Ingredients
  • 1 lb. lean sausage
  • ½ c. bread crumbs
  • 1 egg, raw
  • 1 tbsp. barbecue sauce
  • 1 tbsp. flour
  • Salt & pepper to taste
  • 6 hard-boiled eggs
  • 1 egg, beaten (for coating)
  • Dry bread crumbs
  • Vegetable oil for frying
Instructions
  1. Mix sausage with the ½ cup bread crumbs, raw egg BBQ sauce and salt and pepper.
  2. Divide into 6 equal portions.
  3. Coat each of the hard boiled eggs with a little milk and form the sausage mixture around each egg.
  4. Brush a little bit of egg yolk on the sausage ball and roll in bread crumbs.
  5. Deep fry the eggs for 6 to 7 minutes in hot oil until they are brown. Make sure that the meat is cooked through.

 

Chicken Chili

Ingredients
  • 1 can chunk-style chicken
  • 1 can tomatoes, in juice
  • 1 can kidney beans, drained
  • ¼ c. frozen chopped green pepper
  • ¼ c. frozen chopped onion
  • 2 tsp. chili powder
  • ⅛ tsp. garlic powder
  • ¼ tsp. ground cumin
  • Fresh jalapeno peppers if desired
Instructions
  1. Cut tomatoes into small pieces and put into a sauce pan with the liquid from the can.
  2. Combine tomatoes with remaining ingredients and heat on low, covered, for several hours.

 

Cheeseburger Soup

Ingredients
  • 3 lb. lean ground beef
  • 2½ qt. chicken stock
  • 2 qt. milk
  • 2 sticks butter
  • ½ c. flour
  • 1 c. American Cheese, shredded
Instructions
  1. Fry hamburger and drain off excess grease.
  2. Add to chicken stock and bring to a boil.
  3. In a separate bowl, combine melted butter and flour and stir until thick.
  4. Add flour and butter mixture to boiling stock and reduce heat to stop from boiling.
  5. Stir in milk and garnish in bowls with shredded cheese on top.

 

Bami Gari

Ingredients
  • 4 pork chops, cut in bite-size pieces
  • 1 stick butter
  • 1 head cabbage, chopped
  • 1 med. onion, chopped
  • ½ c. soy sauce
  • 8 oz. pkg. noodles
Instructions
  1. In a large skillet melt the butter over medium heat.
  2. Add pork chop meat and let brown.
  3. Add cabbage, onion and soy sauce to the browned meat.
  4. Cook until cabbage is almost done.
  5. In a separate pot, cook noodles according to package directions and add to cabbage and meat mixture.

Ingredients
  • 8 ingredients
  • 2 c. ham, diced small
  • 1 bell pepper, chopped
  • 1 lg. onion, chopped
  • Pimientos to taste
  • 2 pre-baked pie shells
  • 1 c. American cheese, grated
  • 3 tbs. flour
  • 1½ c. Milk
Instructions
  1. Saute onions and pepper in butter until tender.
  2. Drain and set aside.
  3. Combine milk and flour to make a white sauce and add it to the onions and pepper and cook over medium heat until sauce thickens.
  4. Add ham to mixture.
  5. Pour the mixture into baked pie shells and top with grated cheese.
  6. Bake at 400 until cheese melts.

 

Oven BBQ Ribs

Ingredients
  • 2 lbs. pork ribs
  • 1 C. ketchup
  • ¼ C. vinegar
  • ¼ C. Worcestershire sauce
  • ¼ C. onion, chopped
  • 1 clove garlic, crushed
  • 2 tbsp. brown sugar
  • 1 tbsp. paprika
  • 2 tsp. dry mustard
  • ½ tsp. salt
  • ¼ tsp. pepper
Instructions
  1. Preheat oven to 350 degrees.
  2. Bake ribs in oven for 1 hour and drain off excess fat. Combine sauce ingredients while ribs are baking. Pour sauce over ribs. Bake another hour and baste 2 or 3 times during baking process.

 

Stuffed Banana Peppers

Ingredients
  • 12 banana peppers
  • 1 lb. ground beef
  • 1 sm. onion
  • 1 c. shredded cheese
  • Salt and pepper to taste
  • 2 eggs
Instructions
  1. Wash and clean peppers, cut off the top and clean out inside.
  2. Pierce a small hole in the bottom of the pepper to let out steam.
  3. Mix ground beef, onions, cheese and 1 egg together.
  4. Heat 2 inches of vegetable oil in pan on high heat.
  5. Mix 1 egg and milk mixture; dip peppers in mixture.
  6. Coat pepper in flour, dip again and roll in flour again coating all surfaces.
  7. Put in hot oil and cook until brown.

 

Oxtail Soup

Ingredients
  • 8 two inch oxtail sections
  • 1 teaspoon of salt
  • 1 bunch of celery minced
  • 2 small onions
  • 4 carrots
  • 4 cloves
  • salt and pepper to taste
Instructions
  1. Place the rinsed and salted oxtails into cold salted water (about 1 gallon) and bring to a boil. Reduce heat and simmer.
  2. Continue to simmer until meat is tender and remove the oxtails.Add Remaining ingredients to the water and simmer until the vegetables ate tender.
  3. Remove meat from the tail and return to the pot. Serve the soup hot.

