Pizza Casserole

Ingredients
  • 1 bag egg noodles, cooked until soft
  • 1½ lbs. ground beef, browned and drained
  • 1 large can of tomato sauce
  • 3 C. mozzarella cheese, shredded
  • 1 pkg. pepperoni slices
Instructions
  1. preheat the oven to 350 degrees.
  2. Spread a thin layer of sauce in the bottom of a glass casserole dish.
  3. Layer half of the noodles in the dish.
  4. Pour half of the sauce over noodles.
  5. Top with half of the ground beef.
  6. Sprinkle 1 cup of the shredded cheese over the top.
  7. Place remaining noodle in next.
  8. Pour over remaining sauce.
  9. Top with remaining ground beef.
  10. add remaining cheese.
  11. Top with pepperoni slices.
  12. Cover and bake for 30 minutes.
  13. Remove cover and continue to bake for an additional 15 minutes.

 

Rolled Italian Meat Loaf

Ingredients
  • 1¼ lb extra-lean ground beef
  • ¾ lb Italian sausage
  • 1 egg
  • 8 oz. pizza sauce
  • ¼ cup Italian style bread crumbs
  • ¼ teaspoon pepper
  • 2 C. shredded Italian cheese
  • 2 C. fresh spinach leaves
Instructions
  1. Preheat the oven to 350.
  2. In a large bowl, Combine meats, egg, bread crumbs, salt and pepper and half of the pizza sauce.
  3. On a large foil sheet, pat out the meat mixture and top with cheese and spinach.
  4. Roll up the meat tightly and make sure that none of the spinach leaves are visible.
  5. Place the roll, seam side down, into an un-greased casserole dish.
  6. Bake for 1 hour at 350.
  7. Spread remaining pizza sauce over the top and bake for an additional 15 minutes.
Notes
Depending on how thick the roll is, cooking times may vary. Internal temperature should be 160-165 before removing from the oven.

 

Spinach Pesto

  • 2 c spinach washed
  • ¼ c slivered almonds or pine nuts toasted
  • ¼ c Parmesan cheese
  • 1 garlic clove
  • ¼ c extra virgin olive oil
  • salt and pepper to taste

  1. Place all ingredients into a blender and process to a fine paste.

 

Risotto Milanese

  • Extra-virgin olive oil
  • 1 large onion, cut into ¼-inch dice
  • Kosher salt
  • 2 cups Carnaroli or Arborio rice
  • 2 large pinches saffron
  • 3 to 4 cups chicken stock, kept HOT
  • 1 cup dry white wine
  • 2 tablespoons butter
  • ½ to ¾ cup grated Parmigiano-Reggiano
Instructions
  1. Coat a large saucepan generously with olive oil over medium heat. Add the onions and salt and sweat them until translucent, about 5 minutes.
  2. Bring the pan to a medium-high heat. Add the rice and cook for 3 to 4 minutes, letting the rice slightly stick to the bottom of the pan and scraping it off. It should also sound crackly.
  3. Add the saffron to the hot chicken stock; the stock should turn bright yellow.
  4. Add the wine to the pan until it covers the surface of the rice. Season with salt and cook over a medium-high heat, stirring continuously until the wine has absorbed into the rice.
  5. Add the saffron chicken stock to the pan until it covers the rice. Cook over a medium-high heat, stirring continuously until the stock has absorbed into the rice.
  6. Repeat this process two more times with the hot saffron chicken stock. When the third addition of the stock has absorbed and the rice is very creamy, bite a couple grains of rice to be sure it is cooked perfectly. If it is still a little crunchy, add a little more stock and cook the rice for another couple of minutes. When the rice is cooked perfectly, remove it from the heat.
  7. Toss in the butter and Parmigiano-Reggiano and “whip the heck out of it.” The rice should be creamy but still flow and hold its own shape.

 

Fettuccini Alfredo

Ingredients
  • 1 pint half and half
  • 1 cube butter
  • 1½ + c Parmesan cheese
  • 1-2 cloves minced garlic
  • ½-1 t garlic salt(to taste)
  • 2 small cans sliced mushrooms(drained)
  • 1 small pkg of fettuccine noodles
Instructions
  1. In a large pot boil noodles until cooked.
  2. Place half and half, butter and garlic into a sauce pan.
  3. Bring to a boil and add Parmesan cheese.
  4. Add cheese slowly until desired thickness.
  5. Once the desired thickness is achieved, add mushrooms.
  6. Serve over cooked noodles.
  7. You can saute shrimp or chicken breast and serve with this.

