Upside-Down Stuffed Mushroom Casserole

Ingredients
- 16 oz. Fresh mushrooms, cleaned and stems removed
- 1 small Onion, chopped
- 1 stalk Celery, chopped
- 1 stick Butter or Margarine
- 1 lb. Italian Sausage
- 1 box Stove Top Stuffing, prepared
- ½ c. Shredded Parmesan Cheese Fresh Parsley (for garnish)
Instructions
- Preheat oven to 350°F. In a large frying pan, cook sausage until no longer pink.
- Drain and crumble.
- Melt butter in the empty pan.
- Sauté onion and celery until tender.
- Set aside enough mushroom caps to arrange over top of baking dish. Chop remaining caps and mushroom stems.
- Add chopped mushrooms to onion mix; cook for 1-2 minutes.
- In a large bowl, combine sausage, onion mixture, prepared stuffing and ¼ cup Parmesan cheese.
- Spoon into greased 9” x 13” baking dish.
- Arrange remaining mushroom caps ( tops up) over the stuffing.
- Sprinkle with remaining Parmesan and chopped parsley. Cover with foil and bake for 30-35 minutes. Serves 12.