Ingredients
  • 3 lb. chuck roast, cut in 1 inch cubes
  • 3 tbsp. salad oil
  • 1 clove garlic, minced
  • 2 (1 lb.) cans tomatoes
  • ¾ c. beef broth
  • 1 med. onion
  • 7 oz. can green chilies, chopped
  • ⅓ c. chopped parsley
  • ½ tsp. sugar
  • ¼ c. lemon juice
  • 2 tsp. ground cumin
  • 1 green pepper, coarsely chopped
Instructions
  1. Brown meat in oil.
  2. Remove from pot and saute pepper and garlic in drippings until tender.
  3. Return meat to pot and add remaining ingredients.
  4. Cover and simmer for 2 hours or until it reaches desired thickness.

 

Pumpkin Soup

Ingredients
  • 2 tbsp. butter
  • 1 lg. onion, chopped
  • 1 lg. potato, diced
  • 3 c. chicken broth
  • 16 oz. canned pumpkin
  • ½ tsp. salt
  • ¼ tsp. nutmeg
  • ⅛ tsp. pepper
  • ½ pt. heavy cream
Instructions
  1. In a large quart pan cook onion and potato in butter until onions are clear.
  2. Add chicken broth and heat to a boil.
  3. Cover and cook over low heat until vegetables are tender.
  4. Remove vegetables from the broth and blend in a blender until smooth.
  5. Return to broth vegetable puree to the broth and add the pumpkin and remaining ingredients except for the cream.
  6. Heat to a boil. Once soup reaches a boil, reduce heat to low, cover and allow to simmer for 10-15 minutes. Add the cream and heat through.

Vegetarian Chili

  • 1 lb. dried kidney beans (soaked in water overnight to soften)
  • 1 large onion, diced
  • 4 medium tomatoes, diced
  • 2 large carrots, grated
  • 8 oz. mushrooms, sliced
  • 1 large bell pepper, diced
  • 2½ tbsp. olive oil
  • 2 tbsp. chili powder
  • 1 c. corn kernels
  • 6 oz. tomato paste
  • 8 oz. tomato sauce
  • grated cheddar cheese for topping
Instructions
  1. Cook the onion in the bottom of a large pot with the olive oil and heat until the onion begins to go clear. Add tomatoes to the pot and continue to cook, stirring occasionally, until the tomatoes start to break down. Add 4½ C. water and the kidney beans to the pot. Bring to a boil, and reduce heat to low and cover for one hour.
  2. Add chili powder, carrots and mushrooms and continue to simmer on low (covered) for one hour. Add red bell pepper, corn, tomato sauce and tomato paste. cover and simmer for an additional 30 minutes. Remove cover and continue to simmer for another 30 minutes to allow chili to thicken.

Ingredients
  • 1½ lbs ground round beef
  • 1 onion chopped
  • 1-2 cups mixed vegetables (chopped carrots, corn, peas)
  • 3 large potatoes
  • 8 tablespoons butter
  • ½ cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt, pepper to taste
Instructions
  1. Peel and cut the potatoes into small pieces and boil them in salted water until tender. While the potatoes are boiling, saute the onions in half of the butter over medium heat until the onions are clear. Add ground beef to the mixture and saute until meat is no longer pink. Add remaining vegetables, Worcestershire sauce and beef broth and cook uncovered over medium heat for 10 minutes. In a separate bowl, mash the potatoes and mix in the remaining butter, salt and pepper.
  2. Place beef and vegetable mixture into a baking dish and top with mashed up potatoes. Use a fork to create a design in the mashed potatoes to create peaks that will brown up in the oven.
  3. Bake in the oven at 400 for 30 minutes.

 

Baked Tilapia With Pesto Sauce

  • 6 pieces of thawed tilapia
  • 2 large tomatoes
  • pesto sauce
  • Mozzarella Cheese slices
Instructions
  1. Arrange tilapia on a baking dish and top with pesto sauce. Slice tomatoes and place one slice on the top of each piece. Top with Mozzarella cheese.
  2. Bake at 350 for 25-30 minutes or until tilapia is cook throughout.

 

Baked Macaroni and Cheese

Ingredients
  • 2 c. cooked elbow macaroni
  • 1 tbsp. butter
  • 1 can cream of mushroom soup
  • ⅓ c. water
  • 1 c. cheddar cheese, shredded
  • 1 tbsp. minced onion
Instructions
  1. Cook elbow macaroni until done and place in a glass casserole dish.
  2. In a separate bowl, mix the soup, onion, water and ½ of the cheese.
  3. Pour the mixture over the macaroni and mix well. top wit the remaining cheese and bake at 350 for 30 minutes or until the cheese is completely melted and cooked through.
