Ingredients
- ½ lb. uncooked linguine noodles
- ¾ C. tomato juice
- 3 tbsp. soy sauce
- 1 tbsp. vinegar
- 2 tsp. sugar
- ¾ tsp. cornstarch
- 3 tbsp. vegetable oil, divided
- ½ lb. chicken strips
- 2 cloves garlic
- ½ lb. bean sprouts
- ⅓ C. green onions, chopped
- ½ lb. baby shrimp, rinsed and cooked
- 1 tbsp. cilantro
Instructions
- Cook and drain the pasta.
- Combine tomato juice, soy sauce, vinegar, sugar and cornstarch and set aside.
- Heat 1 tbsp. oil in a wok and add meat. Stir fry for 1 minute and remove from pan.
- Heat the remaining oil in the wok and add garlic, sprouts and onions and stir fry for 1 minute.
- Return chicken with shrimp, cilantro and tomato juice mixture.
- Cook until sauce boils and thickens.
- Serve with lime wedges.
- Makes 4 servings.