 

Chicken Spinach Lasagna

Ingredients
  • 1 pkg frozen spinach
  • ¾ t salt
  • ⅛ t pepper
  • 2 T grated Parmesan cheese(or more)
  • 6 T butter
  • 1 egg beaten
  • ¼ c cornstarch
  • 2 c milk
  • 6-9 cooked lasagna noodles
  • 2-3 chicken breast cooked and cubed
Instructions
  1. Place 2-3 chicken breasts in a medium sauce pan and boil until done.
  2. Reserve ½ c of the broth and drain the remainder.
  3. Cube the chicken and set aside.
  4. In a medium sauce pan cook the spinach until done, drain, and set aside.
  5. In a medium sauce pan, add milk, cornstarch, chicken broth, salt, pepper, butter, cheese, and chicken.
  6. Bring to a boil and then reduce heat. Simmer for 1 minute.
  7. Remove 1 c of mixture and add beaten egg (this is your final layer) In a 9 × 13 pan, layer spinach mixture then noodles.
  8. Repeat until mixture is gone, using the mixture with the egg on top.
  9. Cover and bake at 350 for 30 minutes until done.
  10. Top with Parmesan cheese.

 

Chicken Masala

Ingredients
  • MARINADE:
  • 1 c plain yogurt
  • 1 T lemon juice
  • 2 t ground cumin
  • 1 t ground cinnamon
  • ¼ t cayenne pepper
  • 1 t freshly ground pepper
  • 1 T minced fresh ginger
  • 1 t salt
  • 3 boneless skinless chicken breasts, cut into bite-size pieces
  • 4 long skewers
  • SAUCE:
  • 1 T butter
  • 1 clove garlic, minced
  • 2 t ground cumin
  • 2 t paprika
  • 1 t gram Marsala
  • 1 t salt
  • 1 8oz can tomato sauce
  • 1 cup heavy cream
  • ¼ cup chopped fresh cilantro
Instructions
  1. In a large bowl, combine yogurt, lemon juice, 2 t cumin, cinnamon, cayenne, pepper, ginger, and 1 t salt.
  2. Stir in chicken, cover, refrigerate 1 hour.
  3. Preheat a grill for high heat.
  4. Lightly oil the grill grate.
  5. Thread chicken onto skewers and discard marinade. Grill 5 min on each side.
  6. For the sauce: Melt butter in a large skillet. Saute garlic for 1 minute. Season with 2 t cumin, paprika and 1 t salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes.
  7. Transfer to a serving platter and sprinkle with fresh chopped cilantro. Serve over rice.

 

Chicken Cacciatore

Ingredients
  • 2 Ibs boneless skinless chicken(quartered or cubed)
  • ¼ c olive oil
  • 1 sm can tomato sauce
  • 1 lg can stewed tomatoes
  • 1 sm can sliced mushrooms drained
  • 1 onion chopped
  • ¼ c red wine
  • 1 garlic cloves (minced)
  • 1¼ t dried oregano
  • ½ t dried thyme
  • ½ t basil
  • ⅛ tsp salt and pepper
  • spaghetti or rice(hot, cooked)
  • Parmesan cheese
Instructions
  1. In a large fry pan put oil, chicken, and onion.
  2. Cook until brown.
  3. Transfer cooked chicken into a crock pot.
  4. Add all remaining ingredients, stir well and simmer until heated through.
  5. Prepare spaghetti noodles or rice.
  6. Serve chicken mixture over noodles or rice. Serve.
  7. Garnish with the Parmesan cheese.

  • 1 lb. hamburger
  • 8 oz. can tomato sauce
  • 6 oz. can tomato paste
  • 1 qt. tomatoes
  • 1½ tsp. oregano
  • Salt and pepper to taste
  • Mushrooms to taste
  • Italian sausage (optional)

  1. Mix all ingredients together in a large pot.
  2. Simmer for 1½ hours.

  • 1 lb. turkey cutlets
  • ½ C. flour
  • ¼ C. parmesan cheese
  • Salt and pepper to taste
  • Paprika to taste
  • 2 tbsp. margarine
  • ½ C. marsala wine
  • 2 tbsp. oil
  • Garlic Salt to taste
  • 2 tbsp. lemon juice
Instructions
  1. Sprinkle salt, pepper, and paprika on the meat.
  2. Mix flour and cheese and dip meat in it.
  3. In a skillet, heat the oil and margarine.
  4. Cook the meat for 30 seconds on each side.
  5. To prepare the sauce, mix the wine and lemon together, pour over meat and simmer for 3 minutes.

