheese has melted.

 

Pineapple Dip

  • 8 oz. cream cheese, softened
  • 6 oz. crushed pineapple, drained
  • 1 sm. pkg. chipped ham
  • 2 tsp. sour cream
  • Black olives to taste
Instructions
  1. Mix all together and use as a dip for crackers.

 

Apple Cranberry Relish

Ingredients
  • 8 red firm apples,
  • juice of 1 lemon
  • 1 can whole cranberry sauce
  • ½ cup chopped candied ginger
  • 1 tablespoon grated fresh ginger root
  • ½ c. fresh cranberries
  • ¾ cup coarsely chopped walnuts
  • ½ c. orange juice
Instructions
  1. Grate the unpeeled apples and toss with the lemon juice.
  2. Mash up the cranberry sauce slightly and combine that with the grated apples and the remaining ingredients.
  3. Refrigerate and allow cool for several hours before serving.

 

Seven Layer Dip

Ingredients
  • 8 oz. sour cream
  • 1 c. cheddar cheese, grated
  • 1 c. Green onions, chopped
  • 1 can Black olives, chopped
  • 1-3 Tomatoes, chopped
  • 1 can re-fried beans
  • 8 oz. Guacamole
  • 1 pkg taco seasoning
  • Tortilla chips for dipping
Instructions
  1. Mix package of taco seasoning and sour cream together. Layer all ingredients in a casserole dish starting with re-fried beans on the bottom and ending with the grated cheddar cheese on the top.
Notes
For best results, chill for several hours before consuming.

 

Bacon Cheddar Dip

  • 8 0z. Softened cream cheese
  • 8 oz. sour cream
  • 4 green onions, thinly sliced
  • 1 green pepper, chopped
  • 4 tomatoes, chopped
  • 16 oz. taco sauce
  • 2 C. shredded cheddar cheese
  • 1 lb bacon, cooked well and crumbled
  • Tortilla Chips
Instructions
  1. In a large bowl, mix cheeses first and add remaining ingredients.
  2. Allow to chill in refrigerator until mixture is cold before serving with the tortilla chips.

 

Skillet Cornbread

Ingredients
  • 2 c. yellow cornmeal
  • 1 c. flour
  • 1½ tsp. salt
  • 1 tbsp baking powder
  • 2 eggs, beaten
  • 1½ c. milk
  • 2 tbsp. oil
Instructions
  1. In a bowl, combine the first 4 ingredients. In a separate bowl, beat together 1 cup of milk and the eggs and add to the dry ingredients. Add additional milk until you produce a thick batter.
  2. Heat oil in a skillet. Once oil is heated, pour oil into the batter and mix well. Return the empty skillet to the stove-top and sprinkle cornmeal into the bottom. This will ensure that the bottom is browned. Pour batter on top and bake at 425 for 14-20 minutes.

 

Granola

Ingredients
  • 4 C. old-fashioned oats
  • 1½ C. almonds , sliced or whole
  • ½ C packed brown sugar
  • ½ tsp. salt
  • ½ tsp. ground cinnamon
  • ¼ C. vegetable oil
  • ¼ C. honey
  • 1 tsp. vanilla
  • 1½ C. raisins
Instructions
  1. In a bowl mix the oats, almonds, brown sugar, salt and cinnamon. In a saucepan warm the vegetable oil, vanilla and honey.
  2. Pour the liquid over the oats and stir gently with a wooden spoon until mixed. Spread granola on the bottom of a large casserole dish.
  3. Bake for 40 minutes at 300 degrees stirring every 10-15 minutes. cool completely before adding raisins.
Notes
Try adding dried cranberries instead of raisins.
