Irish Soda Bread

Ingredients
  • 3 C flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • ½ C. sugar
  • 3 tbsp. shortening
  • 1 C. raisins
  • 2 tsp. caraway seeds (optional)
  • 1 C. milk
Instructions
  1. Sift flour, baking powder, salt, and sugar together and mix.
  2. Add raisins and caraway seeds.
  3. Cut in shortening and add in the milk and stir. Dough will be stiff.
  4. Place in greased 8-inch cake pan.
  5. Brush the top with milk and cook 40-50 minutes at 350 degrees.
  6. Mix sugar and milk and brush on top of bread while it is still warm.

 

Gingered Biscuits

Ingredients
  • 4 c. flour
  • 2 tbsp. baking powder
  • 2 tsp. salt
  • ½ c. shortening
  • 1 c. candied ginger, grated
  • 1½ c. milk
  • 1 egg white plus 1 tbsp. water
Instructions
  1. Combine flour, baking powder, and salt in a bowl.
  2. Add shortening and cut in until mixture is crumbly .
  3. Gradually Stir in ginger.
  4. Stir in milk until dough sticks together.
  5. Knead briefly.
  6. Roll to ½ inch thickness and cut into rounds of 2 inches.
  7. Transfer rounds to an ungreased baking sheet.
  8. Whisk together egg white and water. Brush egg whites over tops of the biscuits.
  9. Bake at 450 degrees for 13 to 15 minutes.

 

Popovers

Ingredients
  • 1 C. flour
  • ½ tsp. salt
  • 1 C. milk
  • 1 tbsp. melted butter
  • 3 eggs
Instructions
  1. Preheat the over to 450 degrees.
  2. Combine all ingredients in a bowl and mix well.
  3. Pour into buttered popover cups or standard size muffin tins until ½ full.
  4. Once the oven reaches temperature, put the popovers in the middle of the oven.
  5. Bake for 15 minutes and reduce the temperature to 350 degrees. DO NOT OPEN THE OVEN.
  6. Continue to bake for 20-30 minutes or until golden brown and dry to the touch. If you want the popovers to retain their shape, cook for an additional 5 minutes.
Notes
For cheese popovers, add ¼ cup shredded cheese to the mix. For herb popovers, add 1½ tsp. of your favorite herbs. Serve hot with honey butter.

 

Kentucky Biscuits

Ingredients
  • 2 C. flour
  • 1½ tsp. baking powder
  • ½ tsp. baking soda
  • 2 Tbsp. sugar
  • dash of salt
  • ½ C. butter
  • ¾ C. buttermilk
Instructions
  1. Preheat oven to 400 degrees.
  2. Mix dry ingredients.
  3. Cut in butter, add milk and knead into soft dough. Do not over knead!
  4. Pat into a ungreased pie pan.
  5. Cut into wedges (like a pizza) before you cook.
  6. Bake at 400' for 15 to 20 minutes or until done and golden brown.

 

No Yeast Dinner Rolls

  • 2 C. Flour
  • 2 tsp. baking powder
  • 2 tsp. salt
  • 1 C. milk
  • 4 Tbsp. Mayonnaise
Instructions
  1. Preheat the oven to 350 degrees.
  2. Combine all ingredients.
  3. Spoon into a greased muffin pan.
  4. Bake for 15 minutes or until golden brown.
  5. Makes 10-12 rolls.

Ingredients
  • ¾ cup sugar
  • ¾ cup shortening
  • 1 cup boiling water
  • 2 pkg. dry yeast
  • 1 cup warm water
  • 2 eggs, slightly beaten
  • 6 to 7 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda
Instructions
  1. Cream the sugar and shortening together; add the boiling water; mix well and set aside to cool.
  2. Dissolve the yeast in warm water with 1 tsp. sugar.
  3. Add eggs to cooled shortening mixture; stir in yeast mixture.
  4. Combine 5 cups flour with salt, baking powder, baking soda; mix well into yeast mixture.
  5. Pour mixture out onto a floured board.
  6. Knead in the remaining flour until dough is no longer sticky.
  7. Roll out about 1½ inch balls by hand; place in greased baking pans.
  8. Put pans of dough in warm place; cover lightly; let rise for about 3 hours or over night.
  9. Bake at 400 degrees F. for about 20 minutes.

 

Sweet Potato Bread

Ingredients
  • 1½ cups all purpose flour
  • 2¼ tsp baking powder
  • 1 tsp salt
  • 1 cup sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup vegetable oil
  • 2 Tbsp milk
  • 2 eggs, slightly beaten
  • 1 cup mashed cooked sweet potatoes
  • 1 cup chopped pecans
  • ½ cup raisins, optional
Instructions
  1. preheat the oven to 350.
  2. Grease the bottom only of a loaf pan with shortening or butter.
  3. In large bowl, combine all of the dry ingredients.
  4. Add in remaining ingredients and mix well.
  5. Pour the mixture into the prepared loaf pan.
  6. Bake at 350 for 75 minutes or until toothpick inserted in center comes out clean.
  7. Remove from oven, cool in pan 15 minutes, remove from pan to cooling rack.