Ingredients
  • 1½ lbs. hamburger
  • ½ C. chopped onion
  • 1 qt. golden grain marinara sauce
  • ½ C. parmesan cheese
  • 2 tbsp. parsley flakes
  • 1 tbsp. basil
  • 1 tsp. salt
  • ½ tsp. pepper
  • 12 oz. lasagna noodles
  • 1 lb. mozzarella cheese, sliced thin
Instructions
  1. Brown meat and onion together and drain.
  2. Cook the lasagna noodles as directed on the box.
  3. Combine remaining ingredients except for the mozzarella cheese.
  4. In a 9x13 casserole dish, layer noodles, meat and sauce mixture and sliced cheese until all ingredients are used.
  5. Cover with foil and bake at 400 for 20 minutes.

Ingredients
  • 2 tbsp. extra virgin olive oil
  • 2 cans mushrooms
  • 1 onion, diced
  • 4 cloves of garlic
  • 2 lb. ground beef
  • 4 eggs
  • 1½ C. bread crumbs
  • 2 C. grated parmesan cheese
  • 2 tbsp. Worcestershire sauce
  • 2 tbsp. Balsamic vinegar
  • 2 tbsp. BBQ sauce
  • 1 pkg. fresh basil leaves, chopped
  • 1 pkg. fresh oregano, chopped
  • 2 tbsp. parsley leaves, chopped
  • 2 tsp. salt
  • 1 tsp. black pepper
  • 2 C. marinara sauce
Instructions
  1. Preheat the oven to 350
  2. Heat 1 tbsp oil in a sauté pan and add the mushrooms, onions and garlic.
  3. Sauté until just soft and remove to a plate to cool.
  4. When the mushrooms are cool, combine the remaining ingredients except for the marinara sauce together.
  5. Pack the meat into an oiled loaf pan.
  6. Top with marinara sauce, making sure to spread evenly over the top.
  7. Bake at 350 for 50 to 60 minutes or until done.
  8. Remove from oven and let stand for 5 minutes.
  9. Slice and serve.

Ingredients
  • 1½ lb. hamburger (browned & drained)
  • ⅔ of 16 oz. box spiral macaroni (cooked & drained)
  • 2 (12 oz.) pkg. shredded mozzarella cheese
  • 1 sm. can mushrooms (chopped & drained)
  • 1 c. chopped onion
  • 2 (16 oz.) cans pizza sauce
  • 1 (3 oz.) pkg. pepperoni
Instructions
  1. Combine in a big pot everything but cheese and pepperoni.
  2. Layer this and cheese and pepperoni in a crock pot.
  3. Finish with cheese and pepperoni on top.
  4. Cook on low temperature for 5 hours. Serves 8.

 

Biscotti

Ingredients
  • ½ c. butter, room temperature
  • 1 c. sugar
  • 2 eggs
  • 1½ tsp. vanilla
  • 2 c. flour
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • 1½ c. chopped nuts (optional)
Instructions
  1. Combine butter, sugar and eggs, mixing well. Beat in vanilla. combine dry ingredients and chopped nuts. Add to egg mixture. Batter will be very stiff and sticky. Cover dough with plastic wrap and refrigerate for 1 hour or more.
  2. Divide the dough in 2 loaves about 12 inches long and flatten slightly. Place loaves on 10 x 14 inch sheet, leaving at least 3 inches between. Bake in preheated 400 degree oven for 20 minutes. Remove from the oven. Cool slightly; lower oven to 375 degrees. continue to bake at 375 degrees for 15 minutes, or until firm. While still warm, slice loaves in diagonal slices, about ⅓ inch thick.
  3. Variations: Add 1 cup cocoa and 1½ c. chocolate chips to flour-nut mixture. Dip one end of the biscotti in melted chocolate
  4. Goes Great with Coffee!!!
