Ingredients
- 1½ C. brown sugar, packed
- ⅔ C. oil
- 1 egg
- 1 C. buttermilk
- 1 tsp. vanilla
- 2½ C. flour
- 1 tsp. salt
- 1 tsp. baking soda
- 2 C. diced rhubarb
- 1 C. nuts
Instructions
- Combine sugar and oil.
- Add the egg, milk and vanilla.
- Beat well and stir in the dry ingredients.
- Fold in the Rhubarb and nuts.
- Pour into greased and floured loaf pans.
- Combine ½ C. sugar, 2 tbsp. margarine and 2 tsp. cinnamon to create a crumble topping.
- Sprinkle topping over dough and bake at 325 for 50-60 minutes or until done.
