Fresh Basil Pesto
- 2 bunches fresh basil, chopped
- ½ C. Extra Virgin olive oil
- 1 garlic clove, minced
- 1 pk. Ricotta cheese
- Process all ingredients in a blender or food processor. Add additional olive oil if pesto is too dry. Continue to blend until you have a thick sauce.
