Cheese Sauce

Ingredients
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • Pepper to taste
  • ½ tsp. salt
  • 1 C. milk
  • 1 C. American Cheese, shredded
Instructions
  1. In a sauce pan, combine butter, flour and milk.
  2. Cook over medium heat until the mixture has thickened.
  3. Remove from heat.
  4. Add remaining ingredients and stir until the cheese has melted.
Notes
Goes great over vegetables or elbow macaroni for Mac and Cheese.

 

No Bake Cheesecake

Ingredients
  • 2 8-ounce packages cream cheese at room temperature
  • 14 oz. sweetened condensed milk
  • fresh lemon juice
  • 1 tsp. vanilla extract.
  • 1 premade graham cracker pie crust.
Instructions
  1. Combine all ingredients in a bowl.
  2. Mix until fully mixed and smooth.
  3. Spoon mixture into prepared pie crust.
  4. Chill for at least 2 hours to allow cheesecake to set.

 

Jalapeno Cheese Ball

Ingredients
  • 1 cup finely grated medium cheddar cheese
  • 2 T grated onion
  • 1 t minced jalapeno pepper
  • mayo
Instructions
  1. Place the first 3 ingredients in a bowl.
  2. Add mayo into the mixture until you can roll the cheese into a ball.
  3. Serve with your favorite crackers or corn chips.

 

Easy Cheese Ball

Ingredients
  • 1 5 oz jar Bacon cheese spread
  • 1 5 oz jar Old English cheese spread
  • 1 5 oz jar Rocha Blue cheese spread
  • 1 pkg 3 oz cream cheese softened
  • ½ c grated cheddar cheese
  • ½ c chopped walnuts
Instructions
  1. Combine all cheese and mix well.
  2. When mixed well, form a ball.
  3. Roll the ball in the chopped nuts.
  4. Serve with your favorite crackers.

 

Cheese Dip

Ingredients
  • 1 lb Velveeta cheese melted
  • 1 sm can green chilies
  • 1 sm can rotel tomatoes(I like to use the hot ones)
  • 1 bunch chopped green onions
  • ½ c sour cream
Instructions
  1. Combine all ingredients.
  2. Microwave until melted.
  3. Serve with your favorite corn chip.
  4. You can put this mixture in a fondue pot for parties.

Ingredients
  • 1 8 oz pkg softened cream cheese
  • ⅓ c sugar
  • ½ c sour cream
  • 1 t vanilla
  • 1 4 oz container Cool Whip
  • 1 graham cracker crust
  • 1 bottle of caramel ice cream topping or your favorite topping
Instructions
  1. Mix all ingredients until blended well.
  2. Pour in graham cracker crust and chill for approx 4 hours.

Ingredients
  • 1 pkg cream cheese
  • 1 bunch chopped green onions
  • garlic powder to taste
  • Worcestershire sauce to taste
  • 1 pkg thin deli sliced lunch meat chopped in very small pieces.
  • Accent salt to taste
Instructions
  1. Once the cheese mixture is mixed well, form into a ball.
  2. Roll the ball into the meat and salt mixture.
  3. Serve with your favorite crackers.

Ingredients
  • 2 eggs
  • 1 C. milk
  • ⅛ tsp. salt
  • ¾ C. flour
  • 1 lb. dry cottage cheese
  • 1 tsp. sugar
  • 1 egg yolk
  • ½ tsp. vanilla
  • ⅛ tsp. salt
  • 8 oz. pkg. cream cheese
Instructions
  1. For the batter, beat 2 eggs well and add ⅛ tsp. salt. Add ¾ C. flour and mix together. Add milk gradually and beat to a smooth batter. This will make a very thin batter.
  2. For the filling, combine remaining ingredients and chill.
  3. Melt a little butter in the bottom of a skillet and pour 2 tbsp. of the batter into the pan. Immediately swirl the pan around so that the batter covers the bottom.
  4. Allow to cook until golden brown and turn out on a piece of waxed paper.
  5. Place a small amount of the filling in the center of the blintz and fold like an envelope.
  6. Butter the pan and repeat process until all of the batter and filling has been used.
  7. serve hot with the topping of your choice. Cinnamon Sugar is an excellent topping.

