Ingredients
  • 1 tbsp. salt
  • 1 tbsp. pepper
  • 1 tbsp. sugar
  • 2 tbsp. basil
  • ⅛ tbsp. minced garlic
  • 2 large chopped tomatoes
  • ½ c. extra virgin olive oil
Instructions
  1. Remove the juice and seeds from the tomatoes.
  2. Chop the tomatoes, set aside.
  3. Mix salt, pepper, sugar, basil, garlic, and extra virgin olive oil.
  4. Pour the mixture over the tomatoes.
  5. Toss tomatoes to make sure they are all coated, and let stand in the refrigerator for at least 1 hour before eating.

  • 1 c. flour
  • 1 tbsp. sugar
  • ½ tsp. salt
  • ½ tsp. baking soda
  • 1 egg
  • 1 c. buttermilk
  • 2 tbsp. melted butter
  • ½ tsp. vanilla
Instructions
  1. Mix all dry ingredients and blend in buttermilk, butter, and vanilla mixing all ingredients together well.
  2. Cook on lightly oiled griddle or fry pan.
  3. Turn pancakes when surface bubbles begin to break.

Ingredients
  • 2 cans pineapple chunks, drained
  • 2 cans mandarin oranges, drained
  • 2 jars maraschino, drained
  • 1 can coconut flakes
  • ½ bag mini marshmallows
  • 4 oz. sour cream
  • 16 oz. Cool Whip
Instructions
  1. Combine sour cream and Cool Whip.
  2. Mix in all other ingredients.
  3. Refrigerate for at least 2 hours before eating.

 

Spaghetti Carbonara

Ingredients
  • 1 lb. thin spaghetti
  • 2 tbsp. salt
  • ¼ lb. bacon, diced
  • 4 cloves garlic, minced
  • ¼ tsp. oregano
  • ½ tsp. basil
  • ¾ c. Parmesan cheese
  • 3 eggs, lightly beaten
  • ¼ c. dry white wine
  • ½ tsp. pepper
Instructions
  1. Cook spaghetti according to package directions in salted water.
  2. Meanwhile, saute bacon over low heat until crisp, adding garlic during the last few minutes.
  3. Add cheese and wine to beaten eggs.
  4. Drain spaghetti and return to pot; toss with egg mixture and remaining ingredients. Mix well.

 

Baked Ziti

Ingredients
  • 16 oz. ziti pasta
  • 1 lb. Italian sausage links
  • 2 medium carrots, cut into ½" slices
  • 2 medium celery stalks, cut into ½" slices
  • 1 medium onion, chopped
  • 1½ c. milk
  • 2 tbsp. flour
  • 28 oz. tomatoes, canned, crushed
  • 1 tsp. sugar
  • ½ tsp. dried basil
  • ¼ tsp. pepper
  • 16 oz. mozzarella cheese, shredded
Instructions
  1. In sauce pot, prepare ziti according to package directions. Drain ziti and return to sauce pot.
  2. Meanwhile, remove casings from Italian-sausage links. Cook sausage meat until well browned, stirring occasionally to break up sausage. With slotted spoon, remove sausage meat to bowl.
  3. Preheat oven to 375 F
  4. In drippings remaining in skillet, over medium-high heat, cook carrots, celery, and onion, stirring occasionally, until vegetables are golden and almost tender.
  5. In 2-cup measure or medium bowl, whisk milk and flour until smooth and stir into vegetable mixture in skillet. Add crushed tomatoes, sugar, dried basil, and pepper; over high heat, heat to boiling. Reserve 1 cup shredded mozzarella for topping. Mix pasta, vegetable mixture, sausage, and remaining mozzarella cheese. Spoon mixture into deep 3-quart casserole dish and sprinkle with reserved mozzarella cheese.
  6. Cover dish and bake 15 to 20 minutes until cheese melts and mixture is hot and bubbly.

Ingredients
  • 2 c. scalded milk
  • ½ c. butter
  • 1½ tsp. salt
  • ½ c. sugar
  • 1 pk. active dry yeast
  • ¼ c. warm water
  • 9 c. flour
  • 4 tbsp. melted butter
  • ¾ c. sugar
  • 1½ tsp. cinnamon
  • 12 tbsp. butter
  • 1⅓ c. brown sugar
Instructions
  1. Scald the milk by bringing nearly to a boil and removing immediately from heat.
  2. To the scalded milk add ½ cup butter, 1½ teaspoons salt and ½ cup granulated white sugar; stir until the butter has melted.
  3. Dissolve the yeast in ¼ cup warm water; set aside. When milk mixture has cooled to lukewarm, pour in the dissolved yeast and water mixture. Add enough flour (about 9 cups) to make soft dough.
  4. Knead dough on a lightly floured work surface until dough is no longer sticky.
  5. Transfer to a greased bowl, turning upside down once to grease the top. Cover with a damp cloth or plastic wrap and let rise in a warm place (80°F) several hours until it triples in bulk.
  6. Roll into a rectangle 12x24 inches. Brush with 4 tablespoons of melted butter. Mix Sugar and cinnamon and sprinkle on dough.
  7. Roll up like a jelly roll. Divide the roll into 4 equal portions and each portion should then be cut into 10 slices.
  8. Brush four 8-inch baking pans with oil or spray with non-stick spray. Into each of the pans, dot 3 tablespoons butter over the bottom and cover with ⅓ cup brown sugar.
  9. Place 10 rolls, cut side up into each pan. Cover pans again and allow to rise in a warm, draft-free place until almost doubled in size. The second rising usually takes longer than the first.
  10. Bake for 20 to 25 minutes in a preheated 375°F oven. Remove buns from pans and turn upside down to cool.

