Ingredients
  • 2 packages Frozen Hash Brown Potatoes 12 oz. (Southern Style)
  • 2 cups sour cream
  • 1 can cream of chicken soup
  • ½ C. butter melted
  • 1 tsp. salt
  • 1 tsp. minced onion or onion powder optional
  • 2 C. shredded cheddar cheese
  • 2 C. Corn Flakes, crushed Mixed with ½ C. melted butter
Instructions
  1. Preheat oven to 350 F.
  2. In a colander thaw and drain hash browns.
  3. Combine sour cream, soup and butter in a bowl. Mix it well. Add salt, onion and cheese to this mixture and mix until all combined.
  4. Add potatoes to mixture and stir until all combined.
  5. Place in 9x13 casserole dish.
  6. Sprinkle on butter covered crushed Corn flakes.
  7. Bake uncovered at 350 for 40¬50 minutes.

 

Frito Pie

Ingredients
  • 1 lb. lean ground beef
  • 1 can (16 oz) chili beans
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) diced tomatoes
  • 1 envelope taco seasoning
  • 1 C. cheddar cheese, shredded
  • 3½ cups Frito brand corn chips
  • 1¼ cup sour cream
Instructions
  1. preheat oven to 350 degrees.
  2. Cook ground beef until meat is browned and drain off the excess grease.
  3. Stir in beans, tomato sauce, diced tomatoes, taco seasoning mix and ¼ c. of the shredded cheese.
  4. Sprinkle 1 cup corn chips in bottom of 8x8 baking dish.
  5. Cover with meat mixture.
  6. Bake at 350 for 20 minutes.
  7. Spread sour cream over chili.
  8. Top with remaining corn chips and cheese.
  9. Bake for an additional 4-5 minutes or until all of the cheese has melted.

Ingredients
  • 2 C. flour
  • 1½ tsp. baking powder
  • ½ tsp. baking soda
  • 2 Tbsp. sugar
  • dash of salt
  • ½ C. butter
  • ¾ C. buttermilk
Instructions
  1. Preheat oven to 400 degrees.
  2. Mix dry ingredients.
  3. Cut in butter, add milk and knead into soft dough. Do not over knead!
  4. Pat into a ungreased pie pan.
  5. Cut into wedges (like a pizza) before you cook.
  6. Bake at 400' for 15 to 20 minutes or until done and golden brown.

Ingredients
  • 1 C. flour
  • ¼ C. sugar
  • 4 tsp. baking powder
  • ¾ tsp. salt
  • 1 C. yellow cornmeal
  • 2 eggs
  • 1 C. milk
  • ¼ C. shortening
Instructions
  1. Preheat the oven to 425 degrees.
  2. Sift together flour, sugar, baking powder and salt.
  3. Stir in the cornmeal
  4. Add eggs, milk and shortening.
  5. Beat with an electric mixer for about 1 minute or until smooth.
  6. Pour batter into a greased 9x9x2 inch pan.
  7. Bake for 20-25 minutes.
  8. spread with butter and honey 5 minutes before baking is completed.

Ingredients
  • 3 lbs small red potatoes, cooked and quartered
  • 4 hard boiled egg whites, cooled and chopped
  • ½ cup Mayonnaise
  • ½ cup sour cream
  • 2 tablespoons fresh dill, minced
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon sugar
Instructions
  1. Combine all ingredients in a large bowl and mix well.
  2. Cover and let sit in a refrigerator until chilled throughout.

Ingredients
  • ⅔ c. Minute Rice
  • 2¾ c. milk
  • ⅓ c. sugar
  • 1 tbsp. butter
  • ½ tsp. salt
  • ½ tsp. vanilla
  • ¼ tsp. nutmeg
  • Cinnamon
  • ½ c. raisins (optional)
Instructions
  1. Preheat the oven to 350
  2. Combine all ingredients in a 1 quart baking dish.
  3. Bake in oven and 350 for 1 hour, stirring once after 15 minutes and again after it's done.
  4. Sprinkle with cinnamon.
  5. Pudding will thicken as it stands.

 

Creamy baked Mac and cheese

Ingredients
  • 16 oz. elbow macaroni
  • 3 tbsp. butter
  • 1½ C. milk, divided
  • 2 large eggs, beaten
  • 1 lb. Velveeta cheese, cubed
  • 8 oz. each cheddar cheese and Monterrey Jack cheese, shredded
  • 1 tsp. salt
  • pepper to taste.
Instructions
  1. Heat the oven to 375 F.
  2. Cook the macaroni according to package instructions and drain.
  3. In a sauce pan, combine the Velveeta and ¾ C. milk. and melt, stirring continuously.
  4. Combine the cheese sauce and pasta. Add the remaining ingredients and mix together.
  5. Transfer mixture to a casserole dish and pour remaining cheese over the top.
  6. Bake until the cheese has melted and a light golden brown crust begins to form on the top.

