Ingredients
  • 2 packages Frozen Hash Brown Potatoes 12 oz. (Southern Style)
  • 2 cups sour cream
  • 1 can cream of chicken soup
  • ½ C. butter melted
  • 1 tsp. salt
  • 1 tsp. minced onion or onion powder optional
  • 2 C. shredded cheddar cheese
  • 2 C. Corn Flakes, crushed Mixed with ½ C. melted butter
Instructions
  1. Preheat oven to 350 F.
  2. In a colander thaw and drain hash browns.
  3. Combine sour cream, soup and butter in a bowl. Mix it well. Add salt, onion and cheese to this mixture and mix until all combined.
  4. Add potatoes to mixture and stir until all combined.
  5. Place in 9x13 casserole dish.
  6. Sprinkle on butter covered crushed Corn flakes.
  7. Bake uncovered at 350 for 40¬50 minutes.

Ingredients
  • 2 eggs, beaten
  • 3 C. potatoes, grated
  • 4 Tbsp. onion, grated
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 2 tbsp. cracker crumbs or matzo meal
  • ½ c. oil
Instructions
  1. Saute onion with about 2 tsp. oil until browned.
  2. Add potatoes, onion, salt, pepper, and meal or cracker crumbs.
  3. Heat the oil in frying pan and drop potato mixture by the tablespoon.
  4. Flatten with a spoon.
  5. Fry until browned on both sides.
  6. Serve with applesauce or sour cream.

 

Scalloped Potatoes

Ingredients
  • 3 lbs. potatoes, peeled and sliced thin
  • 3 C. milk
  • 1 clove garlic
  • 3 Tbsp.butter, softened
  • 1 cups heavy cream
  • 5 oz. cheddar cheese, grated
  • Salt and Pepper to taste
Instructions
  1. Preheat over to 325.
  2. In a large saucepan, place milk, salt, pepper and garlic and bring to a boil.
  3. Once boiling, reduce heat to a low simmer and add potato slices.
  4. Cook potatoes in milk for about 3 minutes or until they begin to soften.
  5. Butter the bottom and sides of a casserole dish and set aside.
  6. Place a colander in a large bowl and drain the potatoes, reserving the milk in the bowl beneath.
  7. Layer the potato slices in the buttered casserole dish and dot with butter in several places.
  8. Pour the reserved milk mixture and heavy cream over the potatoes and top with shredded cheese.
  9. Bake at 325 for 80-90 minutes or until the milk and cream have thickened and the cheese is a golden brown.

Ingredients
  • 3 lbs small red potatoes, cooked and quartered
  • 4 hard boiled egg whites, cooled and chopped
  • ½ cup Mayonnaise
  • ½ cup sour cream
  • 2 tablespoons fresh dill, minced
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon sugar
Instructions
  1. Combine all ingredients in a large bowl and mix well.
  2. Cover and let sit in a refrigerator until chilled throughout.

Ingredients
  • 1 unbaked pie crust
  • 1 lb sweet potatoes, cooked and peeled
  • ¼ cup butter
  • 2 eggs
  • 14 oz. sweetened condensed milk
  • 1 tsp. vanilla
  • 1 tsp. grated orange rind
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • ¼ tsp. salt
Instructions
  1. Preheat oven to 350 degrees F.
  2. In bowl, beat sweet potatoes and butter together until smooth and lump free.
  3. Add milk, orange rind, vanilla, cinnamon, nutmeg, salt and eggs and mix together well.
  4. Pour into pie shell and bake 30 minutes or until golden brown cool.
  5. And top with whipped cream.

Ingredients
  • 2 lbs frozen hash browns
  • 2 small cans cream of chicken soup
  • 1 pint sour cream
  • ¼ c chopped onion
  • 2 T of butter melted
  • 2 c grated cheddar cheese
  • 1 c cornflakes cereal
  • ¼ c butter
Instructions
  1. Mix cream of chicken soup, sour cream, and melted butter, in a large casserole dish until blended.
  2. Add onion, cheese, and hash-browns.
  3. Cover and place in oven @ 350 for 45 minutes.
  4. In a small bowl, place cornflakes and remaining butter and microwave for 1 minute or until butter is melted.
  5. Stir cereal until well coated with the butter.
  6. Remove the casserole from the oven and stir well.
  7. Sprinkle the cereal on top and return to the oven, uncovered, for an additional 15 minutes.

 

Salmon Scalloped Potatoes

Ingredients
  • 1 can salmon, drained reserving liquid, and flake salmon
  • 4-6 medium potatoes, peeled
  • 1 medium onion finely chopped
  • 1 c grated cheddar cheese
  • 1 8 oz jar pasteurized cheese
  • 1 c sour cream
  • 1 t salt
  • ¼ teaspoon fresh ground black pepper
  • 2 T butter
  • ⅓ cup breadcrumbs
Instructions
  1. Preheat oven to 350.
  2. Cook potatoes in boiling water approx 15 minutes or until tender
  3. Drain water off the potatoes and cool
  4. Thinly slice potatoes and place in a bowl and add your chopped onion.
  5. In a medium size bowl, mix salmon liquid, both cheeses, sour cream, salt and pepper. This will create your sauce.
  6. Grease a shallow 2-quart casserole dish.
  7. Layer ½ the potatoes and onion mixture in the bottom of the dish.
  8. Then layer ½ of the flaked salmon over the potato mixture.
  9. Take ½ the sauce and spread over the top.
  10. Repeat the layering process finishing off all the ingredients.
  11. Final step, in a small bowl, melt butter and mix with bread crumbs.
  12. Drizzle evenly over the top.
  13. Bake uncovered at 350°F for 30 to 35 minutes, or until hot.
  14. Sprinkle with chopped parsley and serve.

