Almond Rocha Cookies

Ingredients
  • 1 lb. Hershey's Chocolate Bar
  • 2 C. flour
  • 1 egg
  • ½ C. white sugar
  • ½ C. brown sugar
  • 1 C. butter
  • ½ tsp. Vanilla Extract
  • ½ tsp. Almond Extract
  • 1 C. chopped nuts
Instructions
  1. Preheat oven to 325 F.
  2. Mix butter, brown sugar, white sugar, egg, vanilla extract and almond extract together. Mix until well blended.
  3. Add flour to mixture and continue to mix until well blended.
  4. Spread dough evenly on a 9 x 13 baking sheet.
  5. Bake for 10-12 minutes.
  6. While baking, chop the Hershey's bar into small sliver like pieces.
  7. When baking is complete, immediately spread the chopped chocolate pieces over the top. They will melt.
  8. Spread the chocolate evenly over the top.
  9. Sprinkle chopped nuts over the top.
  10. Note: Cut the cookie while it is still warm.

Ingredients
  • 1½ C. Graham Cracker crumbs.
  • ½ C. Butter
  • 1 can Condensed Milk
  • 6 oz. Butterscotch Chips
  • 6 oz. Chocolate Chips
  • 1⅓ C. flaked coconut
  • 1 C. Chopped Nuts
Instructions
  1. Preheat oven to 350 F.
  2. Combine melted butter and Graham Cracker crumbs and press firmly into the bottom of a greased 13 x 9 pan.
  3. Layer Butterscotch chips, chocolate chips, nuts and coconut.
  4. Pour condensed milk evenly over the layers.
  5. Bake for 25 minutes.

 

Gingerbread Cookies

Ingredients
  • 1 C. butter, softened
  • 1 C. light brown sugar
  • ½ C. honey
  • 3½ C. flour, sifted
  • 2 tsp. ginger
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • Dash of salt
Instructions
  1. Combine all ingredients in a large bowl and mix with an electric mixer until all ingredients are well combined.
  2. Chill the dough in the refrigerator for a minimum of 1 hour.
  3. Preheat the oven to 350 F.
  4. Turn the dough out on a lightly floured cutting board.
  5. Roll out dough until ⅛ inch thick.
  6. Use a cookie cutter to cut into desired shapes.
  7. Place on a cookie sheet that has been lightly greased with butter.
  8. Bake doe 8-10 minutes.

  • 1 C. butter
  • 1 egg, beaten
  • 2 C. flour
  • 1 tsp. almond flavoring
Instructions
  1. Preheat the oven to 360 F.
  2. Cream the butter and sugar together.
  3. Blend in the beaten egg.
  4. Add remaining ingredients
  5. Bake 8-10 minutes

 

Lace Oatmeal Cookies

Ingredients
  • 2 C. rolled oats
  • 1 C. brown sugar
  • ½ C. melted butter
  • 1 tsp. baking powder
  • 1 egg, beaten
Instructions
  1. Preheat the oven to 400 degrees.
  2. Mix oats and baking powder together.
  3. Slowly add melted butter, sugar and egg to the oats.
  4. Mix thoroughly.
  5. Drop rounded teaspoons of dough on a wax-paper lined cookie sheet about three inches apart. Cookies will spread out.
  6. Bake for 6-7 minutes or until the cookies are brown around the edges.
  7. Allow to cool before removing from tray.
  8. Dust with powdered sugar.

Ingredients
  • 1 box cake mix (Any kind)
  • 8 oz. cool whip
  • 1 egg
  • Powdered sugar
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine cake mix, cool whip and egg.
  3. Mix thoroughly.
  4. Drop spoonfuls of mixture into powdered sugar to coat.
  5. Bake at 350 for 12 minutes.
  6. Allow to cool before removing from tray.