 

Beer Bread

Ingredients
  • ½ C. sugar
  • 12-oz bottle of beer
  • 2⅔ cups flour
  • 4 tsp. baking powder
  • 1 tsp. salt
Instructions
  1. Preheat oven to 375.
  2. Mix all ingredients together in a large bowl.
  3. Pour the batter into a lightly greased loaf pan.
  4. Bake at 375 for 50-55 minutes
Notes
Variations to use in place of the beer:
Cinn-A-Dew -Mountain Dew, ½ c. cinnamon chips, sprinkle with 1 Tbls. sugar.

Ginger Bread -Root Beer, ½ cup molasses, one scoop Chai, no butter on top.

Cherry Bread -Black Cherry Soda and chopped marchino cherries.

Cranberry Orange Bread- Orange Juice and chopped cranberries.

Orange Bread- Orange Crush and drained mandarin oranges.

Peanut Butter Bread -Cream Soda and ½ c. peanut butter chips.

Cooking times may vary due to the different ingredients used.

Ingredients
  • 1 qt. warm water
  • 1 C. sugar
  • 1 C. powdered milk
  • 1 C. oil
  • 1 tbs. salt
  • 2 pkg. yeast
  • 8 C. all purpose flour
Instructions
  1. Combine water, yeast and sugar and let the yeast dissolve.
  2. In a separate bowl, combine milk, salt and five cups of flour.
  3. When the yeast dissolves, add the iol and pour into the dry mixture.
  4. Mix thoroughly and continue to add remaining flour until dough is not too sticky.
  5. Allow to rise until doubled in size.
  6. Bake at 350 for 15-20 minutes or until lightly browned.

 

7-Up Biscuits

Ingredients
  • 4 C. Bisquick
  • 1 C. sour cream
  • 1 C. 7-Up
  • ½ C. butter, melted
Instructions
  1. Mix all ingredients together except for the melted butter.
  2. Melt the butter in the bottom of a baking dish.
  3. Place biscuits on the buttered dish and bake at 425 until golden brown.

 

Parmesan Pull-Apart Bread

Ingredients
  • 1 can refrigerated biscuits
  • ½ stick of butter, melted
  • 3 cloves garlic, minced
  • ½ C. Parmesan cheese, grated
Instructions
  1. Preheat oven to 350.
  2. Cut the biscuits into quarters.
  3. In a large bowl, combine the garlic and Parmesan.
  4. Add the biscuit pieces to the cheese and coat well.
  5. Pour the melted butter in the bottom of a Bundt pan.
  6. Place the coated biscuit pieces in the pan and pour any remain garlic and cheese over the top.
  7. Bake at 350 for 20-22 minutes or until golden brown.
  8. Turn out onto a plate and serve.

 

Zucchini Bread

Ingredients
  • 3 eggs
  • 1 cup oil
  • 1 cup brown sugar
  • Blend together & add:
  • 3 cups flour
  • 1 t soda
  • 1 t salt
  • 1 c sugar
  • 2 cups grated zucchini
  • 1 t van
  • ¼ t baking powder
  • 1 t cinnamon
  • ½ t nutmeg & clove (opt)
Instructions
  1. Pour batter into bread pans.
  2. Makes 2 loaves.
  3. Bake at 325 for 45 minutes.

 

Whole Wheat Bread

Ingredients
  • 3 cups warm water, 110 degrees
  • ½ oz active dry yeast
  • ⅓ c honey
  • 5 cups bread flour
  • 3 T melted butter
  • ⅓ c honey
  • 1 t salt
  • 3½ cups wheat flour
  • butter
Instructions
  1. In a large bowl, mix warm water, yeast, and ⅓ c honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
  2. Mix in 3 T melted butter, ⅓ c honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky, just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
  3. Punch down, and divide into 3 loaves. Place in greased 9×5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
  4. Bake at 350 degrees F for 25 to 30 minutes, do not over bake. Lightly brush the tops of loaves with butter when done to prevent crust from getting hard. Cool completely.

 

Pull Apart Breadsticks

Ingredients
  • 36 frozen dinner rolls, thawed but still cold
  • ½ c butter melted(you could add garlic powder)
  • salad supreme
  • kosher salt
  • Parmesan cheese
Instructions
  1. Preheat oven to 350.
  2. In a 9×13 buttered casserole pan, roll out each piece of dough and stretch it across the short side of the pan.
  3. After all the rolls are in the pan, brush the melted butter over the top completely.
  4. Sprinkle the salad supreme, kosher salt and Parmesan cheese over the top.
  5. Bake for 12-15 minutes or until done.
  6. These are amazing!

 

Orange Citrus Knots

Ingredients
  • 12 frozen dinner rolls, thawed but still cold
  • 1 medium orange rind, grated
  • ½ c sugar
  • ¼ c butter, melted
  • Citrus Glaze:
  • 1 c powdered sugar
  • 1 T butter, melted
  • 3 T orange juice
  • ½ t vanilla extract
Instructions
  1. Mix grated orange rind with sugar.
  2. Roll each roll into a 9-inch rope. Tie in a loose knot.
  3. Roll each knot in melted butter and then in rind/sugar mixture.
  4. Place on a large sprayed baking sheet.
  5. Cover with sprayed plastic wrap and let double in size.
  6. Remove wrap. Bake at 350 for 15-20 minutes.
  7. Remove from pan and place on cooling rack.
  8. Brush with citrus glaze while still warm.
