Ingredients
  • 2 C. Heavy cream
  • 2 Tbsp. buttermilk
Instructions
  1. In a glass bowl, stir the buttermilk into the heavy cream. It is important that you do not use a metal container.
  2. leave the container, partially covered, to sit at room temperature until it's as thick as you need it. Usually 9-20 hours.

 

Banana Sauce

Ingredients
  • 1 cup water.
  • ½ cup sugar.
  • Pulp 3 bananas.
  • 3 tablespoons lemon juice.
  • 2 eggs well beaten.
  • Few grains salt.
  • Few gratings lemon rind.
Instructions
  1. Make a syrup by boiling water and sugar ten minutes.
  2. Rub bananas through a sieve, add remaining ingredients and beat until well blended and light.
  3. Pour on hot syrup slowly, beating constantly.
  4. Serve hot.
  5. Pulp of peaches or apricots may be used in place of bananas.

 

Tomato Sauce

Ingredients
  • 1 half can tomatoes.
  • ⅛ teaspoon soda.
  • 1 teaspoon sugar.
  • 6 peppercorns.
  • 2 cloves.
  • Slice onion.
  • Bit of bay leaf.
  • ½ teaspoon salt.
  • Few grains cayenne.
  • 4 tablespoons butter.
  • 3 tablespoons flour.
  • 1 cup Brown Stock.
Instructions
  1. Heat tomatoes to boiling point; add soda and the seven ingredients following.
  2. Cook twenty minutes.
  3. Rub through a purée strainer, add stock.
  4. Brown butter in a sauce-pan, add flour and continue browning, stirring constantly.
  5. Add hot tomato mixture slowly, mix well, and pour over Macaroni.

 

Cheese Sauce

Ingredients
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • Pepper to taste
  • ½ tsp. salt
  • 1 C. milk
  • 1 C. American Cheese, shredded
Instructions
  1. In a sauce pan, combine butter, flour and milk.
  2. Cook over medium heat until the mixture has thickened.
  3. Remove from heat.
  4. Add remaining ingredients and stir until the cheese has melted.
Notes
Goes great over vegetables or elbow macaroni for Mac and Cheese.

  • 1 C. sugar
  • ½ C. water
  • ⅓ C. butter
  • ⅓ C. dry milk
Instructions
  1. In a saucepan, combine sugar,. water and butter.
  2. Bring to a boil, stirring constantly.
  3. Put in a blender and add dry milk.
  4. Blend until smooth.
  5. Recipe yields 14 oz. which is equal to one can.

  • ¼ C. powdered buttermilk
  • 3 Tbsp. dried minced onion
  • 1 tsp. salt
  • 3 Tbsp. dried minced parsley
  • 1 Tbsp. dried minced chives
  • ½ tsp. garlic powder
  • ½ tsp. ground celery seed
  • ½ tsp. pepper
Instructions
  1. Put all ingredients in a bowl and mix well.
  2. Store in Jar with air-tight lid until ready to use.
  3. To Mix dressing: combine 1½ Tbsp. dry mix to ½ C. milk and ½ C. mayonnaise and mix well.

 

White BBQ Sauce

  • 1 C. mayonnaise
  • ⅓ C. apple cider vinegar
  • ¼ C. lemon juice
  • 1 Tbsp. minced garlic
  • 1 Tbsp. horseradish
  • 1 Tbsp. black pepper
  • 1 Tbsp. spicy brown mustard
  • 1 tsp. salt
  • ½ tsp. cayenne pepper
Instructions
  1. Mix all ingredients together with a whisk.
  2. Serve immediately or store leftovers in the refrigerator.

  • 1 T. Dijon mustard
  • 2 tsp. soy sauce
  • 1 tsp. beef bullion
  • ⅛ C. apple cider vinegar
  • 3 cloves garlic, minced
  • ¼ C. brown sugar
  • 1 Tbsp. butter
  • 2 Tbsp. lemon juice
  • 3 tsp. onion powder
  • cayenne pepper to taste
Instructions
  1. Mix all ingredients in a sauce pan.
  2. Cook over medium heat until sauce reaches the desired thickness.

 

Toamto Chutney

  • 12 large tomatoes, sliced
  • 6 onions, chopped fine
  • 1 C. vinegar
  • 1 C. sugar
  • ¼ C. raisins
  • salt to taste
  • ½ tsp. cayenne pepper
  • ½ tsp. white pepper
Instructions
  1. Combine all ingredients and bring to a boil.
  2. Boil for 90 minutes and bottle in jars.

  • ½ C. shredded Parmesan cheese
  • 4 cloves garlic
  • Salt & pepper to taste

  1. Combine all ingredients in a food processor and process until smooth.

 

Chipotle BBQ Sauce

  • 2 C ketchup
  • ¾ C water
  • ¾ C brown sugar
  • 2 tsp. onion powder
  • 2 tsp. yellow mustard
  • 1 tsp. black pepper
  • 2 Tbsp. molasses
  • 2 tsp. lemon juice
  • 2 Tbsp. Worcestershire sauce
  • ½ C apple cider vinegar
  • 2 Tbsp. garlic, minced fine
  • 1 Tbsp. paprika
  • 1 or 2 chipotle peppers, chopped
Instructions
  1. Mix all ingredients together in a sauce pot.
  2. Cook covered, stirring occasionally, over medium low heat for about 15-20 minutes or until sauce has thickened.
  3. Refrigerate before serving.

  • 1 C. mayo
  • ¼ C. sour cream
  • ¾ C. milk
  • 1 Tbsp. lemon juice
  • ¼ tsp. salt
  • ½ tsp. pepper
  • 2 Tbsp. onion, finely diced
  • 1 clove garlic, minced
  • 1 Tbsp. parsley
  • ½ Tbsp. chives
  • 1 tsp. thyme
  • ¼ tsp. oregano
Instructions
  1. Place all ingredients in a food processor.
  2. Process until creamy.
  3. Chill before eating. The longer the better.
  4. ** This will only last for 3-5 days stored in the refrigerator.

 

Sweet and Sour Sauce

  • 1.4 C. sugar
  • ¼ C. brown sugar
  • ¼ C. corn syrup
  • ⅓ C. rice vinnegar
  • 6 oz. pineapple juice
  • ¼ C. soy sauce
  • 1 tbsp. corn starch
  • 1 tbsp. ketchup
Instructions
  1. Combine all ingredients in a sauce pan.
  2. Stir to dissolve all of the sugars.
  3. Cook over medium heat until thick.
  4. Cool before serving.
  5. Leftovers can be stored in the refrigerator for about 2 weeks.

 

Chocolate Gravy

  • 3 T. cocoa
  • 3 T. flour
  • ½ c. hot water
  • ⅔ c. sugar
  • 2 c. milk
  • pinch salt
Instructions
  1. In a large saucepan, combine cocoa, flour, and sugar.
  2. Add hot water; cook over low heat until dissolved; stirring constantly.
  3. Stir in milk and continue stirring until thickened.
  4. Serve over hot homemade biscuits, noodles, ice cream or pancakes.
