Mix ground gingersnaps and butter and press into a 8” pie pan and form pie crust.
Preheat the oven to 350.
Mix all the pie filling ingredients together and pour into the pie shell. Bake for 1 hour. Remove from the oven and let cool for 15 minutes. Chill for 4 hours.
Mix all the topping ingredients together and spread on top. Chill 1 more hour.