Ingredients
  • 6 small potatoes, scrubbed and cut in half
  • ¼ c butter
  • grated Parmesan cheese
  • garlic powder
  • other seasonings(to personal preference)
Instructions
  1. Preheat oven to 400 degrees.
  2. Melt butter and pour into a 9×13 inch pan and spread evenly across the bottom.
  3. Generously sprinkle Parmesan cheese and lightly sprinkle other seasonings all over the butter.
  4. Place potato halves face down on the butter and seasonings.
  5. Place in preheated oven and bake for 40 to 45 minutes.
  6. Cool for 5 minutes before removing from pan.
  7. Serve on a plate with a side of sour cream for dipping.

Ingredients
  • 12-15 medium potatoes, peeled and boiled until cooked through
  • 8 oz cream cheese
  • 1 c sour cream
  • 1 T butter
  • salt and pepper to taste
Instructions
  1. In a large mixing bowl, place cooked potatoes in the bowl and begin to mix/mashing them.
  2. Whip in all remaining ingredients.
  3. Then transfer to a large casserole dish.
  4. Cover and bake at 350 for 30 minutes or until heated.

Ingredients
  • 4-5 large yam sweet potatoes(boil and remove skins)
  • ½ c fresh squeezed orange juice
  • ½ c heavy cream
  • ⅓ c brown sugar
  • ¼ c butter
  • ½ t nutmeg and cinnamon
  • 1½ t salt
  • Topping: Combine in a small bowl.
  • ⅓ c chopped pecans
  • 3 T butter melted
Instructions
  1. Preheat oven to 350.
  2. In a large mixing bowl mash your cooked yams.
  3. Add all remaining ingredients except topping ingredients.
  4. Mix until blended then pour into a 9×13 casserole dish.
  5. Pour topping over the top and bake, uncovered, for 30 minutes or until hot.

Ingredients
  • 6 C. water
  • 6 potatoes
  • 2 small onions
  • 1 carrot
  • 1 stalk celery
  • 5 chicken bullion cubes
  • 1 tbsp. parsley flakes
  • Salt and pepper to taste
Instructions
  1. Boil all ingredients together until done.
  2. Add 1 can evaporated milk and ½ stick of margarine.
  3. Can also add bacon bits.

Ingredients
  • 3 C. boiled mashed yams
  • 2 eggs
  • 1 C. sugar
  • ½ tsp. salt
  • ½ stick margarine
  • ½ C. milk
  • 1 tsp. vanilla
Instructions
  1. Cream sugar and margarine together and add remaining ingredients.
  2. Beat with a mixer until well mixed.
  3. Pour into a casserole dish.
  4. Mix 1 C. brown sugar, 1 C. chopped pecans, ½ C. flour and ½ stick of softened margarine.
  5. Crumble on top of potatoes.
  6. Bake at 325 for 15 minutes.

  • 8 med. potatoes, cooked, cooled and shredded
  • ½ square margarine
  • 1 can cream of chicken soup
  • 1 C. sour cream
  • 1 C. shredded cheese
  • ½ C. crushed corn flakes
Instructions
  1. In a large saucepan, combine margarine, soup, sour cream and cheese and mix well.
  2. Heat until smooth.
  3. Place potatoes in a 9x13 casserole dish and pur sauce over the top.
  4. Poke with a fork to allow sauce to penetrate.
  5. Top with the corn flakes.
  6. Bake at 350 for 30-45 minutes.

Ingredients
  • ½ C. margarine
  • 6 lrg. potatoes
  • ⅓ C. parmesan cheese
  • ⅓ C. flour
  • ½ tsp. salt
  • ½ tsp. pepper
Instructions
  1. Heat oven to 375
  2. Place margarine on a cookie sheet and melt in the oven. Set aside.
  3. Peel the potatoes, quarter lengthwise and set aside.
  4. In a large plastic bag, combine the cheese, flour, salt and pepper.
  5. Add potatoes to the bag and shake to coat.
  6. Place potatoes in the melted butter on the pan.
  7. Bake at 375 for 1 hour or until tender.

 

Crock Pot Potato Soup

Ingredients
  • 6 potatoes
  • 2 onions
  • 1 carrot
  • 1 stalk celery
  • 4 c. water
  • 1½ tsp. salt
  • 4 chicken bouillon cubes
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 tbsp. parsley flakes
  • 2 tbsp. butter
  • 13 oz. can evaporated milk
Instructions
  1. Cut all ingredients to bite-size pieces and put everything except milk in the crock pot.
  2. Cover and cook on low for 10 to 12 hours or high for 3-4 hours.
  3. Stir in evaporated milk during the last hour.
