Ingredients
- 9 inch premade pie shell, baked
- 3 C. milk
- ¾ C. sugar
- ⅓ C. flour
- ¼ tsp. salt
- 3 egg yolks, slightly beaten
- 2 tbsp. butter
- 1 tsp. vanilla
- 3 bananas
Instructions
- Scald the milk in a large saucepan.
- Gradually sir in the sugar, salt and flour into the scalded milk.
- Cook over medium heat until mixture thickens.
- Lightly beat the egg yolks in a small bowl and temper in small amounts of the scalded milk mixture.
- Once the egg yolks have reached the same temperature as the scalded milk, pout them into the milk and mix together.
- Continue to cook for an additional one to three minutes stirring continuously until the mixture coats the back of a wooden spoon.
- Remove from heat and stir in the butter and vanilla.
- Slice all three bananas in the bottom of the pie shell and pour mixture over the top.
- Refrigerate covered for several hours before serving.
