Ingredients
- 2 lrg. chicken breasts - boned
- 1 C. onion, minced
- 1 clove garlic
- 2 tbsp. margarine
- 16 oz. can tomatoes
- 8 oz. can tomato sauce
- 2½ C. cheese
- 4 oz. can chopped green chilies
- 1 tsp. sugar
- 1 tsp. cumin
- ½ tsp. salt
- 1.2 tsp. oregano
- 6 flour tortillas
- ¾ C. sour cream
Instructions
- Cut chicken into strips and sprinkle with salt. Set aside.
- In a pan, cook onion and garlic in butter.
- In a blender, combine tomatoes, tomato sauce, chilies and spices.
- Mix the sauce with the onions and garlic and simmer for 20 minutes.
- Dip each tortilla into the sauce to soften.
- Fill tortillas with chicken and cheese.
- Roll up tortillas and place the seam side down in a greased 9x12 dish.
- Blend sour cream with remaining sauce.
- Pour sauce over tortillas and top with remaining cheese.
- Cover and bake at 350 for 40 minutes.
