Irish Soda Bread

Ingredients
  • 3 C flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • ½ C. sugar
  • 3 tbsp. shortening
  • 1 C. raisins
  • 2 tsp. caraway seeds (optional)
  • 1 C. milk
Instructions
  1. Sift flour, baking powder, salt, and sugar together and mix.
  2. Add raisins and caraway seeds.
  3. Cut in shortening and add in the milk and stir. Dough will be stiff.
  4. Place in greased 8-inch cake pan.
  5. Brush the top with milk and cook 40-50 minutes at 350 degrees.
  6. Mix sugar and milk and brush on top of bread while it is still warm.

 

Chocolate Peanut Butter Fudge

Ingredients
  • 1 12 oz. package of milk chocolate chips.
  • 1 can of condensed milk
  • 1 tsp. vanilla extract
  • 1 C. peanut butter chips
  • 1 C. chopped nuts
Instructions
  1. In a heavy sauce pan over low heat melt chocolate chips with condensed mil. and vanilla extract.
  2. Stir frequently until melted.
  3. Remove from heat and aff peanut butter chips and nuts.
  4. Stir just enough to distribute the chips throughout the mixture.
  5. Spread evenly into an aluminum foil lined 8 inch square pan.
  6. Chill for two hours or until firm.
  7. Turn fudge out onto a cutting board and peal off the foil.
  8. Cut into squares.
  9. Store covered at room temperature.

 

Almond Rocha Cookies

Ingredients
  • 1 lb. Hershey's Chocolate Bar
  • 2 C. flour
  • 1 egg
  • ½ C. white sugar
  • ½ C. brown sugar
  • 1 C. butter
  • ½ tsp. Vanilla Extract
  • ½ tsp. Almond Extract
  • 1 C. chopped nuts
Instructions
  1. Preheat oven to 325 F.
  2. Mix butter, brown sugar, white sugar, egg, vanilla extract and almond extract together. Mix until well blended.
  3. Add flour to mixture and continue to mix until well blended.
  4. Spread dough evenly on a 9 x 13 baking sheet.
  5. Bake for 10-12 minutes.
  6. While baking, chop the Hershey's bar into small sliver like pieces.
  7. When baking is complete, immediately spread the chopped chocolate pieces over the top. They will melt.
  8. Spread the chocolate evenly over the top.
  9. Sprinkle chopped nuts over the top.
  10. Note: Cut the cookie while it is still warm.

 

Seven Layer Cookies

Ingredients
  • 1½ C. Graham Cracker crumbs.
  • ½ C. Butter
  • 1 can Condensed Milk
  • 6 oz. Butterscotch Chips
  • 6 oz. Chocolate Chips
  • 1⅓ C. flaked coconut
  • 1 C. Chopped Nuts
Instructions
  1. Preheat oven to 350 F.
  2. Combine melted butter and Graham Cracker crumbs and press firmly into the bottom of a greased 13 x 9 pan.
  3. Layer Butterscotch chips, chocolate chips, nuts and coconut.
  4. Pour condensed milk evenly over the layers.
  5. Bake for 25 minutes.

 

Gingerbread Cookies

Ingredients
  • 1 C. butter, softened
  • 1 C. light brown sugar
  • ½ C. honey
  • 3½ C. flour, sifted
  • 2 tsp. ginger
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • Dash of salt
Instructions
  1. Combine all ingredients in a large bowl and mix with an electric mixer until all ingredients are well combined.
  2. Chill the dough in the refrigerator for a minimum of 1 hour.
  3. Preheat the oven to 350 F.
  4. Turn the dough out on a lightly floured cutting board.
  5. Roll out dough until ⅛ inch thick.
  6. Use a cookie cutter to cut into desired shapes.
  7. Place on a cookie sheet that has been lightly greased with butter.
  8. Bake doe 8-10 minutes.

 

Creamy Broccoli Dip

Ingredients
  • 8 oz. Cream Cheese
  • 2 tbsp. whole grain mustard
  • 2 tbsp. milk
  • 1 C. broccoli - Cooked and finely chopped.
  • ¼ C. red peppers, chopped
  • 2 tbsp. scallions, chopped
Instructions
  1. Beat cheese, mustard and milk until blended.
  2. Stir in remaining ingredients.
  3. Chill in fridge until cold.
  4. Serve with Chicken flavored crackers.

