Scalloped Potatoes

Ingredients
- 3 lbs. potatoes, peeled and sliced thin
- 3 C. milk
- 1 clove garlic
- 3 Tbsp.butter, softened
- 1 cups heavy cream
- 5 oz. cheddar cheese, grated
- Salt and Pepper to taste
Instructions
- Preheat over to 325.
- In a large saucepan, place milk, salt, pepper and garlic and bring to a boil.
- Once boiling, reduce heat to a low simmer and add potato slices.
- Cook potatoes in milk for about 3 minutes or until they begin to soften.
- Butter the bottom and sides of a casserole dish and set aside.
- Place a colander in a large bowl and drain the potatoes, reserving the milk in the bowl beneath.
- Layer the potato slices in the buttered casserole dish and dot with butter in several places.
- Pour the reserved milk mixture and heavy cream over the potatoes and top with shredded cheese.
- Bake at 325 for 80-90 minutes or until the milk and cream have thickened and the cheese is a golden brown.