  • 1 egg
  • 6 Tbsp. cocoa powder
  • ½ tsp. salt
  • ½ C. milk
  • 1 C. brown sugar
  • 1 tsp. vanilla
  • 1⅔ C. flour
  • ½ tsp. baking soda
Instructions
  1. Preheat the oven to 350 degrees.
  2. Mix all ingredients together.
  3. Drop by tablespoons onto a greased cookie sheet.
  4. Bake at 350 for 10-12 minutes
  5. Frost with buttercream frosting.

Ingredients
  • ¼ C. boiling water
  • 1 tsp. instant coffee powder
  • 1⅓ C. packed brown sugar
  • 1 C. butter, softened
  • 1 egg
  • 1½ tsp. vanilla
  • 3 C. old fashioned oats
  • 1¼ C. all purpose flour
  • ¾ tsp. salt
  • ½ tsp. baking soda
  • 8 oz. pkg. milk chocolate toffee bits
  • 1½ C. semisweet chocolate chips
  • 5 coarsely crumbled sugar cones
Instructions
  1. Preheat oven to 350 degrees
  2. Dissolve coffee in boiling water, cool to room temperature.
  3. In a large bowl, beat sugar and butter until creamy with an electric mixer.
  4. Add egg and beat well.
  5. Beat in coffee and vanilla.
  6. Combine oats, flour, salt and baking soda and mix well.
  7. Gradually add oat mixture to the creamed mixture.
  8. Beat well after each addition.
  9. Stir in toffee bits, chocolate chips and sugar cones.
  10. Drop dough by heaping measuring Tablespoons 2 inches apart onto cookie sheets.
  11. Bake 12-14 minutes, just until golden brown.
  12. Cool for 1 minute on the cookie sheet and transfer to wire racks.
  13. Cool completely, Store loosely covered.

 

Vanilla Wafer Cookies

Ingredients
  • 1⅓ C. flour
  • ½ C. butter, softened
  • ½ C. sugar
  • ¼ C. brown sugar
  • 1 tsp. vanilla
  • ½ tsp. salt
  • ½ tsp. baking powder
  • 1 egg
Instructions
  1. Preheat the oven to 325
  2. Cream together the butter and sugars until light and fluffy.
  3. Slowly mix in the remaining ingredients and beat until completely mixed.
  4. Scrape mixture into a piping bag.
  5. Pipe the mixture onto a wax paper covered cookie sheet. Each cookie should be about the size of a quarter with a little space between each cookie.
  6. Bake 10-15 minutes or until cookies are golden brown.

Ingredients
  • 1 C. all purpose flour
  • ¼ tsp. baking soda
  • ⅛ tsp. salt
  • 5 Tbsp. butter
  • 7 Tbsp. unsweetened cocoa
  • ⅔ C. granulated sugar
  • ⅓ C. packed brown sugar
  • ⅓ C. plain low-fat yogurt
  • 1 tsp. vanilla extract
  • Cooking spray
Instructions
  1. Preheat oven to 350°.
  2. Combine flour, soda, and salt and set aside.
  3. Melt butter in a large saucepan over medium heat.
  4. Remove from heat; stir in cocoa powder and sugars.
  5. Add yogurt and vanilla, stirring to combine.
  6. Add flour mixture last.
  7. Drop by tablespoons 2 inches apart onto baking sheets coated with cooking spray.
  8. Bake at 350° for 8 to 10 minutes or until set. Cool on wire racks.

 

Chocolate Peppermint Cookies

Ingredients
  • ½ C. shortening
  • ½ C. sugar
  • 1 egg
  • 3 tbsp. milk
  • 2 sq. unsweetened chocolate, melted
  • 1¾ C. flour
  • 1 tsp. salt
  • ½ tsp. baking powder
  • Peppermint filling:
  • 3 tsp. milk
  • ¼ tsp. peppermint extract
  • 2 C. confectioners sugar
Instructions
  1. Mix sugar, shortening and egg together thoroughly.
  2. Blend in milk and cooled chocolate.
  3. Blend flour, salt and baking powder and stir in.
  4. Mold into smooth roll about 2 inches in diameter.
  5. Wrap in waxed paper and chill until firm for several hours or overnight.
  6. Heat the oven to 400
  7. With a thin, sharp knife, slice the dough in ⅛ inch slices.
  8. Bake on a lightly greased cookie sheet fir 10-12 minutes.
  9. Cool completely.
  10. Place two cookies together with generous amounts of filling.