 

Crock Pot Rice Pudding

Ingredients
  • 2½ C. cooked rice
  • 1½ C. evaporated milk
  • ⅔ C. sugar
  • 3 tbsp. butter, softened
  • 2 tsp. vanilla
  • 1 tsp. nutmeg
  • 3 eggs, beaten
  • ½ C. raisins
Instructions
  1. Combine all ingredients.
  2. Pour into a lightly greased crock pot.
  3. Cover and cook on high for 1-2 hours or on low for 4-6 hours.
  4. Stir several times during the first thirty minutes of cooking.

Ingredients
  • 4 c. flour
  • 2 tbsp. baking powder
  • 2 tsp. salt
  • ½ c. shortening
  • 1 c. candied ginger, grated
  • 1½ c. milk
  • 1 egg white plus 1 tbsp. water
Instructions
  1. Combine flour, baking powder, and salt in a bowl.
  2. Add shortening and cut in until mixture is crumbly .
  3. Gradually Stir in ginger.
  4. Stir in milk until dough sticks together.
  5. Knead briefly.
  6. Roll to ½ inch thickness and cut into rounds of 2 inches.
  7. Transfer rounds to an ungreased baking sheet.
  8. Whisk together egg white and water. Brush egg whites over tops of the biscuits.
  9. Bake at 450 degrees for 13 to 15 minutes.

 

Braised Oxtails

Ingredients
  • 1-2 oxtail, cut into 2-inch pieces
  • 2 tbsp. fat (I like bacon fat)
  • 1 onion, sliced
  • 1 carrot, chopped
  • ½ c. chopped celery
  • 2 tbsp. flour
  • 1 c. hot water
  • 1 c. tomatoes
  • 3 bay leaves (optional)
  • 3 whole cloves (optional)
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 350 F.
  2. Thoroughly brown pieces of oxtail in fat.
  3. Add onion, carrot and celery and cook until brown.
  4. Sprinkle with flour.
  5. Add hot water, tomatoes, bay leaves, cloves, salt and pepper.
  6. Place in a casserole dish and cook in oven until tender, about 4 hours.

 

Sour Cream Doughnut

Ingredients
  • 1 C. sugar
  • 3 eggs
  • 1 C. sour cream
  • 1 tsp. vanilla
  • 2 tbsp. Crisco oil
  • 3½ C. flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • ½ tsp. salt
  • Dash of nutmeg
  • Oil for frying
Instructions
  1. Cream together the sugar and eggs.
  2. Add sour cream and vanilla and mix well.
  3. Add remaining ingredients and mix well.
  4. Turn out onto a floured board and roll to ¼ inch thick.
  5. Cut with a donut cutter and drop into the hot oil.
  6. Turn as soon as the doughnuts rise to the top and several time after to ensure an even cook.
  7. Drain on paper towels

 

Mulled Wine

Ingredients
  • 1½ C. water
  • ½ C. sugar
  • ½ lemon, sliced thin
  • 3 whole cloves
  • 3 whole cinnamon sticks
  • 1 bottle red wine
Instructions
  1. Boil water and add sugar, lemon, cloves and cinnamon sticks.
  2. Reduce to a simmer and add in the wine.
  3. Simmer for 20 minutes without letting it boil.
  4. Strain and serve while still hot.

Ingredients
  • 2 packages Frozen Hash Brown Potatoes 12 oz. (Southern Style)
  • 2 cups sour cream
  • 1 can cream of chicken soup
  • ½ C. butter melted
  • 1 tsp. salt
  • 1 tsp. minced onion or onion powder optional
  • 2 C. shredded cheddar cheese
  • 2 C. Corn Flakes, crushed Mixed with ½ C. melted butter
Instructions
  1. Preheat oven to 350 F.
  2. In a colander thaw and drain hash browns.
  3. Combine sour cream, soup and butter in a bowl. Mix it well. Add salt, onion and cheese to this mixture and mix until all combined.
  4. Add potatoes to mixture and stir until all combined.
  5. Place in 9x13 casserole dish.
  6. Sprinkle on butter covered crushed Corn flakes.
  7. Bake uncovered at 350 for 40¬50 minutes.

  2. Cream the butter and sugar together.
  3. Blend in the beaten egg.
  4. Add remaining ingredients
  5. Bake 8-10 minutes

 

Creme Fraiche

Ingredients
  • 2 C. Heavy cream
  • 2 Tbsp. buttermilk
Instructions
  1. In a glass bowl, stir the buttermilk into the heavy cream. It is important that you do not use a metal container.
  2. leave the container, partially covered, to sit at room temperature until it's as thick as you need it. Usually 9-20 hours.