Ingredients
  • Pepper-jack Cheese
Instructions
  1. Cut cheese into ¼ - ½ inch cubes.
  2. Arrange cubes on a greased cookie sheet.
  3. Bake at 350 until cheese melts, spreads our and stops bubbling.
  4. Allow Crackers to cook before removing.
  5. Serve with soups, salads or anywhere that a cracker would be used.

Ingredients
  • ½ C. cold milk
  • ¼ C. flour
  • 1 tsp. salt
  • 2 C. cheddar cheese, grated
  • 4 egg yolks
  • 4 egg whites, beaten stiff
  • ½ tsp. paprika
Instructions
  1. Make a thick roux by combining the cold milk, flour, and salt.
  2. Add cheese, egg yolks and paprika.
  3. Gently fold in the egg whites.
  4. Pour into a greased casserole or souffle dish and cook at 350 degrees for 30 minutes or until firm and brown.

 

Cheese Soup

Ingredients
  • 1 lb. jar cheese whiz
  • 3 carrots, chopped
  • 2 stalks celery, chopped
  • 1 pkg. frozen peas
  • 1 cube margarine
  • 2 tbsp minced onion
  • 4 chicken bullion cubes
  • ¾ C. flour
Instructions
  1. Melt the cheese in a small pan with 2 inches of water over low heat.
  2. In a medium pan, add 1½ C. water and 1 tbsp. margarine and bring to a boil.
  3. Add the chopped carrots and cover.
  4. In a large pot, add 6 cups water and the 4 bullion cubes and bring to a boil.
  5. Add the celery, frozen peas and onions to the carrots. Do not add more water.
  6. In a frying pan, heat remaining butter. Once melted, mash in the flour.
  7. With a wire whisk, whisk the butter and flour mixture into the water in the large 6 C. pot.
  8. Whisk in the melted cheese.
  9. Pour in the now steamed vegetables (water and all).
  10. Reduce heat and simmer for 10 minutes and serve.

 

Crock Pot Mac and Cheese

Ingredients
  • 1 package elbow macaroni
  • 2 tbsp. butter
  • ¼ c. flour
  • 1 tsp. salt
  • ½ tsp. dry mustard
  • ¼ tsp. pepper
  • Garlic powder to taste.
  • 2½ c. milk
  • 2 c. grated Cheddar cheese for sauce
  • Additional Cheddar cheese for macaroni
Instructions
  1. In a saucepan, cook macaroni until done al dente and drain.
  2. Turn Crock pot to High setting.
  3. Combine flour, salt, dry mustard, garlic powder, pepper and milk. Microwave on High setting until it begins to thicken. Do not overcook or milk will curdle.
  4. Stir in butter and 2 cups Cheddar cheese, stirring until cheese melts.
  5. Butter the sides and bottom of pot. Place a layer of macaroni and layer of extra cheese until all macaroni of the macaroni has been used.
  6. Cook on High setting for about 30 minutes.
  7. Turn to Low setting and cook for 2 hours.

  • ¼ lb. blue cheese
  • 1 purple onion, grated fine
  • ½ tsp. garlic powder

  1. Combine all ingredients.
  2. Roll in paprika and chopped nuts.

 

Chili Con Queso

Ingredients
  • ¼ small onion, finely diced
  • ¼ small green pepper, finely diced
  • 1 sm. jar chopped pimentos
  • 5 cloves garlic, pressed
  • 1 (2 lb.) pkg. Velveeta cheese, cubed
  • 1 can tomatoes with jalapeno peppers
  • Crisco
Instructions
  1. Saute onion and green pepper in Crisco.
  2. Add pimentos, garlic and tomatoes and jalapeno peppers.
  3. Add cheese and simmer on low heat until cheese is melted.