 

Great Big Oatmeal Cookies

Ingredients
  • 1½ C. flaked coconut
  • 3 C. rolled oats
  • 1¾ C. flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 C. butter, softened
  • 1¾ C. brown sugar, packed
  • 2 eggs
  • 1 tsp. vanilla
  • ¼ C. milk
Instructions
  1. Preheat oven to 350
  2. spread the coconuts and oats out on a large baking sheet, use two if necessary.
  3. Bake for 10 minutes or until lightly browned and toasted. Stir often.
  4. While the coconut and oats cool, mix the flour, baking soda and salt.
  5. cream the butter and sugar together in a separate bowl.
  6. Add the eggs and vanilla to the butter and sugar mixture and beat until mixed. Add the milk.
  7. Stir in the flour mixture followed by the coconut and oats.
  8. Chill for one hour.
  9. Drop dough in ¼ C. amounts, 3 inches apart on a greased baking sheet.
  10. Bake for 12 minutes or until lightly browned.
  11. Let the cookies cool for at least a minute before transferring to a wire rack to cool.

 

Ethel’s Sugar Cookies

Ingredients
  • ¾ C. butter, softened
  • 1 C. sugar
  • 2 eggs
  • ½ tsp vanilla extract
  • 2½ C. flour, sifted
  • 1 tsp baking powder
  • 1 tsp salt
Instructions
  1. Thoroughly mix together the butter, sugar, eggs, and flavoring of choice.
  2. sift together the flour, baking powder, and salt.
  3. Stir into the butter mixture.
  4. Chill for at last 1 hour.
  5. Roll out to ⅛ inch thickness.
  6. Cut into desired shapes with a cookie cutter dipped in flour.
  7. Re-Roll the scraps and continue cutting until all of the dough is used.
  8. Place on an ungreased baking sheet.
  9. Bake at 400 until delicately golden (about 6-8 minutes).
  10. Frost with icing.
  11. Makes about 4 dozen 3 inch cookies.

 

Black and White Chocolate Chunck Cookies

Ingredients
  • ¼ pound (1 stick) butter, softened
  • ½ cup light brown sugar, packed
  • ½ cup granulated sugar
  • 1 tsp. vanilla extract
  • ¼ tsp. salt
  • ⅓ cup unsweetened cocoa powder
  • 1 egg
  • ½ tsp. baking soda
  • 1 cup all purpose flour
  • 6 oz white chocolate chips
  • 1 cup coarsely chopped nuts
Instructions
  1. preheat oven to 350.
  2. Cream butter and both sugars together until fluffy.
  3. Mix in vanilla and salt.
  4. Add cocoa and egg, and mix until well blended.
  5. Mix in soda and flour until incorporated. Stir in white chocolate.
  6. Drop 2 tablespoons of batter onto greased baking sheets about 2 inches apart.
  7. Bake for 10 to 12 minutes (tops will look set, but the cookies will be very soft. **do not over bake; they will firm as they cool)
  8. If baking two sheets in the same oven, rotate half way through baking time.
  9. Remove from oven and let sit for 10 minutes
  10. Store in an air tight container at room temp, or freeze for up to several weeks.
  11. Makes about 40 cookies.

 

Potato Chip Cookies

  • ½ lb Oleo
  • 1 C. sugar
  • ½ tsp. vanilla
  • ½ C. flour
  • 6 oz. bag potato chips, crushed
Instructions
  1. Cream the butter and Oleo together.
  2. Add remaining ingredients.
  3. Drop by tsp. onto a cookie sheet.
  4. Bake at 375 for 10-15 minutes.
Notes
instead of Oleo, you can use margarine.