  • 2 c. green beans, drained
  • 1 c. condensed cream of mushroom soup
  • ¾ c. milk
  • ⅛ tsp. black pepper

  1. Combine all ingredients except ½ can of onions.
  2. Pour into 1½ quart casserole dish.
  3. Bake in a 350 degree oven for 30 minutes.
  4. Top with remaining onions during the last 5 minutes of cooking.

  • 3⅓ c. flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1½ tbsp. sugar
  • ¼ c. butter
  • 2 eggs
  • ½ c. milk
  • Salad oil for deep frying
Instructions
  1. Sift flour, with salt, baking powder, and sugar into a bowl. Add butter and rub into flour with your fingertips until mixture is like coarse meal. Beat eggs lightly with milk, then pour into flour mixture and stir until dough forms a solid mass. Turn dough out onto board, and knead lightly for 2 minutes or until smooth. Cut dough into balls the size of marbles and let stand 15 minutes.
  2. Roll each ball on a lightly floured board into a very thin pancake 4 inches in diameter. Cut a hole in center with a thimble. After rolling out the circles of dough, place them in a single layer on waxed paper until ready to cook.
  3. Fry in hot deep fat (375 degrees) until puffed and golden brown, about 30 seconds on each side.
  4. Mix 1 cup granulated sugar and 1 teaspoon cinnamon in a bowl. As bunuelos are still warm, shake in sugar mixture.

Ingredients
  • 2 c. flour
  • 3 tsp. baking powder
  • ½ tsp. salt
  • 1 tbsp. shortening
  • Oil for deep frying
Instructions
  1. Sift dry ingredients together in bowl.
  2. Cut in shortening until crumbly. Add ½ cup warm water gradually, stirring with fork.
  3. Dough will be crumbly.
  4. Turn onto lightly floured surface.
  5. Knead until smooth.
  6. Divide in half. Let stand for 10 minutes.
  7. Cut into 3" squares.
  8. Fry, several at a time, in deep fat at 400 degrees for 30 seconds on each side.

  • 3 c. self-rising flour, sifted
  • ½ c. butter, melted
  • ⅓ c. sugar
  • milk
  • 2 eggs
  • 1 tsp. baking powder
Instructions
  1. Preheat oven to 400°F degrees.
  2. Cut butter into the flour using your fingers until mixture resembles coarse crumbs. Stir in sugar, baking powder, and beaten eggs
  3. Add enough milk to form a sticky dough, turn out onto a lightly floured board and knead approximately 10 turns. Do not over-knead, as this will make the scones tough.
  4. Flatten to a circular shape, about 1½" in thickness and cut wedge shaped pieces. Arrange pieces 1 inch apart in a circle on a lightly greased pan. Brush tops with cream or beaten egg white and bake about 15 minutes or until golden.

Ingredients
  • 2 tbsp. butter flavored Crisco
  • 2 eggs
  • 2 c. cornmeal
  • 1 c. all purpose flour
  • 1 tsp. sugar
  • whole milk
  • ½ tsp. salt
  • ½ tsp. pepper
  • 1 10" cast iron skillet
Instructions
  1. Mix together cornmeal, flour, sugar, salt and pepper. Add milk until you have the consistency of a cake batter. Add eggs and mix well.
  2. In the skillet, melt shortening. Move the skillet around until well coated.
  3. Pour the remainder into the batter and mix. Pour the batter into the skillet.
  4. Bake at 375 for 40 minutes or until light brown.

 

Upside-Down Stuffed Mushroom Casserole

Ingredients
  • 16 oz. Fresh mushrooms, cleaned and stems removed
  • 1 small Onion, chopped
  • 1 stalk Celery, chopped
  • 1 stick Butter or Margarine
  • 1 lb. Italian Sausage
  • 1 box Stove Top Stuffing, prepared
  • ½ c. Shredded Parmesan Cheese Fresh Parsley (for garnish)
Instructions
  1. Preheat oven to 350°F. In a large frying pan, cook sausage until no longer pink.
  2. Drain and crumble.
  3. Melt butter in the empty pan.
  4. Sauté onion and celery until tender.
  5. Set aside enough mushroom caps to arrange over top of baking dish. Chop remaining caps and mushroom stems.
  6. Add chopped mushrooms to onion mix; cook for 1-2 minutes.
  7. In a large bowl, combine sausage, onion mixture, prepared stuffing and ¼ cup Parmesan cheese.
  8. Spoon into greased 9” x 13” baking dish.
  9. Arrange remaining mushroom caps ( tops up) over the stuffing.
  10. Sprinkle with remaining Parmesan and chopped parsley. Cover with foil and bake for 30-35 minutes. Serves 12.