Ingredients
  • 8 oz uncooked elbow macaroni
  • 1 c sharp cheddar cheese
  • 1 c jalapeno jack cheese
  • ½ c Swiss cheese
  • ¼ c Parmesan cheese
  • 2 c milk
  • ¼ c butter
  • 2½ T flour
  • ½ c bread crumbs
  • 2 T butter, cut into chunks
  • ½ t paprika
  • pesto
Instructions
  1. Preheat oven to 350.
  2. Cook macaroni according to the package directions. Drain. I
  3. n a saucepan, melt butter over medium heat.
  4. Stir in enough flour to make a roux.
  5. Add milk to roux slowly, stirring constantly.
  6. Stir in cheeses and cook over low heat until cheese is melted and the sauce is a little thick.
  7. Put macaroni in a large casserole dish and pour the sauce over macaroni, stir well.
  8. Top with breadcrumbs, chunks of butter, and paprika.
  9. Bake for 30 minutes.
  10. Serve with a couple of teaspoons of spinach pesto over each serving.

 

Macaroni Shrimp Salad

Ingredients
  • 1 lg pkg of small shell pasta (cooked)
  • 2 cans shrimp drained
  • 8-10 hard boiled eggs chopped
  • 2-3 celery stalks chopped
  • 1 bunch green onions sliced
  • 1 small can sliced olives
  • 1 T mashed pimento or roasted red pepper chopped
  • ½ quart mayo
  • ½ quart miracle whip
  • salt and pepper to taste
Instructions
  1. Once the macaroni has cooled, add all prepared ingredients in a large mixing bowl.
  2. Add salt and pepper to taste.
  3. Chill for 3 hours or until cold.
  4. If the salad appears to be dry, you can add more mayo and miracle whip.

Ingredients
  • 7 oz marshmallow creme
  • 1½ cups white sugar
  • ⅔ c evaporated milk
  • ¼ c butter
  • ¼ t salt
  • 2 cups milk chocolate chips
  • 1 c semisweet chocolate chips
  • ½ cup nuts(chopped)
  • 1 t vanilla extract
Instructions
  1. Line an 8×8 inch pan with aluminum foil. Set aside.
  2. In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter and salt.
  3. Bring to a full boil, and cook for 5 minutes, stirring constantly.
  4. Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth.
  5. Stir in nuts and vanilla.
  6. Pour into prepared pan.
  7. Chill in refrigerator for 2 hours, or until firm. T
  8. o add color, sprinkle with your favorite colored sugar.

Ingredients
  • 8 slices of bacon
  • 1 c chopped onion
  • 4 cans pork and beans in tomato sauce
  • ¼ c brown sugar or more
  • 2 T Worcestershire sauce
Instructions
  1. In a large fry pan, brown bacon until crisp.
  2. Remove bacon and crumble.
  3. Saute onion in the bacon grease.
  4. Transfer the onion, bacon grease and crumbled bacon to a crock pot.
  5. Add all remaining ingredients.

  • 1 c flour
  • 1 c cornmeal
  • ¼ c sugar
  • 1 T baking powder
  • ¾ tsp salt
  • 1 cup milk
  • 2 eggs
  • ⅓ c oil
Instructions
  1. Preheat oven to 400.
  2. Combine dry ingredients in a large mixing bowl. In a small bowl, combine egg, milk and oil and whip with a fork.
  3. Take milk mixture and start pouring over the dry mixture, use a fork to barely moisten the dry mixture.
  4. Pour into a well greased 8×8 pan.
  5. Bake for 25 minutes.
  6. Serve with honey butter.

  • 2 Ibs ground beef
  • 1 chopped onion
  • 4 cloves minced garlic
  • 1 chopped green pepper
  • 2 cans stewed tomatoes
  • 2 small cans tomato paste
  • 2 cans chili beans
  • 1 can pinto beans
  • 1 can kidney beans
  • 1 can blk beans
  • jalapenos to taste
  • 1 pkg Six Guns Chili Fixins
  • water to desired thickness
Instructions
  1. Brown the first 4 ingredients.
  2. Place in a slow cooker and add all remaining ingredients.
  3. Simmer for 2 hours.

  • 1 c shortening
  • 1 c white sugar
  • 1 c brown sugar
  • 3 eggs
  • 1 c milk
  • 1 t vanilla
  • 2 t baking powder
  • 1 t baking soda
  • ½ t salt
  • 4½ cups flour
  • 1 sm pkg chocolate chips
Instructions
  1. Preheat oven to 375.
  2. In a large mixing bowl, add ingredients in the order listed.
  3. Mix well.
  4. Drop by spoonful onto a cookie sheet.
  5. Bake for 10-12 minutes.
