Ingredients
- 2 eggs
- 1 C. milk
- ⅛ tsp. salt
- ¾ C. flour
- 1 lb. dry cottage cheese
- 1 tsp. sugar
- 1 egg yolk
- ½ tsp. vanilla
- ⅛ tsp. salt
- 8 oz. pkg. cream cheese
Instructions
- For the batter, beat 2 eggs well and add ⅛ tsp. salt. Add ¾ C. flour and mix together. Add milk gradually and beat to a smooth batter. This will make a very thin batter.
- For the filling, combine remaining ingredients and chill.
- Melt a little butter in the bottom of a skillet and pour 2 tbsp. of the batter into the pan. Immediately swirl the pan around so that the batter covers the bottom.
- Allow to cook until golden brown and turn out on a piece of waxed paper.
- Place a small amount of the filling in the center of the blintz and fold like an envelope.
- Butter the pan and repeat process until all of the batter and filling has been used.
- serve hot with the topping of your choice. Cinnamon Sugar is an excellent topping.
