Ingredients
- 6 firm half-ripe mangoes, peeled and diced
- 1 c. cider vinegar
- 1 c. brown sugar
- 2 tbsp garlic, minced
- 1 small piece of ginger, peeled and thinly sliced
- salt and pepper to test
Instructions
- In a large sauce pot, combine all ingredients and bring to a boil.
- Reduce the heat to low, simmer for 25 to 30 minutes, stirring constantly so it does not stick to the bottom.
- Serve cold.
