Corned Beef Hash

Ingredients
- 2½ C. corned beef, cooked and chopped
- 2½ C. potatoes, cooked, cooled and diced.
- 1 med. onion, chopped
- 1 tbsp. bacon drippings or butter
- ½ C. evaporated milk
- ½ tsp. salt
- ⅛ tsp. pepper
Instructions
- Mix the beef, onions and potatoes.
- Heat the drippings in a large frying pan and then turn the meat mixture into the pan.
- Add the milk a little at a time and spread the mixture flat in the pan.
- Keep over very low heat and brown in on the bottom, approximately 40-45 minutes.
- Sprinkle with salt and pepper and fold in half like an omelet.
- Pour out onto a hot platter.
